    As per usual, ignorant people will always make ignorant statements. If you don't like the way he cooked it, then first of all don't waste your time and watch and second cook it the way you prefer. Everyone has their own interpetation of cuisine and therefore it is up to you to make it your own. This has nothing to do with if it's Jamaican or Trinidadian or guyanese or bajan or wherever. Jeez Louise.

      I'm mixed race, never grew up with much black culture apart from Michael Jackson...
      I had a short affair with a black girl.. Her Mum cooked for me and the food was amazing. I wish I married the girl just for he Mamas cooking. She looked like Rihanna, only with a smaller forehead. lol

    This recipe tastes just like I'm back in Jamaica! I lived in Jamaica for a summer a few years ago and absolutely fell in love with the food (and with the people, beautiful landscapes, and culture of course too). I used white rice instead of brown so it only needed to be cooked for about 10-15 min once I added the rice/coconut milk. Such a great authentic recipe, can't wait to make it again, thank you!

    Hi! I found a really neat and easy way to cook any rice. I find that cooking rice on the stove-top can be tricky and cooks uneven. What I always do is after adding all my seasonings and flavors to a pot and bringing to a boil, I add the rice like you did and bring it to a rolling boil again. BUT, then I transfer all the contents from the pot into a clear glass baking dish, cover with aluminum foil and bake in the oven at 350 degrees for 30 minutes. This process makes the rice cook consistently through and comes out perfect every time! Can't wait to try your recipe for my husband!

      That’s a lot of work I have a tip, when the rice is rising and the water is almost dried up put foil over the rice and put a little bit of water on top of the foil then put the cover over. Stir the rice every now and then so that it can cook even. It also depends on what rice you buy.

    If u add a teaspoon of oil with the beans it also helps to cook the beans a little faster as well

    Thanks my son has asked for this. He and I are foodies and love Jamaican cuisine and most spicy foods. I have a close family member a great cook who dated a native Jamaican for years, hung out with the family and everything and did not learn how to cook any of the delicious food, her loss. I am trying at least 4 of your recipes in the next week. Two today. I will let you know if I am a good student.

    I always add the coconut milk (if using) once I have boiled out the peas (I usually do that until my water is a deeper red than in this video)... then add the rice and ensure I have about a thumbs worth of water covering the rice... then bring back to a boil and simmer covered with a low heat for 15-20 minutes depending on the rice I'm using... then bring off heat and let steam in own heat for at least another 10 minutes. Works for me everytime..

    I followed this recipe to the letter and oh man it is so good! I used a Ghost pepper because that's all I had but only left in for 5 minutes. Just got a little of the heat but all of the flavour! Thanks so much for sharing your recipe! It's amazing!

    Thank you Thank you , Thank you. It's the eve of Thanksgiving and I just made this Jamaican Rice and Peas it is so delicious.. Whenever I had a taste for Jamaican rice and peas I would purchase it from a Jamaican restaurant in the community. I have to say no more I'm gonna keep making my own. I hope I leave some left for Thanksgiving! Happy Holiday.

    You can also put the soaked beans in the pressure cooker which will cook the peas faster and thoroughly to check whether or not the peas is cooked you can with a spoon scoop the peas up with your hand or a folk squeeze or pierce the bean and if it's soft you know it's cooked if it's still hard it needs to cook some more. If you use a pressure cooker to cook the beans you need to keep an eye on it. You can also use creamed coconut if you don't have canned coconut milk. As well as spring onions, peppers etc thyme, you need to season the rice and peas whilst cooking with salt and you can if you wish add a little butter, this you tuber probably forgot to tell you that in his video. Oh yes and you do t have to use scotch Benetton pepper in rice and peas, if you are not into spicy food, this ingredient is only an option.

    Hello Chris! Thank you for showing a novice like myself how to cook Trini and Jamaican foods. My husband and his family are of Trini origin while myself of Jamaican origin. I have always loved the food and recently started learning how to fix foods my father in law loves. My Grandpa (May he rest in peace) would be so proud of me learning to cook the native way!     You also have to keep in mind you'll a need that "additional water" because you have the beans and the rice "competing" for liquid absorption. Another mistake is not keeping the lid close so you don't let steam escape which plays a big role in fluffy rice as well. My mother has this down pact without measuring, still amazes me! Love my Island heritage :))

    If it is sticky maybe you are adding too much water or coconut milk to the rice before you put it on the stove. I always advice people with sticky rice and peas to put the pot in a warm oven on for about 15 minutes and then turn the oven off and leave it there until ready to serve. It dries out the excess moisture and makes the rice and peas "SHELLY" (as we say in JA). Hope this helps.

    I tried this recipee today and it came out perfectly. I can't stay away from it. I use a pressure cooker to soften the beans, faster than cooking them. (maybe about 5 minutes). Thanks Chris for this recipee and all your tips. Especially with the coconutmilk. hmmmmmm. Can't wait dinnertime.

    I'm trini and didn't know the "secret" to the rice and peas which is to wash the rice before hand. smh at me..haha..I'm going to try this again for my Jamaican husband with some curry goat this weekend! thanks!!

      After washing the rice let is soak in cold water for about 30 minutes before cooking, it's even better.

    Really nice. I am going to try this method; I usually boil the peas differently, sautee the rice with the veggies and stuff in butter to seal in the starch then throw the water in and add the peas last.

    As for me when am going to make rice and peas for Sunday dinner I soak my peas over night with garlic powder plus raw garlic and boil the peas with the coconut milk together so it can be nice n red when it's done n i use two green pepper for flavor I don't put in the milk on the lost min because coconut milk is something that will hurt your belly if it not cook properly,and I don't use onions in my rice and peas so I guests every one cook different

    Did exactly as stated, even only 5 cups of water, and it's clumpy with rice, after rinsing rise thoroughly. It is clumped to together...like paste...

    I just finished making this and I've got to say, the flavor is really good. Thank you so much To all of those nay-sayers, something is wrong with your taste buds. The only issue I have is that my rice is still a little hard, and I used 5 cups of water. I don't wanna make it mushy, but is adding water the only way to go???

    I did mine slightly different by heating a bit of oil and frying the ingredients (onion,spring onion,scotch bonnet, garlic clove , ) till partially brown . Added my rice pepper, alspice and salt making sure the rice has blended . Then add my coconut milk and water and kidney beans . Cover it and leave to cook on low heat for 20 mins . Make sure you measure the liquid , so that the rice is not soggy .

      Is the thing now for every island in the Caribbean to tear down and discredit everything Jamaican. They troll around the internet looking for opportunities to insult us. Jamaicans are resorting to using Caribbean instead of Jamaican so they we don't get trolled. Everyone is copying our dishes now so eventually nothing will be distinctively Jamaican, which is what they all want. They hate the fact that Jamaica is so well know.

    Made it with 5 cups water the first time. 4 the second and will try 3 next time. Love it!

    Oh boy. The peas are cooked first with some garlic. After the peas are cooked (not too soft) then that is seasoned with more garlic, salt to taste, thyme, clove (powdered or whole)and the coconut milk added. The washed rice is added. The real scotch bonnet pepper goes in after everything is stirred. It goes on top and is taken out after the flavour is extracted. The liquid should not be more than an inch above the rice. After boiling for not more than five minutes on medium heat the heat is further lowered until the water has completely vanished. Use a pot with tightly closed lid, so t hat it will steam rather than boil. Don't stir too often or it becomes saggy. By the way, a tablespoon of margarine can be stirred just before the stove is turned off.

    the cinnamon makes tuff food soft like the beans,oxtail,Turkey mmm!makes it cook faster and lovely juice in the pot yum

      I soak my rice to get a lot of starch out but eating to much rice mess with your eyesite and blood sugar

    Ahhh....reminds me of New Orleans red beans and rice. I am sure there is a spin, how ever it's all interconnected. The connection between the American west indies and Louisiana goes deep.

    Yes I, Rice & Pea with Curry goat. My mother in law is from Dominican Republic and her food is irie, my wife - passed over now sadly was good at some dishes but I did most of the cooking in the kitchen, as I am or rather used to be a professional chef. I like Jamaican and Caribbean food. Do you know any Corn Beef Fritter recipes?
