There is a psychological study done a long time ago that is now considered to be immoral where people thought they were electrocuting someone and when told by an authority figure to Crank it up to a deadly level they would actually do it. I believe this follows that same principle of authority
The Milgram experiment... Testing subjects willingness to obey authority figures giving them orders that go against their conscience. Started in 1961 while Eichmann was on trial in Jerusalem. Over 60% of people of the sample cranked it up to that deadly dose.
To experiment for science would be unethical, but to film it for entertainment is... profitable?

I think (if you watch the whole episode, not just the clip above) that the food critic realizes he's being pranked, when he's served ethically sourced "Vegan-fed Chinese Dissident". There's a moment where he looks really disturbed, horrified even, and then suddenly it goes away and he seems to get right into the spirit of it, up to thanking the guy's family and everything, without the slightest hesitation. I think he must have realized at that moment it was a set-up, that he was being trolled, and he just decides to play along with it after that.
