Seco de Carne | Peruvian Cilantro Beef Stew

  • Seco de Carne is a typical Peruvian dish but many other countries in South and Central America have adopted their own versions. It's a cilantro beef stew with a deep flavor. Many chefs in Peru use lamb to make "Seco de Cordero" but goat, beef, chicken, or even seafood are often used with the delicious cilantro sauce.

    My mother in law is a Peruvian and she used to cook Seco whenever I visit her. Now my husband and I live in Japan and I miss her cooking so much! Thanks for the recipe!

      You are very welcome. Food often brings us so many happy memories! My family used to eat lunch together every single day followed by a cup of coffee and conversations around the table. It's such a nice memory. I'm trying the same with my kids and husband but for dinner because that's the only time we all get to be home.

      @Green Healthy Cooking Thanks so much . To make the slurry, do you always use 4 tbsp of the jue to 1 cornflour?

      @@kennethlynch9926 you can also use water but then you’d have to cook it longer because you’re essentially watering down the liquid again. I often take the jus to make the thickening process faster.

      Yes but without the beer. Since the pressure cooker is sealed the alcohol can't evaporate and it just tastes like a beer soup, lol. 45 minutes on high pressure plus full natural pressure release should be fine.

      depends on the cut 1-3 hours. The longer you cook it the more fall-apart tender it gets. Remember you are cooking it on very very low. You spend less electricity or gas cooking slow and low and quick on high.

    I love the English description for the recipe, here. Peruvians can be really xenophobic and ignorant when it comes to their food. They believe they invented everything lol. Seco is just a stew. A great one. But just a stew.
