    EASY BLUEBERRY CAKE RECIPE
    (measured with 150g yogurt containers)
    Ingredients:
    2 containers Greek yogurt (300g)
    2 eggs
    1/2 container unsweetened applesauce (85g)
    1/2 container maple syrup or agave (60ml)
    2 tsp vanilla extract
    2 containers oat flour (160g)
    1 container rice flour (100g)
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 container (and 1 handful) blueberries (200g)
    NUTRITIONAL INFO (per piece):
    209 calories, fat 4.2g, carb 33g, protein 9g
    Instructions:
    Preheat the oven to 350°F (180°C). Grease or line an 8x8 inch (20x20cm) baking dish.
    In a large mixing bowl, whisk together the Greek yogurt, eggs, unsweetened applesauce, chosen sweetener (maple syrup or agave), and vanilla extract until smooth.
    Add the oat flour, rice flour, baking powder, baking soda, and salt to the bowl. Mix just until combined, ensuring there are no visible traces of flour.
    Gently fold in the fresh blueberries until evenly distributed throughout the batter.
    Pour the batter into the prepared baking dish, spreading it out evenly. Scatter extra blueberries on top for a decorative touch.
    Bake in the preheated oven for 45-50 minutes, or until the cake is golden brown on top and a toothpick inserted into the center comes out clean.
    Allow the cake to cool in the pan for at least 30 minutes before slicing it into 9 equal pieces.
    Serve and enjoy this nutritious and delicious blueberry cake!

    Hi Sasha can i use spelt flour n oat flour instead of rice flour wil it taste good?
    Is the Greek yoghurt low or full fat.
    Do u use store bought apple sauce?

      Hi! Yes, using spelt flour would be just fine. For Greek yogurt, I use full-fat all the time... and this store-bought applesauce is just apples, no added sugar inside.

    I just bought some rice flour but when I started looking at some recipes for it I think I messed up and didn’t get the glutinous rice flour specifically for desserts. Which kind of rice flour did you use for this recipe?

      It's just the regular rice flour that I use, I think any would work for this recipe.

      Pretty much any flour would work, but try to use the most nutritious you can.

      Yes, but I wouldn't go for the entire amount, maybe half of the oats.

      Sure, but I would suggest you half the recipe and bake at the same size dish, just to have it thinner and easier to cook through.

    TBH, I'd prefer actual measurements because the size of your yoghurt containers may not match the size of ours, plus it's cheaper to buy a large tub of yoghurt. Ours Greek yoghurt also seems to be a lot thicker than yours.

      I think the size of small yogurt containers are pretty much the same, 10g less or more... but you're right, buying Greek yogurt in large containers is definitely more affordable.

    I've stumbled upon your channel today and I have noticed you very often use Greek yogurt in your recipes. The issue is that you use the ~10 % fat Greek-style yogurt found in Croatian stores, but when calculating nutritional info you seem to use non-fat yogurt's calories and macros. I noticed this plainly in the mayo substitute video, and after calculating nutritional data for this cake recipe using an app - conclusion is the same. This could be very misleading as the full fat and zero fat yogurt have very different textures.

      Hi! You're right, the fat % you can find in Greek yogurt here and in other countries may differ, but I think I never put zero fat yogurt macros in my calculations, it's usually 2% and that's what can be found in most apps. Anyway, I'm here more about real food, wholesome ingredients, avoiding bad stuff, so any type of yogurt, either 2% or 10% is better than soybean oil in your mayo. I appreciate your thoughts!
