It’s amazing like always. I made the same food with a few minor changes and it turned out great. Replaced Fennel seeds with Kerman’s Black Cumin, Sour cherry with iranian dried Aloucheh. Also mixed the yogurt with a drizzle of Frank’s hot sauce and a pinch of salt before draining it’s water.

As much as I love tofu, I doubt it. It might work of you blend tofu with water to form a dough, but it is problably a lot easier to find or make vegan filo pastry.
I must admit, vegatubles are packed full of nutrients and you don't need much more to be healthy if you're not active and sat down in an office all day (like most of us). You do need a lot more if you're physically active though (especially if you're a professional athlete) but I feel like the push to veggi dishes is more marketing from the Jamie team. Of course I'm happy if anyone disagrees with me and I'd love a personal response from Jamie.. which won't happen because I'm sure he has a team that looks after his UA-cam channel.
So just add the “more” that you need. It is a basic pie recipe not a meal plan, much less one planned for professional athletes. As a meal for 99% of the population- yes this is all you, if you think you need more than this yet wonder why you are overweight, wonder no more.

Veggies are delicious, but the most nutritious veg can't even compete in front of a casual beef steaks when it comes to vitamines electrolytes and macros. Let alone the protein, of course.
