I got the fresh ones where I live but yes, you can get the brined galangal in the jar or the dried ones. But after all, if you can at least get lemongrass and Kaffir lime leaves. It’s ok to leave the galangal out and add a little extra lemongrass. Might not be as herby but that’ll do 😊
There’s no replacement for galangal. As long as you have lemongrass, Kaffir lime leaves and other aromatic herbs then leaving the galangal out would be fine 😊
