Coming from experience, you only ever eat Persian stew with flat bread is when you accidentally made too much and you’ve finished the rice and you don’t want to make more rice because it’s not that much stew left anyway

My mom's first husband was Persian and he showed her how to make Ghormeh Sabzi, Green Bean stew (not sure of the name in Farsi) and a chicken stew and damn are they good. You should totally make more videos/recpies!

Where would you find the dried lime? I grocery shop like 2 a day sometimes, I've never really seen the though I've never really been looking.
Amazon definitely, arabic and (maybe) turkish supermarkets. Most of the time they're called limoo omani like in the video or loomi or noomi basra.
Halal/Middle Eastern shops, or maybe Indian supermarkets
You can dry them yourself. The taste wouldn't be much different.
Generally Amazon is a place to start for anything. But Google will tell you where to buy anything and specialty stores often have better product and can answer questions.
NOT ANOTHER COOKING SHOW look up “Sadaf” brand (there are other Persian brands but this is the most common) and they always sell dried line or “limoo” in a big bag

Thanks for FINALLY putting up some persian food on the channel! Gheymeh is a staple food in persian households, and you've GOT to eat it with persian rice! That's for sure the best way! And please, do more persian cuisine! Maybe try Fesenjoon (Walnut, pomegranate paste and meat stew) and from mixed rices, have a go at Albaloo polo (sour cherry, rice and chicken topped with pistachios and saffron). But honest, anything would be great!
Clockwork Girl what's special about Persian rice? Is it a type of rice (like basmati , calrose etc) or is it how you prepare it? Thx in advance!
@@tigerheaddude We have quite a variety of rices in Iran, with "Tarom" and "dom siyah" rices being amongst the favorites. And regardless of it's kind, rice should be aged a bit. That way it has better taste, aroma and holds its shape while cooking. But honestly, any Basmati rice would do. It's more about the method of cooking rather than the rice itself. That extra step of cooking rice that we have, which is steaming, makes all the difference. It makes the rice fluffier, lighter and less dense.
@@tigerheaddude So here's a recipe if you're interested:
Rinse the rice, add warm water and salt to it and let it soak for a couple hours before cooking it (you can skip the soaking part, it's not necessary, but it makes the cooking process easier. Add the salt to boiling water if you skip soaking) Bring some water to boil and add oil. Throw away the water you soaked the rice in, add rice into boiling water, stir gently and cook until rice is kinda soft, but the middle of it still has some chew to it. That would take around 5 to 10 minutes. Then pour rice into the colander to drain, rinse it with lukewarm water to get rid of extra salt and set aside. Add oil to the bottom of your pot so that rice doesn't burn and gets golden crispy instead (that crispy bottom is the best thing about rice and we call it Tahdig). Add drained rice back into the pot, and after a couple minutes when it started to steam, put some paper towels or a piece of cloth between the lid and the pot and let it steam on low heat for about 45 minutes. Hope it's helpful!

Andy always seems so enthusiastic about what he's making, I love his videos.
Made this dish on Saturday night as part of a Persian dinner. It was excellent. I didn’t use the cinnamon but added some cardamom. My potatoes ended up (because of the slice I used on my mandolin) more like shoestring fries but they were absolutely fantastic. I think this dish would also do very well with cubed boneless lamb shoulder as well.
Dude! This was so good! I almost burnt the house down because I haven’t worked with oil frying before, but close calls aside (and about an hour of cleanup later) the dish was amazing! I also didn’t have the special Julian cutter but I was able to wing it a little with careful slices. I also couldn’t find the limes, but a put a small squeeze of a half a lemon as a sub. I’m going to he cooking it again for the in-laws when they come in next week! Thanks so much Andy! You’re the best!
The Cutter is actually called a Mandoline slicer and a serviceable one should cost you less than 30 USD. Be careful when you use it, many cooks (including myself) have accidentally cut themselves when slicing.

I had this same exact dish but with mutton rather than beef, at a friend's house once. Good god, it was one of the best things I've ever consumed. Had no idea that it's actually a Persian dish.

The tricky part is the yellow split peas you get abroad cook very fast whereas the type we actually make it with is much harder and slower-cooking, which is how you want it because that lets the flavours properly fuse into each other, otherwise if you're non-Iranian and you're making this and you don't know these details you might end up eating it and hating it because you're eating something entirely different, lol.

Thank you Andy for another great Persian dish. This was always a special meal for me growing up. My mom sometimes added eggplants to it as well. Served over a giant bowl of Persian rice. But you are absolutely correct that it's the fried potatoes that make this dish.

I'm probably late, but I just wanted to say that here in Iran some people make this stew with mushrooms instead of meat, and the taste is not very different. I mean as long as you get your seasoning on point.
One of my favourite Persian stews, Andy-jan. My mum always makes the potato as fries, but I think we'll give the mandolin-sliced method a chance next time!

Lemon Omani ليمون عماني is also what they are called in Arabic. It translates literally to lemon coming from Oman, the country. Traditional traders used to bring those from Oman to the costal areas on the Arabic/Persian gulf.

tip: use unprocessed sea salt for that stew you might just end up making it everyday for a week.
If you were wondering.. yes you can eat the lemons, but it’s more of a “should you” question. Saffron last time I checked was ~20 USD for 5 grams
Definitely going to try this out! Quick question -- What would be a traditional way to substitute the beef for something my vegetarian wife can eat? I was thinking a variety of mushrooms at first, but maybe someone with more Persian food experience can recommend something else?
I'm Persian and a family friend of mine cooks mainly vegetarian Persian food, The meat is really some there for added flavour. You are definitely fine with just leaving it out. Mushrooms can work as well, but I'd mainly say increase the spices that you use to counteract the flavors missing

Use some vegetable broth instead of the water as well if you're leaving the meat out. It's all about the flavor. Definitely don't do mushrooms because this is a sweet and sour dish

I am Persian and also a begetarian. I use mushrooms and even tofu in any Persian stew I make. Not eating meat doesn’t stop me from enjoying Iranian delicious food :)

Lᴏᴋɪ Oʀᴍꜱᴛᴜɴɢᴀ they use a salt that is less salty and dense than usual iodised table salt that you probably use so they have to double or sometimes triple the amount of salt to give the same level of salty flavour

It seems like a wonderful combo of spices and nice, pungent ingredients. I live in a very rural area and the most exciting restaurants around here are Indian and Moe's grille. Or Chilis. I have to drive to Boston for more interesting meals. I might give this recipe a try.
