It’s very interesting to see it from a foreigner’s POV, because for us Indonesians brown food is just normal. Gudeg is not up there among my favorite Indonesian dishes because it’s sweet, but that’s just how it is for the cuisines of Central Java and Yogyakarta, so I appreciate it as it is. Of course it’s different with Ivanna because her family is from the region.
As far as I know, the name 'Gudeg' is derived from old Javanese word 'hangudek' which means 'to stir continuously'. The dish was first discovered by Mataram Sultanate soldiers in the 16th century tasked to clear a forest for the Sultanate's expansion. At the time, the forest was teeming with jackfruits and coconuts, and the soldiers decided to have them for meals and ration. They cooked the jackfruits using coconut milk in a pot over fire, stirring it continuously (probably not this simple though lol). Thus the recipe was born. Yogya folks, please correct me if I'm wrong 🤝
Fun fact: Yogyakarta/Yogya isn't the only place in Java with Gudeg, although indeed Yogya's Gudeg is the most famous. Try going next door to the city of Surakarta/Solo. There you'll find a different kind of Gudeg. Yogya's Gudeg is dry and sweet, while Solo's Gudeg is wet and savory.
OMG... I always get annoyed when my White American (Midwestern) husband asks me "what is that?" whenever I serve him with an "unknown" dish (unknown to him) because Indonesians like myself never question what's being served first. We just eat it and decide later if we like it or not.
I see some Malaysians in the comments bringing up some of their jackfruit cuisines, such as Rendang Nangka and Gulai Nangka. In Indonesia, you'd find Gulai Nangka among Minangkabau cuisines. If Steve had noticed, he would have found this Gulai Nangka amongst the dishes served on the table during his Padang restaurant visit. This dish will also grace your Padang takeaway wrap together with cassava leaves, Lado Ijo (green sambal), rice, and main course. Besides that, in Minangkabau/West Sumatera, you can also find 'Rendang Cubadak' which is made from young jackfruit. Gudeg isn't the only jackfruit dish the Javanese ethnic has to offer. Among other jackfruit dishes in the region, we do have something else called Sayur Gori (Gori means Jackfruit in Javanese). Sayur Gori is basically a jackfruit soup-curry that is easier to cook and totally different from Gudeg, and it also does not qualify as a 'gulai'. Basically the term 'Sayur' means 'vegetable' (sayuran) in bahasa Indonesia, but in some regions, 'Sayur' can also refer to a particular veggie dish. Btw, Sayur Gori was my father's favorite dish. He would eat it together with rice and fried tempe, and he'd be content with these even if we didn't have meat, poultry, or fish on the table. Anyway, Gudeg, despite its fame, isn't for everyone. It doesn't take a foreigner to consider it an acquired taste, as even some Indonesians (including folks from the Javanese ethnic from outside of Yogya) don't really like them either, especially because of its sweet flavor. If you happen to be within this group of people, I would recommend that you try Gudeg Solo/Surakarta and see if you like it better. It's wet and savory, unlike the Yogya Gudeg that's dry and sweet. Sure, Surakarta/Solo's gudeg is also still a bit sweet but far less than Yogya's. At 4:41 in the video, Steve is shown the Brown Sauce of Yogya's Gudeg. Well, in Solo's Gudeg, that sauce is White.
Usually we will fall in deep love with javanese food after eating it several times. So.. the good feeling is coming in and absorbed slowly .. That's the javanese culture.

chicken skin is the best part of the chicken, here in Indonesia we also have so many dishes only from chicken skin, mostly fried as crispy skin, some for satay, etc. Eventho, yea i know, it is all fat haha

Beside gudeg, try BRONGKOS, it used to be royal dish, cooked and served within Jogja royal palace, also try BAK MOI, a peranakan dish which also created in Jogja long time ago.
in jogja you will find many similar things, try going to kadipiro street, then there are many soto kadipiro there, close each other,because they are still one cousin,its example from how bad family monopoly is
Try Solo's spesial food. There are some delicious food there like nasi liwet, selat solo, pecel ndeso, tengkleng, cabuk rambak, tahu kupat. Solo is 60km from Yogyakarta, 1 hour by train.
that brown egg is also called 'Telur Bacem'. Bacem is a style of cooking which utilizes brown sugar as a primary component besides coconut water. It's usually cooked separately from the gudeg, but could be put into the gudeg pot for the remainder of the gudeg cooking process, just to get the taste infused.

As a Javanese I always eat gudeg whenever I want something sweet mixed with the rice. Also there's another version of gudeg with coconut flower as the main ingredient instead of jackfruit and it's called "gudeg manggar". Gudeg manggar taste better in my opinion

Well, the place that Steve visit actually part of tourist area so entire street is almost like tourist attraction..it is called Gudeg Wijilan, and it hold many household name in term of Gudeg, like the famous Yu Jum's Gudeg,.it almost like when one people famous and the other like trying to have same fortune.. 🤔
