Lol omg my first canning project relived. U Kneady and Mandy were my inspiration to step and do this. That was 2 years ago. I canned soup after that. I've been having a little struggle going back to school lately had to open soup. I was nervous about eating soup I canned smelled good etc. I'm good I'm here. Dang friend I can survive. Thanks to all my awesome canning friends for the education. Catch a fish for a man or teach a man to fish.... My friends taught me to fish. 😊

I just made 4 and a 1/2 half pints two days ago. 2 1/2 cups strawberries, 3 cups pure cane sugar a a lemon. Berries and sugar in a wide flat pan, mashed most of them. I cut the lemon, juiced it and cut it in several slices and added them to the pan. When a lot of syrup was in the pan, I strained it in a Callander over a bowl. I put the syrup back in the pan and cooked it down . When it was thicker, I put the Berries and lemon back in for a couple minutes. Then jarred and canned it. Removing the lemon peels. The lemon releases pectin to thicken the jam. It is fantastic.

The thundershirts do work. I had a Shih Tzu and they worked great. I have a Maltese/Shih Tzu now and Ziva sometimes get nervous and she only weighs 5 lbs so I tie a hand towel or one of her little blankets around her middle and that works because they do not make a thundershirt that is small enough for her.

I'VE beeb trying to perfect a sugar free strawberry jam...& While i can make something...it never turns out beautiful, red & clear...like yours. Its always been milky looking. I'm guessing the sugar plays a huge role..(like it does it candy for instance).

You want the sugar to bind with the fruit first because there is so much of it. Then you add the pectin because you don't want it to break down while putting in the sugar. You want the pectin to act as a binding agent to the fruit to preserve the fruit's taste while the sugar keeps the mold and bacteria away from growing on or in the jam or jelly. :-)

NO strawberry jammin' going on here this year. For reals! lol I did do some strawberry-rhubarb (and kind of blitzed it with a stick blender because some people don't like rhubarb pulp) but hubby and I just don't eat it, sadly. Sure enjoyed seeing yours though, it looks awesome! So sad your dogs get stressed during fireworks. Could they have a vet-approved relaxant? Sad for dogs locally I heard whimpering/crying from people shooting off illegal fireworks (here it is illegal completely---zero private fireworks supposedly). In past we always only had hunting dogs so they weren't bothered. Most dogs, of course, are not and that makes this time of year difficult for them. :( Our cats couldn't have cared less because of course...Cat. Lol! Hope your back is fine and no longer bothering you!
