If maximizing the health benefits of olive oil is the goal then you want to cook with chicken broth and or another higher temperature oil like coconut. Then pour your extra virgin olive oil over at the end. When you cook olive oil, the high temperatures break it down, destroying the antioxidants. Thanks for your review.

@@irisce2799 maybe to some degree but heating the oil destroys the antioxidants depending on temp and time heated. Pour some olive oil in a pan and heat. In the beginning it will be a vibrant green but the longer you heat it will begin to turn brown.

@@roblovegreen The presence of antioxidants/polyphenols in EVOO counteracts/prevent oxidation. Whereas other oils(refined avocado oil, which has no antioxidants, canola, corn, etc) oxidize much faster and produce more toxic compounds. Smoke point matters less than you think. What matters in the end from a health perspective is the oxidative stability of an oil when subject to heat for various periods. EVOO's antioxidants have protective properties when it is subject to heat.

Randon Dude--Liked your comparison. Lucini has been my favorite forever. But recently added another one.... try Dr. Grundry's olive oil (he has a commercial on UA-cam). Supposedly has the highest polyphenols. I love it. Good bitter taste. Very expensive. What I've noticed since taking a teaspoon 1st thing in the morning on empty stomach and at bedtime is I have more energy during the day and I'm sleeping better at night!
Some olive oil companies get their olives from more than one place from different harvest regions and mix them all together. Dr. Grundry explains what to look for when choosing your olive oil. BTW...if the oil bottle does not say "high heat" then it should not be heated too high. Bon appetit!

Where did you hear that bitter equals good quality? The videos that I have seen with experts in olive oil all have them state that it should have a pepper taste.
EVOO are all around the same for cooking heat. I tell people to look up the smoke points of oils to determine what to do with them. Smoke point of ... This will tell you the highest temperature that you want to use. I normally use avocado oil for high temps and EVOO for low temps.

As far as the high heat barometer goes, there are so many studies and interpretations of what it all means, I use my built-in intuitions when choosing what products will work for MY BODY --I muscle test. My body does not lie to me and I trust it, over all else.

His claims of 30x polyphenol content can be misleading, like all his overpriced supplements, buyer beware. Those nutritional numbers fluctuate wildly year over year, even within a single olive orchard. He has never adjusted his numbers since 2012, which proves he doesn’t know or just doesn’t care, he just wants your money. He may have a lot of good information about health and longevity but the stuff he sells is a ripoff, imo. Olives are a fruit, so evoo is similar to wine. Each harvest year is different and the nutrients vary in many ways. There are a lot of ways to get high-polyphenols in your diet without emptying your pockets so fast.
