You missed the most important information, when was the Harvest Date. Most out there are over a year old harvested. Also, never buy an Olive Oil in a clear bottle.

Where did you hear that bitter equals good quality? The videos that I have seen with experts in olive oil all have them state that it should have a pepper taste. EVOO are all around the same for cooking heat. I tell people to look up the smoke points of oils to determine what to do with them. Smoke point of ... This will tell you the highest temperature that you want to use. I normally use avocado oil for high temps and EVOO for low temps.

Don't know about now but when I was a child my mom used to make me drink a spoonful of Pompean and to this day I will not even look at a bottle of that stuff! It was so awful and so bad it actually gave me a stomach ache! I told my mom that I will drink it if she will drink it and she did! That was the last time she ever asked me to take it!

Decant your oil into small bottle. keep in dark place. Store the large bottle in the fridge. As soon as you open the bottle its starts to oxidize and is a matter of weeks before its no longer healthy or useful . This is rarely discussed but is an important tip
I don't refrigerated cause it get thick. I keep two glass dark bottles. They never taste any different. They taste like the first time i opened the original bottle. You could be right, but i haven't notice any decrease in flavor.
Well I bought pompeian recently, thinking the price means it's fake. But I read online it's real, it's just not great quality, and doesn't have much flavor. I'm fine with that since I just use it for cooking. If I want some for dipping then I'll definitely get a better quality kind.

How one would differentiate between oils is by measuring the Antioxidants (Polyphenols) in each.. only problem is most commercial brands would never want to show those numbers out of embarrassment. Quality Olive Oil should be 3rd party lab tested.. We have ours tested by the University of Athens along with 2,000 other brands. We Ranked in the Top 30.

His claims of 30x polyphenol content can be misleading, like all his overpriced supplements, buyer beware. He has never adjusted his numbers since 2012, which proves he doesn’t know or just doesn’t care, he just wants your money. He may have a lot of good information about health and longevity but the stuff he sells is a ripoff, imo. Olives are a fruit, so evoo is similar to wine. Each harvest year is different and the nutrients vary in many ways. There are a lot of ways to get high-polyphenols in your diet without emptying your pockets so fast.
