    I made this over the weekend. It was time consuming, it feels like I was in the kitchen most of the day. That said, it was in every way superior to the ricotta-based lasagna I grew up eating. Next time I may go a little harder on the nutmeg in the bechamel - while it was perfect in the mac and cheese, I felt it maybe got lost a little when mixing with the flavors of the bolognese.
    That said, this one of my favorite things I've ever made, and the family was absolutely impressed.

      Chef,, You're killing me. I just started working out and dieting to lose my Covid weight gain and thought that next month, I, 'll make lasagna and cheat. I haven't looked at your bechamel recipe yet but I'm thinking it is a Motzerrela bechamel, I never made that with mozzarella, only with cheddar when making American Mac and cheese.. My Boligenise always has sliced sausage in it, And I use Ricotta as well as spinach. I will intensify my efforts so that I can get closer to that cheese sauce on a lasagna. Or I Can just make it and take it to my friend's house Sunday and feed their family and take home the leftovers.... I'm hungry.

    Friend, you drink your wine. This is not a Disney movie. It's a great cooking show by a guy with knowledge, character and a delicious sense of humor. I will make this one day when I have a lot of time. Doesn't matter, though. I just like watching the videos because even if I don't cook the particular dish, I always pick up some great, useful cooking tips. You obviously love what you do and it is infectious!

I’m putting more budder in everything I make 😂 I’ve always liked budder, but now I absolutely love my budder. This man is such a wonderful teacher! And I’m pretty sure I’m going to call it budder for the rest of my life. And onyo. Definitely sticking with onyo!

      I discovered his channel when I was on an abdominal feeding tube for 4 months! Couldn't even have ice chips. My daughter would ask me why I tortured myself. I told her these are dishes I'm cooking when I'm off this thing! The first thing I made was his easy peasy delicious hollandaise sauce.

    I made this yesterday for a dinner party tonight, had some leftover sauce and noodles so I put together a little 5 x 5 inch one in a separate glass dish and baked it at the same time as the big one. Refrigerated over night. We had the little one for lunch to determine the reheat time at 275. 45 minutes did it. And the verdict is thinking of cancelling the friends coming over as I don’t want to share it. Haha, tastes so good you want to lick the plate! Chef Jean-Pierre you sure didn’t disappoint marvellous recipe, thank you again.

    Finally made this last night and let it sit in the fridge until today. This recipe is amazing! Instead of baking the chicken I cooked it in my cast iron because I wanted to try out the clarified butter I made. That alone had my mouth watering! My wife still can't get over the fact that ham works so well in a lasagna but she's not complaining! And that mornay sauce? Good lord it's delicious!

    The chicken and ham layers are a fine twist! Concerning the mushrooms, I make an extra layer with those instead of cooking them in the ragu.
    Pan-sear the shrooms in oil with salt and pepper, deglaze with white whine and add butter and herbs. Put a layer of that in there for a more distinct mushroom touch.

    Out of all the cooking channels on UA-cam, Chef Jean Pierre is the only one I truly enjoy and now the only one I watch. I tried several of the recipes and they always come out perfect thanks to Chef Jean Pierre's excellent teaching skills. Also love all the advice on preparation and techniques to get excellent results every time. Always looking forward to the next creation by Chef Jean Pierre.

    To each his own and I love the chef. However I personally love meatless lasagna and now use the chefs puttanesca sauce for it. With goat cheese and Asiago and I'm just happy. Chef Jean-Pierre has reintroduced me to The Joy of Cooking and that is a blessing.

    I've been a chef for 23 years. I still love watching other chefs. I enjoy your technique and flavor combinations.You inspire me with every video. Keep up the good work. I've added a few of your dishes to my menu. In fact, Lasagna was was the main entree tonight. Love the two sauces. The vegan version was not so much. I do not like cooking for vegans. Life is to short....Meat, eggs, cheese, and butter are too delicious to arbitrarily remove from your diet.

    Chef Jean Pierre you have inspired me to cook again. Seeing you cook is fun and brings back very happy memories of when I had passion for the culinary art. I went to culinary school, had a great French instructor and other wonderful chefs and graduated received my Associates degree with honors. I did it in memory of my 21 yr old daughter who passed away back in 2010. She and I went to culinary school together. We were close to graduating when she was stricken with terminal brain cancer. We had plans to one day own our own restaurant. That's when my love for cooking died as well. However, seeing you reminds me of the joy it was being a chef. Thank you for reminding how wonderful cooking great food is. I wished I could have experienced attending your school. I know it would have been great. You are amazing. Thank you.

    My local French restaurant makes mussels with the white sauce you made. My spell checker won’t let me spell it. Anyway, it’s the most delicious sauce I ever had. I told them I wanted to eat that sauce as a soup. 🤤

      It's a Bechamel sauce with cheese...some places when you add the cheese to a Bechamel it's called a Mornay sauce :-)

    You saying " nobody cooks for me" hit home. My husband and I entertained a lot and I loved giving dinner parties old school, especially during the holidays setting a beautiful table with my china etc. We were very seldom invited to our friends homes for dinner unless it was a pot luck BBQ. I mentioned this one day to my husband and he told me the other wives were intimated by my cooking as they felt their cooking did not compare to mine. That never occurred to me!!!!

      One is british, grew up where the sun never shows up, where it rains all the time and where the vegetables never grow.
      The other one is french with italian origins. Where the sun never settle, the rain never come and the vegetables grow very well.
      I think it have some impact on the psyche.

    I think it's a good challenge if people don't know what to replace an ingredient, it's a good time to create and make their own dish with the foundation that you give us. To me that's what makes a good chef. Creativity and not being afraid to try different things .

    What I enjoy most about your Chef Jean-Pierre's videos is his excellent ability to teach and mastery and emphasis on technique. Even on recipes for dishes that I either don't enjoy eating or don't believe that I would enjoy eating (although this particular recipe is one that I'm confident that I would enjoy), I still find so much value in his videos for those two reasons and, as a result, consider his channel to be one of the best cooking channels that I've seen on UA-cam. I'm grateful for these terrific videos.

    My daughter forced me to make lasanga with minced chicken???
    Must say 💯% BEEF RULES!!!!
    I left the spartula in the tomato thing…. 🫣 It was covered in some sticky White fat thing????
    There are no fat in minced chicken ??? My grandson LOVE granddads lasanga!!! 🥰
    The most important Spice is LOVE!!! Been cooking for 40years now… The galic Knowledge ??? Made a world to difference!!! 😲 40 years of doing wrong🤷🏼‍♂️ next 30 Will be perfect!!!!!!

    I love you Chef! You don’t talk too much. Even if you did I would listen! You’re an amazing Chef and teacher. We all love you! You’ve taught me so much in a very short period of time. I’ve always loved to cook and you’ve made me love it even more. Don’t listen to the “ticktocky” people. 😂 I made my first ever beef stock cause of you!     A local restaurant made a pepperoni lasagna. They used mini lasagna noodles (mafaldi?). It wasn’t really layered like traditional lasagna but had the usual ingredients. It was wonderful.
    Then.....they changed to a penne type noodle because they couldn’t get the other kind anymore. It changed the whole taste. I haven’t ordered it again. I never thought a totally different pasta would alter a dish so much.

    Pay no mind to any May-sayers including the ones who say you talk to much! You are wonderfully funny as you teach your students, among whom I count myself! I’m making your lasagna today to serve a dear friend who’s coming to lunch tomorrow (except I’m substituting eggplant “noodles” to reduce starch and add some nutritional benefits) so mine can be as amazing and serve so beautifully!! Thank you for being one of my best teachers of all time!

    Serving one day after for baked products like Potato Gratin and Lasagne is a game changer chef. I learned it from you. Firstly the food absorb all the aroma and fat, and every bite is sensational. secondly you don't have to deal with serving from very very hot tray. It does not fall apart and you dont burn your hand. Eating stuff from directly from the oven is also difficult for guests too, it is way too hot and even they eat it, don't get the taste, it needs to relax and chill.

    OMG!!!! Believe me, you won't EVER make traditional lasagna again!! My husband loved it the first time I made it. We had leftovers. He keeps devouring it and tells me that as it sits, it gets better and better. I love it and I WON'T be making "traditional" lasagna anytime soon. Thank you, Chef, for a "new take" on lasagna!

    Ever since I went to an Italian restaurant and had Lasagna with Mornay sauce in Paris in 2007, I've been making my Lasagna the way same as you. Who knew that instead of mealy ricotta laden Lasagna that most people have been brought up eating here in the U.S. could be so improved upon! The creamy cheesy layer that is just like you said, is so sexy and is well, out of this world delicious. I make the Italian sausage and mushroom red sauce also, but I add garlic-sauteed fresh spinach and artichoke hearts as a layer too. Any ingredients you use to make it, just be sure to do the Mornay sauce and you'll never go wrong. Thanks, Chef for educating the masses on a new way to make it!

    I have to admit that ham and chicken in a lasagna is an odd combo but that intrigued me to try this recipe. I was literally blown away by this lasagna. The mornay sauce is by far superior to ricotta!
