I'm allergic to pine nuts, so I always use peeled almonds for pesto (slightly toasted even better, but not a must), which works great, too. but so do cashews ;-)

Interesting combination Pesto & and beef. I did cook this recipe, but definitely the Pasta weight of 250g is "cooked" pasta not raw, so use about 90g dry pasta of choice; otherwise, the recipe will be wrong. I suggest following changes to recipe: onion should be 100g, ground beef 100g, 60ml pasta water and at the end adjust salt if needed. If I will rate the recipe for flavor, I give it 8/10
I don't understand why it should be wrong to use 250 gr of pasta. Probably you are not italian...in Italy this proportion pasta/sauce (350gr mince) is perfect. We eat pasta with sauce, not sauce with pasta (and it is a way to recognise real italian pasta recipes) :-)))

Yes, and that’s all that matters, do your own thing and enjoy. There are no rules only snobs. Authentic is amazing, and variations to your own liking are also amazing. In Italy, one Nonna next to another Nonna are two completely different recipes with the same name. Cook Love and enjoy.
