- This Blueberry Lemon Cake is loaded with 1 pound of blueberries and every bite has sweet pops of juicy blueberry and fresh lemon flavor. It’s not too sweet and not too tangy, but just right. This is my favorite tea/ coffee lemon blueberry cake.

Ingredients for Blueberry Cake:
►2 large eggs
►1 cup (210 grams) granulated sugar
►1 cup sour cream
►1/2 cup light olive oil or vegetable oil
►1 tsp vanilla extract
►1/4 tsp salt
►2 cups (260 grams) all-purpose flour
►2 tsp baking powder
►1 medium lemon (zest and juice), divided
►1/2 Tbsp corn starch

I'm definitely a novice baker and I only have a small NYC kitchen at my disposal, but this was one of the first cakes I've ever baked and it turned out amazing. Moist and not too sweet, with a heavenly combination - sweet blueberries and tart lemons. I made a lemon glaze for the top using just powdered sugar and lemon juice/zest to give it an extra umph, and it was AMAZING. This is by far one of the best things I have baked so far and I am thrilled. My roommates and friends love it!

Okay guys, so I made this last night...whipped it up in a few minutes...and it is amazzing! I was a bit traumatized from the strawberry cake (came out raw in the middle most likely due to over mixing) but with this one I just kept it simple, followed step by step, and VOILA! Came out perfect. Thank you Natasha! Husband approved ✅

I tried this recipe yesterday and there's only a slice left now!! 😂 clearly it was a hit and I added a personal touch to it, some crumble on top of the batter before baking it in the oven. This took the cake to another level 👍🏼💯💯

Saw this recipe and couldn't shake it off my mind so tried it immediately. It came out absolutely perfect. Soft fluffy and so tasty. I added Greek yogurt as I did not have sour cream and reduced all ingredients by half to make a smaller cake. Baking time was exactly 55mins as you said. It came out just as it's suppose to. Thank you so much for this recipe. So easy and so delicious 😊

Made it and its super delicious. Swipe sour cream with Greek yogurt. I used scale to measure as not used to cup measurements . 200gm sugar, 8oz greek yogurt, 4oz oil and 250gm flour. Cake turn out perfect. Thank you Natasha!

Made this last night and it came out so great! I was out of sour cream so I substituted it with a cup of full fat milk and a tablespoon of fresh lemon juice (mix before adding it will thicken a bit more like sour cream). I also used frozen blueberries and strawberries and it worked perfectly!

I just made this cake and I’m certain it’s the best cake ever I have made. It’s just absolutely delicious!! It’s easy too. Hi Veronica, if using frozen, thaw and drain off any excess liquid and toss the thawed blueberries in double the corn starch and do not add lemon juice to the frozen blueberries.

This cake is delicious. I would recommend cooking at 350, though. It was slightly too brown. I had to trim it. I used a powdered sugar lemon glaze on top.😋
