I made your recipe and loved it. It's only my wife and I at home and she can't handle anything close to spicy, so this was all for me. I had a few meals and froze the remainder of the meat and consume. The other day I made chili, using a pound of the birria meat and a pound of ground beef, along with 2 cups of the consume. I didn't have to add any other seasonings, just an onion, green pepper, a can of chili beans, and a can of crushed tomatoes. It was the best chili I have ever made or ever had! I made these and they are so good!!! I did however make a few changes. Since food prices are so high right now I got the pre-cooked roast and seasoned myself. I used better than bullion Seasoning, and since I also already had burrito size Tortillas so I made burritos instead of Tacos but everything else was the same and it was amazing. Pro tip you can blanch your onions and garli with the peppers as well if you are using all of the blanching liquid. It helps keep consistancy in your adobo.

Some people love the extreme heat from the seeds, however I think it overwhelms the flavors sometimes. I only keep some seeds from the chipotle peppers P.S. add some cumin to that spice mix next time!!!

Have to do what i can do The full chili's are hard to find in Canada I went to the bulk barn to get me some powdered The flip of this for me that not many other places can lay claim to is..My Birria has ground beef in the sauce Because the main is Moose cubes The meat has a earthy wild taste to it with the spices and that smoke ...boom game changer And i use a slow cooker with 8 hours My tip to you jay if you like a perfect blended drink with this ...Appleton 8 year (reserved blend) Jamaican rum with coke 1 shot 1 can 4 ice Pre freezer the bottle And have the coke cold as you can get Even get that wet glass in the freezer Pour yourself a drink as you are eatting the Tacos ......You are on flavor overload ...Molasses, Carmel smoke chocolate notes I love food, You dont have to be rich to eat well. How funny is it that i am Native / French Canadian (Metis) watching a American on Mexican foods And giving Jamaican drink advice Find that on a 80's cook book lol Cheers !

Yes you can absolutely use chicken, the chilies are very mild almost no spice, the only heat comes from the “chipotle in adobo sauce” that you can remove

Sorry for the late reply but you can add a little water if it’s drying up too quick and if you can easily break the meat with a spoon then you know it’s ready
