Shopping List:
2.5 lb Chuck Roast (or boneless short ribs)
8 Arbol Chilis
2 Ancho Chilis
1 can chipotle chilis in Adobo Sauce
2 tbps Tomato Paste
2 tbsp brown sugar
1 cinnamon stick
1 white onion
2 cups beef stock
2 tbsp garlic paste
salt, pepper, garlic, onion powder, marjoram, thyme, cumin, chipotle chile powder
Corn Tortillas
2 bay leaves
8oz Queso Melt Shredded cheese
Cilantro
Directions:
Begin by allowing your meat to come up to room temperature. Remove seeds and stem from chilis and rehydrate by adding them to boiling water and letting them simmer for 10-15 minutes. Remove from water and add to blender along with 1 can of chipotle chiles in adobo. Add about 1/2 to 1 cup of the water from the chiles to the blender as well. Next, add brown sugar, marjoram, thyme, chipotle chili powder, salt, and cumin. Blend mixture until it forms a paste/sauce consistency. Taste and adjust flavor to your preference. (Dice onion)
Cut chuck roast into equal size pieces and season heavily with kosher salt. Heat dutch oven or skillet to high with avocado oil. Sear meat on all sides until a nice crust develops. Remove meat and turn heat to low. Add diced onion and cook until tender. Add garlic and tomato paste and mix to incorporate. Next, add in 1 cup beef stock and combine. Add meat back to the pot and then cover with your sauce. Stir to combine. Season with salt, pepper, garlic, onion powder as needed. Add cinnamon stick and bay leaves. Cover and place in the oven at 325 for 3-4 hours (time will vary depending on size and cut of meat and temp used. 350 will cook faster - meat is done when it shreds easily with a fork)
Once meat is for tender, remove from sauce and fish out cinnamon stick and bay leaves. Add more beef stock to thin the sauce and make your consomme. Simmer for 10 minutes or so and skim the fat off as needed. next, shred your cheese and get your skillet hot. Add some cooking oil to the hot skillet. Dip your tortilla into the sauce on both sides and place onto hot skillet. Cook for 30-60 seconds and flip (looking for color). Add cheese, beef, and more cheese and then fold tortilla over and press down. Flip once and cook for an additional 30-60 seconds and remove. Serve with consomme for dipping and top with cilantro.

The Spanish section? NO!
You'll find them in Hispanic/Latino or International Food aisles. Or Mexican grocers.

When he put water in the can, I no longer felt like a poor girl from the South 😭
ALL the money’s worth! No juice left behind! ✌🏾

No reason to feel poor, majority of restaurants do that kind of thing for lots of different products.

The small cans commonly found at most grocery stores.. 5 oz I believe

I tried quesabirria for the first time ever from a restaurant and my family's first reactions were "yours are way better" and I got my recipe from this video!!! Thank you!
This was my recipe go to. I went to the restaurant and i honestly say he did it best. I won’t make it no other way. This had kick with souls in jt.
Made these today for my husband’s birthday! Only difference is that I shaved some time off and pressure cooked the meat. Everything turned out great and we are in a food coma as I type this 😂 we’ve made a few other recipes of yours and they are wonderful.
What setting did you use the pressure cooker on?
@@matthewh7437 For that quantity of meat probably 55-60 minutes on high pressure with an Instant Pot.
Great idea , think I’ll do the same
I'm a gringo delivery driver and I always wondered why I saw lines of 20+ at a food truck at one of my stops. I saw men stand around dipping tacos into styrofoam cups and tried it one day. Almost life changing. Such intense satisfying flavor! Can't wait to try your hints and take on this dish!
Thank you Chef for showing me a easier way to execute this dish. My family will love these.
yep. saw other chefs make this dish - took hours long
@@zoelife7272 it takes me at least 12 hours everytime with taco toppings ,onion, lime, cilantro. and if I make verde sauce... this recipe does take forever and is no way easier in fact there's more ingredients in here than most recipes I researched! Very delicious dish. My 3rd time making it😁 just a warning LOL

Just made it. Absolute fire. Mans can cook. Thanks for the guidance!
This recipe is an absolute banger ! Tried it this afternoon, and it's definitely going down as my favourite.
Can you taste the cinnamon in the recipe?
He’s the best but isn’t this super spicy?

I tried it once. The flavor was on point. I had a problem with the tortillas breaking apart while attempting to brown them. I dont think i cooked them long enough to crisp up b4 i flipped them. Gonna try again tomorrow and im gonna double up on the tortillas and put some cheese between them and build from there. Glad i found this recipe. It made me seek a Mexican grocery store. And i found a gem in my city, they have EVERYTHING a person would need for mexican cuisine. They even have a restaurant within the store. I havent tried it yet
I learned the strategy is to wet the tortillas with meat sauce and a little oil. They won't brake.
Awesome recipe. I've used it like 6 times already. Same story as bellow. Friends and family have tried it at restaurants just to be disappointed. Asking me to do it cuz mine are way better.... thanks to this video!.
Watching this during Day 1 of my damn smoothie diet 😩😩😩😩
lol! enjoy!
I need a Q&A. How he got into cooking? Who taught him? Does his wife cook lol etc love your channel and the growth!
I think he said in another video he learned from his dad. I believe his dad is a chef as well.

I LOVE Birria Tacos! I made your bread pudding last night and it was fire 🔥! Instead of making bourbon white chocolate sauce, I made bourbon butterscotch sauce like the recipe card you displayed in the video! Fire 🔥!
I just made this recipe tonight and WOW. The flavor, everything turned out perfect, the instructions are perfect too. Thank you! I wish I could show you lol maybe I’ll find you on IG
Just tried birria tacos for the first time recently from a local food truck that had been recommended. They were pretty good, but honestly I was expecting them to be better. But yours look incredible. I have no doubt they taste better than the ones I had. I guess I need to give this a try myself.
Theres a ton of different versions of these. You can find people using several different kinds of chili and combinations of spices. Worth trying a few variations that sound interesting to you and seeing what your preferred style is.
All I can do is Shake My Head !!! You da Man !!! 🥰
Congratulations on your 100,000 Subscribers! You and your wife deserve it ! Peace and Blessings!
Made this last night for the family and it was a hit!! Love your style and I can’t wait to tackle more of your recipes!

Outstanding Recipe!!! I only used two Chipotle peppers because I can't do real spicy however the BEST Birria Tacos ever! The meat I could eat for days, thanks for all you do and keep up the amazing work!
Believe it or not, i just made them tonight for dinner. Opened up youtube, and your video popped up. Is my phone watching to me??????
The whole time I thought it was a Black guy talking.
Me too
This was a dumb comment
@@Kaity11 naw it wasn't, we know the tones of the culture, clearly this guy has it
@Dawn L we can't only allow comedians to bring up cultural appropriate jokes and act like there aren't any differences culturally. You know the joke about using a white voice when answering the phone while in a professional setting. Well bruh sounds like a bruh!!!!! And different shades means what if he's white???
@@jfmonster Don’t mind them I thought he was black as well until I saw his face. People love acting obtuse 🙄
Does it have to be corn tortillas. If you know how to make them. Could you use fresh tortillas? Fresh is always better. It's just corn doesn't in my opinion taste as good as fresh. I always tell my husband don't buy corn tortillas when you have somebody at home that can make you fresh hot tortillas.
I'm made this after watching (as close as I could remember the steps) and it was amazing. My whole family loved it. Thank you!
Did you do a 1/2 tsp for all the dried herbs?
@@tiaracarter7968 To be honest, I eyeballed all the herbs. It's kinda my thing to wing it. But, as long as you don't over salt the sauce, and you sear the meat really well, you really can't screw this up. The flavors are just amazing. I think I braised the meat for about 2.5 to 3 hours.
Thank you! I made this yesterday and it was so good. A little on the spicy side but other than that I was delicious and meat was very tender

How much of that did you eat before the tacos were done!? Jajajajaja
I love every single recipe I’ve done of yours. I’ve watched this video like 10+ within the last two days because I’m going to make this today. Ordered the chilis off Amazon so I’m super excited! I am from México too and this recipe is not even close 🤦♀️
Making this right now. You have the best recipe for this on you tube. Thanks chef. I'm braising the beef right now. I went with Bison 🦬 chuck roast from the farmer. So far so good. The sauce turned out wonderful though I didn't get the brown crust on my beef at all. Just something I have to work on. I'll like to blame it on the stove but maybe not. By the way I'm subscribed! Look forward to learning so much from you so please keep uploading!
This looks so good. The best video of Birria tacos I've seen. I will be making this soon using your recipe. What size dutch oven you used?
Hot damn he's done it again
😄
Right looks sooo good
Where are your Guajillo chili's?
other than a true salt bomb🤦🏾♀️the meat was delicious! Next time I'll skip that part
was it better without the salt or does it still require salt but just less than he put?
I'll be trying this recipe, I love all of your recipes...
It looks good.I don't eat beef. I would try them if they were made with chicken or fish. Thanks for the review. Congrats! 100K on the road to 200K.
There's chicken tinga it's similar but i don't think you'd get consommé
I’ve had this once out but it was just ok. Definitely gonna try it at home because it’s something I know I’d enjoy if it was made right.
All the ones I've had have been "meh" so I make it myself and it's always better and I'm in Phoenix so we have PLENTY of spots to choose from. So sometimes homemade really is best
I agree....I was definitely underwhelmed when I tried it at a restaurant.
I had them from a Mexican lady in my city that makes them & they were really good. I feel like it’s too much for me to be doing at home.
Same here- I was like whats the hype... I'm going to try to do it on my own
Mine has spices in it that NOBODY else's has. I will probably never go to a restaurant again.
You've gone NATIONWIDE! *SMILES* Love your recipes!

Lord why did I choose to go pescatarian/no dairy? 😭🤦🏾♀️
We’re making it with Brisket tonight
I made this and they were delicious! Thank you for the recipe. 🙏🏽
happy to hear that!
This recipe is not good, the birria does not have oil, the meat does not go through oil at any time
the "sauce" is strained to remove the skins from the chili peppers and water is added, it is supposed to be liquid, not be thick
Chile de arbol is not used in this dish either
I do not mean it with bad intention but I think it is necessary to say it
Cool.. thanks.. it looks like at least 11,466 people disagree tho. Thanks for watching
@@MrMakeItHappen I'm not saying that it has a bad taste, I mean that this is not how birria is made in Mexico, maybe it should be called American style birria
:)

I absolutely love your channel, and respect your craft. Only thing, Birria does not have any chipotle in its original recipe. I’m a Guadalajara native and learned to make Birria before I learned to count. Lol! Nonetheless, this looks delicious!
Oh Really?! I didn't kno that, I see alot of people use them in they recipes.... Chile, I made some Birria Tacos an those Chipotle Peppers lit me up, 🥵Lol... They are good tho
msagray12 Yeah, no chipotle. Chipotle has a very distinctive smokey spicy flavor that overpowers the recipe. You can use chipotle in a tinga recipe. Look up “tinga tostadas” if you like spicy food, you will not be disappointed!
Lol he said “stems and seeds that were not gonna need”
Hold on .. it should be American birria tacos .. we use fresh tomatos and work them on the grill .. plus there is ingredients missing yup.. but it looks good i give you a 5
