Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on UA-cam.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. So a lot of comments are saying a lot of things, but big daddy Google says the following:
1. Yes, isopods are technically edible. If you remove the gut and devein them, they’re just as safe to eat as shrimp, crab, and lobster.
2. The repugnant smell is simply due to the fact that they eat dead and decaying plant and animal matter as well as fecal matter, literally the garbage of the ocean that no other animal would want to eat.
3. They are, even among deep sea animal life, one of the most foul-smelling and foul-tasting creatures. It’s partially why, despite being so large and slow-moving, nothing ever eats them.
4. Those shells are incredibly soft and fragile. In fact, the only part that’s truly “armored” about them is that shield plate over their heads (which is why he had such a hard time cutting it in half).
5. The insides are much worse than you could imagine. Basically, you have the tube-shaped heart near the tail, the huge digestive tract that goes right down the middle (and source of all that brown goop), the caeca (also a part of the digestive tract and possibly those “eggs” they saw near the head?), and then just a bunch of sex organs. That entire middle part they spent so long washing and cutting into? Basically useless as there’s very little meat and it’s just an organ sac.
6. Basically, the parts you want to eat are the pleon (essentially the hindquarters and the “tail”, it’s very disgusting and not a lot of meat) and the legs (again, disgusting and not a lot of meat... starting to see a pattern here?).
7. Yes okay, back to #1. You CAN eat this. But why. Why would you eat this.
To summarize, they are similar to crabs and shrimp, but are actually much worse, provide less meat (yes, less meat than even a single shrimp), and smell like the fucking River Styx.
Do not eat this. Even in Japan, home of nattō (rotten soybeans) and shiokara (rotten fish guts), this uncommon food is not considered a delicacy. It is just considered bad.
Not dangerous. Just bad.
