Had to laugh when this reminded me of my old daddy when he came to live with us. I had made some dirty rice a few times without the liver and gizzards and he loved it. But for Christmas I decided to go old school... he ate it, but told my wife later that he didn't want to hurt my feelings, but he hated liver and gizzards in dirty rice.... Lesson learned. I miss the old man who was always my hero growing up. Thanks Ken and Shan and the pups for a great video. When I was 10 years old my Mom worked in a store in Denham Springs where Mr. Wilson shopped. I was walking down one of the aisles one day after school and there he stood, reading the label on one of the products and muttering to himself in that Cajun accent. "How Y'all Are?" ran through my head, but I didn't have the nerve to say it. I have "The Justin Wilson Cookbook" and dirty rice is one of my favorites. Thanks Kent and Shannon for posting this video, it sure brings back some awesome memories and great food.

Justin Wilson was a great American, and Kent Rollins keeps that spirit alive. Kent Rollins is a great American, and a good Christian man. Bless his heart, and pass the biscuits...

I can't wait to try this. My dad has cooked incredible Dirty Rice for years and I've never been able to get it right myself. This gives me hope. Thanks and blessings!
Justin Wilson, I knew this man. What an awesome person, I have sat with him for coffee and dinner several times. He was one of my favorite people. I had bought all of his standup comedy albums years before I met him. I can attest to the fact that the way you saw him in public was the way he was in private. He was always on.
I love your style of cooking. Cast iron, camp fires, old Bertha, the tent, the chuck wagon... I could go on and on all day, but seriously the thing that keeps the Rollins family in that special place in my heart is I always see Old Glory flying proud and how y'all tip your hats and pay tribute. God bless you both and keep the camp fires burnin!!
Yes! Love dirty rice and I'll bet you know how to make it best. I'm taking notes, never been able to like giblets and such, your substitute of chorizo is perfect for me. ❤️
This here is a man that makes you feel good with his cooking and his Christian family values. God bless you Kent! Keep on ringing that triangle bell and I'll be first in line Cooky!
I sure do miss Justin Wilson his was the best cooking show back in the day. I do love Dirty Rice and yours is a recipe I've got to try. God Bless and safe journeys to you and Shannon.
I miss justin , I think I have seen every episode he did at least 2 times. I am old school though, I like the giblets. I will be trying your version with the chorizo. God bless and thank you for remembering the veterans.
Yah gotta love his two assistant helpers under the table. That's what I call the well fed quality control crew. Lovin every minute of it and Justin Wilson got me started on the t.v. cooking shows. People in heaven are eating good I garaunteee.
Oh I don't feel DIRTY at all about that cowboy twist! Not a big fan of the gizzards and whatnot myself. And Justin Wilson was a legand, his accent was just pure smooth southern charm. Thanks for showcasing him for us here as well cowboy!
@@jackwyatt1218 he was known for his humor and storytelling, I'm sure he was putting it on a bit for the cameras. No way to really know if it was a fake accent though! I mean I was born in North Carolina, but I spent a fair bit of time growing up in South Africa at which point I did have a South African accent!
I’m almost 66 yrs old. My mother was Justin’s secretary and booking secretary in the 50’s. I met him when I was about 5-6, he scared me half to death speaking in Cajun. Justin was not born Cajun, but he mastered speaking Cajun and did quite well with it...
I make a great dirty rice. But I still watched this video twice now. I remember watching Justin Wilson when I was kid. My friends asked me why I watched cooking shows. Now my friends come by asking what I'm cooking. Love all of your videos !! Thanks for the recipes and memories.
I miss Justin Wilson, best safety engineer with a belt and suspenders chef of all time! I Guarantee! And no, nothing but love for you and the late great JW, no BS implied at all!
Tree hugging liberal here... love your style. This was a GREAT video! I grew up watching Justin Wilson too and this hit me in the heart. Keep up the great work! I gotta go eat, you made me hungry!
Like you, I grew up watching Justin Wilson. You did him proud today. The more people I have to cook for, the more fun it is. This would be a great dish to have when my wife and I open our restaurant!
There were times that all I had in the house was rice, spices, "Holy Trinity", and "el cheapo" ground meat. Dirty rice was literally a lifesaver. Hated it when I 1st had it. But when you ain't got much, you deal with what you got. Now, my wife'll tell you, I can't do any cajun meal without dirty rice (I leave out the livers as well. That's catfish bait). Got my wife hooked on dirty rice and mud bugs. But she still won't eat gizzards or andouille sausage.
You can't dislike this guy. Hes such a nice person.
Thank you for watching

I can't wait to try this. My dad has cooked incredible Dirty Rice for years and I've never been able to get it right myself. This gives me hope. Thanks and blessings!
Justin Wilson, I knew this man. What an awesome person, I have sat with him for coffee and dinner several times. He was one of my favorite people. I had bought all of his standup comedy albums years before I met him. I can attest to the fact that the way you saw him in public was the way he was in private. He was always on.
Great person he was, Thanks for watching
I did enjoy Justin Wilson. My dad liked him! A real character!
I sure like it
I like how you always have the colors in your shot.
Fly them with pride and honor
Amen, Kent, onion is probably THE most important ingredient for tasty food.
This recipe looks amazing. Need to try this sometime.
Onion is #1 among the most consumed veggies in the world.
This here is a man that makes you feel good with his cooking and his Christian family values. God bless you Kent! Keep on ringing that triangle bell and I'll be first in line Cooky!

He was actually from Indiana, I believe. He was a DOT guy.
@Tommy Peterson photoshopped!
Wilson was born in Roseland near Amite, in Tangipahoa Parish, in southeastern Louisiana.
@Angel Bulldog I am! Although I live across the boarder in TN now!
Two great cooks together- Justin Wilson and Kent Rollins. Can’t wait to try this dirty rice!
Thanks for watching and hope you enjoy
looks great as always, bless you and your family kent.
Thank you for watching and God bless you
We love what you do Kent! Keep the vids coming and the old country life!
I’m almost 66 yrs old. My mother was Justin’s secretary and booking secretary in the 50’s. I met him when I was about 5-6, he scared me half to death speaking in Cajun. Justin was not born Cajun, but he mastered speaking Cajun and did quite well with it...
Did he actually talk like that? Cause I heard he didn't
Your info is correct sir...
I make a great dirty rice. But I still watched this video twice now. I remember watching Justin Wilson when I was kid. My friends asked me why I watched cooking shows. Now my friends come by asking what I'm cooking. Love all of your videos !! Thanks for the recipes and memories.
Now i want to visit US for Cowboy Kent Rollins cookings
He is a national treasure.
Thank you for watching

Thanks for watching
From your fans at the Elk River Ranch in southeast Kansas! Woooohoooooo....giddyup partner!!!!
Like you, I grew up watching Justin Wilson. You did him proud today.
The more people I have to cook for, the more fun it is. This would be a great dish to have when my wife and I open our restaurant!
Oh wow. Im from Oklahoma too! All this time i thought you were from Texas. Great recipe btw.
Thank you for watching Alejandro and good to hear form another Okie
Justin Wilson was a great entertainer as well as a great chef.
For sure
There were times that all I had in the house was rice, spices, "Holy Trinity", and "el cheapo" ground meat. Dirty rice was literally a lifesaver. Hated it when I 1st had it. But when you ain't got much, you deal with what you got. Now, my wife'll tell you, I can't do any cajun meal without dirty rice (I leave out the livers as well. That's catfish bait). Got my wife hooked on dirty rice and mud bugs. But she still won't eat gizzards or andouille sausage.
This is a fantastic recipe for family reunions . Everyone should be able to have a serving. God Bless
For sure, God bless you as well
