    Just made this and it was freaking amazing, better than the best dirty rice I've ever had at a restaurant. Just used mild Tennessee pride instead of hot. Make sure everything is sitting near you ready to go, it goes fast and even though everything was sitting nearby I was hustling and ended up soaking with sweat, lol. For the leftovers tomorrow, I will throw in a bunch of grilled shrimp into it. Still amazed at how griddles cook just about anything you throw on it super good and tasty.

      I appreciate that...many asked why the chicken livers...most were tuned off by it...only thing I could think of was....in the old days many poor people got the scrapes or less attractive meat options...like the idea of slaves making chitlinens...its what they had and made the most of it....I would think that the livers are the same....any ideas

    You added the most important item. The chicken liver. Otherwise it’s what we call rice dressing! Perfect job from a Louisiana guy.

      Its not dirty rice without them. Try some authentic dirty rice and see if you like it. Its not as good without them, IMO.

    Looks good! I like to add bacon when I make dirty rice. I haven’t made it on the griddle but I think it’s going to happen in the future.

    Cajun rice has always been one of my favorites. Popeys mostly. They stopped carrying it. If you make a big batch do you think it would freeze in portions ok? Just curious. Great perspective by the way. Thanks for sharing

    This looks super good. What was the idea behind the chicken livers? For a little funkiness? One time visiting NYC I was at a somewhat fancy restaurant and one of their top selling sides was polenta topped with a chicken liver pate and it was delicious. I've tried incorporating them in the past, but I've not had a ton of success. Looks like a great recipe to try!

    I'm divided on this one. Can't do the livers. I use that for catfish bait around here. We sub in a little anchovies in these cases. I know it's not authentic, but it's good. Nice job, looks really good.

    Boss, you may have outdone yourself with this dish. Did I miss when the garlic went in? Good reason to watch again. You always say, " You do you" so I'd pass on the livers but that dish looks stupid good. 😋 👏 👏 👏

      Absolutely....when the meat and vegetable mixture was pushed to the side making way for the rice....I added the garlic and livers at the same time....

    Crazy that I don't like rice. Except for red beans & rice, and Gumbo. Native Texan, and don't at all care for Spanish or Mexican rice, and won't eat a "burrito" that has rice in it. However. This looks really good. Will be on the menu in mi casa soon.

    I am Cajun and from Louisiana. I do not like “traditional” dirty rice because it is too dry for my liking. I’d probably prefer this one to the traditional version. And yes, chicken liver is an acquired taste by itself. Cooked down in dishes such as this helps pull out some of the undesired flavors. Great job!!

    I've only had fried chicken livers and I really don't like them but what do they do for this dish? I'm asking because them being mixed in with all the other protein, do they add salt or fat or something else? Would this version of dirty rice be just as good without them?

      I honestly liked my other rice cooker...this has never disappointed me....but it takes longer....if I had to guess...I think it might cook the rice a little longer as well...BUT its bigger and im splitting hairs

    Being an Aussie, I don't get why it's called "dirty". I've seen other dishes called "dirty something". We have "dirty chai coffee" here. I don't get why it's called that, but I don't drink coffee. Apparently it's very popular!
    I would omit the bell peppers because they are disgusting. Don't like chicken livers at all (although I do like lamb liver, go figure!). However, that looked absolutely, 150% DIVINE!
    Between you, and 3 or 4 other cooking channels, I never have to worry about, what am I making for dinner tonight. I just look at a video or 2 and that's tomorrow night's dinner taken care of! This one is definitely going on the list because I absolutely love anything rice that's fried.

      I appreciate that...I would think the livers give the rice a dirty look or the idea that many people who like livers looked dirty...remember this is an old idea/recipe.....many poor people made fantastic food with what ever ingredients they had available or could afford

      The term “dirty” in this dish refers to using organ meat, the liver is a traditional protein for this meal. Your boudin “rice sausage” will also have liver in it.

      If it doesn’t have ground chicken or pork liver,, it ain’t even close to our South Louisiana dirty rice! Anything less is just rice with stuff mixed in it. Love your channel brother!!!

    Neal... Love your videos but you freak me out when you are diceing up stuff and you speed the video up. If I had a dollar for every time I have cut myself when diceing up onions and other stuff I could probably go out a make a good down payment on a 36" Blackstone griddle with the air fryers. I guess being a former Navy culinary chef you learn how to dice with out cutting yourself. I can only imagin how good this look. I'm a big fan of Popeye's but I don't think their Dirty Rice holds a candle to what you have just made. I'm originally from Lousiana but even down there it isn't as good as your recipe.
