I don't have much experience with the raspberry pi, but a gpio extension board seems to give you all the possibilities an arduino got. But I don't know how easy it is to programm it and how much tutorials are out there. Technically the raspberry pi should be able to do a lot more stuff then an arduino.

The expression pedal is the one with photovoltaic cell. It's kind of tradition to built an APC into an extremely odd object, it is basically a simple 555 timer circuit.
