Making Macaronia tou Fournou

- I've decided to share our family recipe of macaronia tou fournou, which is macaroni made in the oven, Greek style. The video gets quite interesting at the end, if your not interested in the actual making of the dish.... This is a favoured meal in our family and have enjoyed it for many years and hope my family will carry on the traditional recipe .....
Serves 8 Greek Cypriots
1 packet Macaroni
1kilo beef mince
1 haloumi grated
1 handful of chopped or dry parsley
2tbsp tomato purée
Cinnamon, pepper, salt, mint, to season
1/2 a glass of wine
3 chicken stock cubes
Oilive oil
White Sauce
200gr butter
200gr flour
4pts Milk
3 Eggs

Many people think the Greek food is too fattening and spicy, but they are mistaken. Greek food is extremely wholesome and healthy. And you only need a small portion to feel satisfied, because it is packed with wholesome ingredients, mostly of which are protien. It is a great beauty secret to eat Greek food.

Thanks for this video. My mum and Grandmother made it the opposite way with the mince at the bottom (vegetarian version too) and the macaroni and sauce on the top! Also we never put halloumi inside. Just anari or even parmesan on the top! Making this tonight!

looks absolutely delicious! I usually brown my flour in the butter a bit, before adding the milk, for flavour. thank you!
+thraciangrapes the reason my husband doesn't brown the roux is to keep the sauce as white as possible ... When he made white sauce in the restaurant he flavoured the milk with onion, bay leaf and cloves, whilst warming the the milk, before adding it to the roux ... xx
Andri Wow! thank you for the tip! As I was watching your husband make the white sauce, I was thinking how beautiful the sauce looks as white and creamy looking! Sometimes if the flour is too golden, the cream sauce is dingy and dark looking.
Looks yummy! Wish we could all have a bit over the internet lol! I will try your hubby's technique for adding warm milk to make the white sauce as I have always used cold milk off heat to avoid lumps. Thank you for making all this effort to share with us!😋X
+Lifeplasty it really is yummy, if I could share it I would ... When he made white sauce in the restaurant, he actually added a slice of onion with a bay leaf and cloves to milk and warmed it, then strained the milk and added it to the roux .. xx

Andri I wanted to make it today but I bought the wrong maceronni and I couldn't face goung out again so I made bolognbaise instead and will do this one next weekend. Thank you for the recipe.
YUMMY! Looks delish! Here in the States many chefs recommend adding freshly grated nutmeg to the white sauce...which you end up adding cinnamon at the end so I'm sure it's the same but I wonder if the nutmeg would pop a bit more. Just a thought....your family is adorable!

Hmmm it looks so yummy ! I have made Pastitsio before but I just made it with a regular macaroni. I don't think I can find this kind of Macaroni.

I have jotted down the recipe and I will try it. It does seem quite different to lasagne. I may reduce the amount of mint. I have a weird relationship with mint. Sometimes I like it, sometimes it seems too much for me!
I am certain, though, that I will be thrilled with this dish. It does look totally amazing.

This is not the way you do macaroni tou founou that's not your mums recipe the best thing is the white sauce
And you never put Olive Oil on the macronia

@@AndrisWorld actually I made my first attempt today. We always love mum's cooking but today went another level. It was the best version (if I do say so myself) that I've ever had! I used a ratio of 2 parts pork mince to 1 part beef. I'd only ever had this with pork before. I used a secret ingredient instead of tomatoes and puree. I just knew it would work. I also used Tesco's finest chicken stock to add to the boiling macaronia and used some of the water that was strained andcaded it to full fat Jersey milk when making the bechamel sauce / cream. I used halloumi on the boiled macaronia and mixed grated soft mozzarella and halloumi to the cream before putting in oven. Of course I used cinnamon powder, dried mint from our garden and fresh chopped parsley, salt and pepper. The secret ingredient was Harrissa paste. All done at 185c and 45 mins. Also I like a skin on top of the macaronia but if someone likes a slight crispiness then grate halloumi over the top before putting in the oven. 😀
