I'm a TC. My grandmother (rip) use to make it for me. Now every time my aunt comes visit us in the USA or I go back to Cyprus. She always make it for me. I was fortunate to find a GC owned restaurant that comes very close to my Grandmother and Aunt cooking.
I think the recipe varies slightly from village to village. I've been making it for 30 years no problem but when I look to see how others make it they all do something slightly different.
not the Cypriot way. In Greece and Italy, they use tomatoes in the mince, and they also use beef. In Cyprus, it's pork mince and we don't put tomatoes. The cheese is also different we use halloumi!!!
