    I love Greece, Greeks and also Greek cuisine. Every vacation in Greece was perfect. Corfu, Crete, Rhodos, Athen... Cyprus (I know but still...😅 ). After all this history with Corona I'll go to the next Greek Island again. 😎

      so many Greek islands to choose from, but I will always prefer Santorini, Crete & Rhodes :) will be visiting there again in the near future. Visiting the same islands can save me time to research on logistic :)

      Lefkada has some seriously good food in terms of spit-roasted everything. However, I find that St.George area (east side of Chalkidiki) has superior gyros and souvlaki. :D

    I ate sofrito at the Olive Tree restaurant in Corfu Town. A beautiful island, a town I am in love with, and a divine dish. Greetings from Serbia. I can't wait to be in Greece again.

    My wife and I visit Greece and the Greek Islands often and when back in the states we love watching Akis. When we are in Greece we always wonder does Akis have a restaurant? He is such a great chef.

    Delicious recipe! Corfu the Door of Venice ! The amazing island Corfu have been part of Venice during the Venetian rule from 1401 until 1797 , many Venetian-speaking families settled in Corfu during these centuries, they were called Corfiot Italians , so that region is a wonderful mix of culture.***Around 75% of modern Spanish vocabulary is derived from Latin ,Spanish is a part of the Ibero-Romance group of languages, which evolved from several dialects of Vulgar Latin in Iberia after the collapse of the Western Roman. *Nothing wrong with the name of the specific dish , it is in own original old form.

    Ok I just made this and WOW!!! I would never have thought to put lemon into beef like that and mind completely blown! This is insanely good, making it again. I will say it's the fact there is a well made video. If it was a recipe on paper, I would easily pass it by so well done on the cooking and the tutorials!! Thanks

    Same. The vinegar was a surprise that I will try tonight. I made similar stew last night and was planning on the American way of mash potatoes but will definitely try the Greek way.

    Made this the other day and I could not believe how delicious it was. We had some small children enjoy the meal, so we used pure apple juice as replacement of the white wine and was just as delicious! New sub. Thanks!

      Don't be afraid to use wine. The alcohol evaporates during the cooking process

    Made this today, what a wonderful dish. I had never heard of white balsamic vinegar. Our local stores don't carry it. Substituted white wine vinegar. It was so good, it hit all those flavors that we love so much.

    Hey man. I made your mousaka the other day and was so blown away I’ve already made it again. But this one didn’t work out. I don’t know what I did wrong. I got great cut of beef shin. Maybe too much wine or vinegar wasn’t right. Meat was tough and sauce way to watery and potatoes turned into a soup. Flavor was sort of sour, not meaty at all. It was simmering quite low but maybe temperature was too high. Such a pity I was so excited to try this recipe.

    Sofrito is a word that exists in most Latin languages as far as I know: Italian (soffritto) and very probably local Italian languages such as Venetian, Spanish (sofrito), Catalan (sofregit)... Maybe in other languages... In any case it relates to the action of slowly "under frying" (that is what it means) in a small or medium amount of fat (olive oil in general) the julienned elements that will be the basis of the dish, in particular onion, garlic, tomato, celery, carrot, leek, etc.
    What is funny here is that this recipe does not include really this "sofrito" process but goes directly to the stir frying of the meat and then deglazing. That shows how concepts and cooking techniques have evolved through time!
    In any case we can be proud to share the Mediterranean and its interconnected cuisines!
    Can it be more Mediterranean than olive oil, grape (wine, vinegar) and wheat (flour)?

      If u ever been to corfu the Italian renaissance can be noticed in the architecture of the main city so probably the recipe may indeed come from Italy

    Greek and Italian cuisine are superb but they are very badly represented abroad .For example you will never see that recipe in a Greek restaurant abroad as you will not see some Osso Bucco or scallopina alla Milanese in an Italian restaurant abroad ....but only tourist food (tzatziki, moussaka , pizza , pasta etc ...) . It is even worse for Mexican food , good luck to find a Mexican restaurant , only Tex Mex ones . Anyway , I will certainly try this one .

      King K Depends where! I was born and raised in Germany and there are many authentic Greek and Italian restaurants here, same in France or Switzerland, and London has amazing Italian food, too. Whereas I’ve had terrible Italian and Greek food in Greece and Italy in places that specifically cater to tourists...

    So, the recipe is amazing. Only one question: "soffritto" is another thing in italian cousin, is the base for "ragù" and a lot of other recipes, and consist in onions + celery + carrots cut with knife (no robot), is the same that in french cousing call "mirepoix". Your recipe in italian way (the recipe is a little bit different) is "spezzatino". Anyway love Corfù, beautiful island, with lovely and strong peolple

      this is my humble opinion, im from corfu and many years ago we had venetian occupation so we have a lot of latin words compared to the rest of greece, i think this recipe was called sofrito because corfiots took recipes from the venetians and changed them a bit. Its cooked with a lot of garlic which is fried with the meat. similar to your ragu or mirepoix, most greek/mediterranian dishes start this way.

      It's ok 70% of the Greek olive oil is exported to Italy anyway and they blend it with their own.

      it olive oil is the best for a lot of reason (selection of the trees, way to squuezing and other), but also greek oli is good

      You can try with whole or coarsely cut mushrooms in this kind of sauce, but reduce cooking time by a lot.

      Definitely with big chunks of mushrooms. Try to use different varieties for many textures in the stew.

    Is there a way to make this gluten-free? An alternative to wheat flour at the start for the browning and thickening? Corn flour? Rice flour?
