Can anyone tell us why we should de-bubble when there is or will be a much liquid in the jar during most of the pressure canning process? I ask because the jars are internally boiling like mad when removed from the canner so that - in my extensive experience - is a more than adequate de-bubbling. I am looking for good information as to why we should de-bubble in this type of situation, not just "because we always have" types of reasons. Thank you for sharing with us, Becky. I hope you are resting and enjoying your sweet baby as you recover.

My grandma says that putting salt locks the flavour. When you put salt while cooking veggies, is because you want the flavour to stay in the veggies. So you don't put salt on the broth because you want all the flavours to leave the veggies and go to the water.
Also: you leave pots simmering on the stove while you sleep?!
I am really surprised your kitchen does not have a pot filling spot above the stove with how nice your kitchen is. Maybe now that I have mentioned it your hubby will put one in for you lol.

How long is it safe for uncaned broth and chicken to sit on the counter?
Where is the Butch box meat sourced from? From farmers in the US? I’ve heard that the meat is exported in from other countries, and that’s not who I’m looking to support.
Their chicken and pork is from the US and Canada, 90% of their beef is from Australia and the rest is from the US
They make aluminum foil bags for the roaster oven…….makes clean up a breeze.

I watched several other homesteaders on UA-cam and when they're making chicken or beef bone broth they always add a little vinegar said it helps extract the goodness out of the bone into your broth
Also your onion skins that kind of golden brown color is very rich in vitamins and minerals

@@terrihart2133 You need salt. Some people need more than others. My daughter has to have a minimum of 10grams per day or her blood pressure drops to low. That's hard to do so she has to take salt pills.

I'm so proud of Becky! She's never afraid to cook outside the box so to speak. Trying things for first time is always risky, she shows me if it was a hit or miss so I can avoid food waste or taste fails. The fact she did videos ahead for her subs to enjoy , while she and baby are bonding and she is recovering from delivery is so kind and thoughtful. We are all going to be so excited to hear her birth story and see her back in the kitchen. Josh has been taking good care of her from what we see posted in Instagram... New Dad new Mommy your doing a great job!!

After getting all the bones out, you could toss them (and veggies, if you want) in a roasting pan and roast them nice and brown before cooking the broth. This will contribute to a deeper flavor and colour as well… 🤗💓💞💓💞💓💞💓

@@NancySutherland She posted on Instagram Stories that she had a few complications including High Blood Pressure and a Spinal Leak causing extreme pain headache plus had to be re-admitted to hospital after birth for additional 2 days due to complications. She has been re-released since & is home again. Plus there is a post under community tab of UA-cam channel mentioning complications were incurred…. She has not released birth story yet 😊

Becky, You didn’t show removing the neck and giblets from the turkey. You might want to add a note next time so newbies know to check the cavities. It’s a common mistake for new cooks. Love all your videos. When do you decide to freeze veggie scraps vs. feed them to the chickens?
Agree! Swore the neck was sticking out of that turkey when it was being seasoned too.
It was, but while transporting it from the roaster, she dropped it on the floor.

I think somehow Becky knew I needed this video! I'm off work the week after Christmas and already planned to do this very thing, a turkey and 3-4 chickens. I honestly prayed that I'd find a video just like this to watch for reassurance! I'm so glad it's an Acre Honestead video bc I trust Becky's methods. I enjoy all of your videos! I would love to know how many quarts and pints of meat and broth you got out of all of this.
People with parents who teach them these things are so lucky!! I’m 44 so it’s a little late for me but I so wish I grew up being taught all these amazing things. My house is small and I work full time so I just don’t see myself being able to do it, but I wish I could. It’s truly fascinating and impressive!!

Hi, I'm 44 as well and apart from a couple of recipes I didn't learn much about food from my Mum. She didn't particularly like cooking which was great when I was a teenager because I loved cooking and then I became terminally ill and cooking and baking was something I could focus on and cooking for my parents as I moved back home when it was medically dangerous to live alone. I can't eat a ,ot of food due to having only one metre of my intestine left after many surgeries over the years. I also have aspergers food traits and I don't like mixing ingredients but I've been trying new flavours over the past couple of years. Unfortunately both my parents ts passed away in the past three years and apart from everything else I miss cooking for them. I've found a lot if amazing recipes on UA-cam so I would recommend searching for a recipe and watching a few variations and make it how you like it. I've taught myself to make professional cake decorating from watching countless UA-cam videos. I'd like to grow fruit trees, vegetables, have chickens etc but my health has limited what I can do. I have faith that you will be able to do some of the things you would like to do. I hope that you have a lot of fun doing whatever you try. Xx

I really don't understand why you don't raw pack your poultry. So much easier and the meat is better quality.
Broth is best when done with uncooked bones. Once you roast the meat, any flavor from the bones has pretty much been extracted.
I had a bunch of buttermilk that I needed to use up a few days ago, and I thought I’m gonna pull a Becky and make a bunch of biscuits for the freezer! So thank you for that. 😂

We have a couple of places I can go to that are community surplus food sellers. I was able to get 100lbs of whole chicken for a steal! We parted out some of it, vacuum sealed and froze them. We also roasted up about 10 whole chickens, shredded and froze it as well. Having that precooked chicken is so handy! I love to combine it with fire roasted tomatoes, black beans and some seasonings for a quick and easy taco night. It’s also great to whip up a chicken chili on a cold night
Canning chicken is a HUGE plus! Soooooo many options. You are doing an amazing job for someone who is about to give birth. Nesting. Can't wait to see you and Josh with the new baby.
I was really blessed after Thanksgiving. 2 friends brought me their turkey carcasses and leftover turkey parts. SCORE! They know how much I love to can my own bone stock and broth. One even gave me a ham bone with LOTS of ham on it.

This is a issue for me nit washing the chicken or turkey.
It’s actually recommended by health organisations that you don’t wash poultry due to the increase risk of cross contamination

Becky, there’s no reason to fill the pot up to get the most bang for your buck. By not adding it and letting the broth concentrate, there’s less to can and store and when you’re going to cook, that’s when you add the water! 🤗👏👍🙌💓❤️💓❤️💓

Holy cow! Lololol…I did this the week of T’giving cuz turkeys were cheap and I had no freezer space. Roasted one a day and canned it up. ~whew~ Hope you’re doing good. 😊
A tip for keeping cleaned glass jars clean longer. Once they are clean and dried store them upside down on the shelf. Any dust will settle on the outside of the bottom and is easily wiped off if necessary. The inside is still pristnely clean. Works with glasses too.

I use it that way now, down and right back up, and it's weird feeling at first, but man, it actually cuts down time when you're peeling a lot!. Have you ever thought about having an aloe plant on your window sill in the kitchen for unexpected kitchen burns....ouch! So nice to just take a little cutting from the plant and compost the scrap after for that nice healing gel miracle! 😊

Why does it seems now a days everyone at least the folks I watch on youtube, let the water run when washing dishes instead of filling up one side with desired dishwashing liquid or powder they use, wash. Then if have double sinks fill other side of cleaned sink with hot water for rinsing the dishes, etc.? Especially if you live in the country and are on a well, saving water! Equally if on public water and pay a water bill, saving water!

FYI, The thing about seasoning stock as you go, is not being able to use it in feeding your child once giving the food you eat too. Salt and pepper not user friendly to toddlers eating same food as Mom and Dad, take the portions out before you season your meals for your child, because their little kidneys can not process those seasonings, especially the salt(sodium)! Take that in consideration once canning more towards time down the line when your child begins to eat people food.

Refrigerate the entire stockpot after you strain. Then ALL the fat comes to top, so the slow going with the fat separator is eliminated. One fell swoop. Then you also have the option to freeze that fat like people freeze bacon fat to use in cooking, etc. for flavor etc. If you do that or like to cook with the rendered fat.😊

Again, see the pkg in the one inside of the turkey? Why have you not taken that out? Also, that pkg added to water with celery and onion makes great stock to use for the stuffing broth and for gravy along with roasting juices.

meat has to be pressure canned if it isn't in a picle or acid so yes broth aswell. I've been looking into this coz we used to can and preserve a lot of things when I was a kid. Now living in uk they don't even know what canning is so i'm saving up to get a pressure canner shipped over. I already do water canning atm.
