Greek 7 Layer Dip and Mexican 7 Layer Dip Cups

- Greek 7 Layer Dip
1 medium long English Cucumber
1 cup of grape tomatoes cut in quarters
1 red onion diced (optional)
½ cup quartered kalamata olives
1 small container of Red Pepper hummus
¾ cup feta cheese
2 TBSPS finely chopped parsley
1 clove garlic minced fine
½ cup sour cream
½ cup Greek yogurt
1 tsp Italian seasoning
S & P
Juice of half a lemon
1 TBSP olive oil
Chop you long English cucumber, tomatoes, onion, and olives in to separate bowls or piles.
Mix together the sour cream and yogurt and add S&P, Italian seasoning and minced garlic.
Now you are ready to start layering.
First, into the bottom of a pyrex pie plate, a serving dish or 8” X 8” pan layer the hummus, then the sour cream mixture, then the cucumbers and tomatoes, then the olives and feta and finish off with parsley. Squeeze the juice of half a lemon over the top and then a drizzle of olive oil. Chill until ready to serve and then serve with roasted pita chips or toasted bagette.

Thanks you for the kind words! The Greek one is very refreshing. When I made this one I left all the seeds in one side of the cucumber. That was a bad idea as they wept I to the dip and made it a bit soggy. Still tastes delicious but its soupy after two days.

I’m making both of these! I love olives the Kalamata olives are so delicious we are anti humus in my house
I love both recipes but the Greek is my favorite. Next time I will remove all of rhe seeds from the cucumber though because left awhile the whole thing gets soggy.

The Greek one is great but moving forward I would recommend you remove all the seeds from the cucumber because it makes the mix a bit wet.

Hi Colleen. I know it is off topic but i wanted to ask i have been watching a lot of your videos and greatly enjoying them. I have had a terrible time making dill pickles in the summer. I saw your recipe and noticed it does not have allium in it. Are the pickles crunchy with this recipe? Mine have been so mushy on the two different recipes i tried. Thank you. Hello Angela, I don't use alum in my pickles and the refrigerator ones do get soft but I have very good luck with my regular pickles. I think I have a video on making them in my small batch canning tab. Cheers, Colleen
