QUICK REFRIGERATOR PICKLES I DILL PICKLES AND SWEET PICKLES

- Quick Refrigerator Dill Pickles
Enough cucumbers to fill a quart jar
About half a small onion slices
4 cloves of garlic
Bunch of dill
For the brine:
1 cup white vinegar
1 cup water
1 TBSP salt
Pack you jars with the cucumbers, onions, dill and garlic. Put the brine in a pot and stir. If the salt doesn’t dissolve put the pot on the stove and heat the brine stirring constantly until it does dissolve. Cool and then pour over the cucumbers in the jar. Add a seal and lid and refrigerate about a week before you start eating them.
Brine Recipe for the Sweet Mix Pickles
¼ cup brown sugar
1 cup white sugar
1 cup white vinegar
½ cup apple cider vinegar
½ cup water
1 ½ tsp mustard seeds
½ tsp celery seeds
½ tsp turmeric
1 tsp salt
Put this on the stove and stir until all the sugar and salt has dissolve. Allow to cool before adding to the cucumbers.

Hi Coleen.....10 minutes to put up some dill pickles...never knew how...my husband loves dill pickles...I grow a big garden...always eat them raw but this year we have been blessed with soooo many cucumbers I thought I'd try finding a recipe...THANK YOU FOR THE SIMPLICITY...I'm making these today!

@@kimwiscaver8686 yes, I haven't tried it but I use Splenda in baking and because its refrigerated it should be fine.
I have a bumper crop of cucumbers this year and have been making refrigerator garlic dill pickles and sharing with family & friends. I am the only one in my household that likes a sweet pickle so I'm very happy you have given the amounts for just a quart. I will definitely be making them today. Hi Colleen, I made your bread & butter pickles, only used 1/4 teaspoon salt and they are delicious. As my husband is of Ukrainian parents he knows about pickles and thought they were very good. We visited Canada about 10 years ago, traveled from Vancouver to Calgary, and then flew to Toronto for the big Ukrainian Festival there. Beautiful country and lovely people, also LOTS of trees. Many thanks, this recipe will be made often. In case you are interested, the temperature in Queensland today is 20C, at night it gets down to 6C and I am cold. Have a wonderful day.

It has been raining for days, not that we are complaining about rain because it is helping with the forest fires in Canada. Thanks for the recipes. I've done this a lot in the summer with home grown produce. Never thought to do it with items from the grocery store! Great idea. I'm 2 months away from fresh cucumbers!

My family so enjoys refrigerator pickled anything….we do what you’ve shown and we also enjoy making and having pickled string beans and just plain pickled red onions, radishes and even eggs as well! … most things wouldn’t last long enough to make it worth our while to can them…so we always just make batches of different things and marinate them for at least a week or two! …thanks for sharing

Loved your video. Just what I needed to pickle my watermellon dikon radish slices tonight. Picked enough for a jar from the garden today. Used your 1st basic brine with 1 Tbsp of wh. sugar, poured it on hot over radish slices & put the lid on. This is just like the recipe I use to refrigerate jalapeño or plobano or banana or pepperoncini peppers that I grow. Just couldn't find my recipe fast enough tonight. Now it's done & I can go to sleep. I thank you.

Oh! I didn’t know you could make quick dills too! I planted WAY too many cucumbers so will have to try these and I have dill as well. I already do the bread and butter ones so a variety is a great option! Thanks again. I really enjoy your channel!

As I was watching this, I was wondering to myself that you must be Canadian (Allen's vinegar) plus you said Calgary. I used to live there! Is it Lina's Italian Market that you visit? Great video!
looks good use bamboo chopsticks instead of knife. The knife causes micro cracking of the glass and if you were canning it over time glass jars can explode.

Hi Colleen I love pickles both bread snd butter and original Dill pickles it’s become almost impossible to find original dill pickles here in the states anymore only kosher and polish except for the hamburger dill chips taste like real dill pickles to me!! Are these two pickle recipes crispy pickles ?? You’d dill pickles recipe looks like it might be original dill pickles except for the garlic in them which I can omit !! Your pickles look yummy !! This brine recipe should work great for dilly green beans; or brocolli,cauliflower&carrot pieces to refrigerator pickle. Thank you for your wonderful instructions & recipes.

I make the bread n butter pickles.. I make a couple qts early morning, vacuum seal the jars and 8 hrs later they are ready to eat.. by vacuum sealing the jars I don't have to wait for days to eat them.. they also stay crunchy..

I have endeavoured on a search to find a pickle recipe that can replicate some of the tangyness (sic) pickles that a person comes across at the odd hamburger place, the ones you can feel in your jaw for lack of a better explanation. I have acquired all the canning supplies and tools since fall and during the winter have also picked up a fermenter if that is where a recipe leads. Just wondering if you may by chance have a recipe/process in you vast arsenal?

Hello Kevin Thank you for watching my videos and for your kind remarks. I can only guess at what you are talking about with the tangyness but suspect that the reaction may be because there are still companies that use alum to help keep their pickles crisp. A similar product is called pickle crisp. I don't have a big bunch of recipes for pickles but I am always open to trying a new recipe so I find them in cook books and online. Cheers, Colleen

This is a great recipe to have! I plan on using it as soon as possible because we have lots of cucumbers this year. My only question is, how long should you keep them in the refrigerator before you can actually start eating them as pickles instead of chilled cucumbers?
2 to 3 weeks is the best amount of time.
Okay I think those are great recipes I'm probably going to have to try it when I have more space now I have a couple questions how long do they have to stay in the refrigerator and can you take them out refrigerator after they been there for at least a week or do they have to stay in refrigerator all the time

I'm not sure, we usually eat them up pretty quickly but some have been in there for 3 months and were still great.

No bother at all. Honestly I reuse the brine. Just add more cut cucumbers to the brine, wait a week and you are good to go again. Cheers, Colleen
Can you use regular table salt and a pinch of bicarbonate (baking soda) to avoid clouding?
I haven't heard of doing that perhaps someone else has and can snswer. I use tablesalt for most canning and don't worry about the clouding. If I'm doing entries for rhe fair I make sure not to use table salt. Cheers, Colleen
Have you made freezer pickles my husband use to make tham I never got the recipe. Thay were like bread and butter but sliced very thin with onions. He put tham in cottage cheese containers and froze tham.

If you want kosher dills there is a pickling salt and spices in the canning section I got mine at Menards to pickle eggs.
Can you reuse the brine or is it best to get new
I reuse the brine a few times before replacing it with new.
