Hi, so happy to hear you enjoyed the video's. Yes, I just tip out the boiling water, give them a little shake and put in the hot chutney/relish. I don't dry them 😊

Onion or shallots are really the best substitute for the leek ☺️
How do you make the lovely looking chicken?
The chicken was just pan fried and I added some worcestershire sauce, wholegrain mustard and cream 😊
