The easiest & tastiest pasta recipe, perfect for busy weeks and so easy to meal prep!
Macros per serving (4 servings total)
401 Calories - 42g protein | 37g carbs | 9g fat
Ingredients (for 4 servings)
- 600g raw chicken breast cut into cubes
- 1 tbsp Garlic Powder
- 1 tbsp Paprika or Smoked Paprika
- 1 tbsp Parsley Flakes
- 1 tsp Chilli Flakes
- 1 tsp Salt
- 198g uncooked Penne Pasta (Roughly 440g cooked weight - 110g per serving)
- 200ml Skimmed Milk
- 100g light Cream Cheese (Brand: Philadelphia)
- 100ml Pasta Water
- 40g Shredded Mozzarella (Brand: Aldi Emporium)
- Garnish Chilli Flakes & Parsley

Evenly distribute into 4 servings & ENJOY!
Cooking instructions:
- Cook chicken on medium low heat for 6-8 mins (3-4 mins each side) till golden brown
- Cook pasta for 8 mins and remove 100ml of Pasta Water
- Turn down the heat completely when adding the milk and cream cheese. Let it thicken slowly then add the rest of the ingredients

In case somebody else wants to sneak in some veggies in there. Just throw in a bunch of spinach. It is super tasty. You will have to add a little more cheese or cook the sauce a little longer to get rid of the excess water.

Just made this, tasted great, I switched up the amounts a little though. Made enough for 5 meals by using 850grams of chicken breast and just estimated the amount of pasta needed.
I do something similar, but I also add low fat cottage cheese with the mozzarella cheese and sour cream. Thick creamy and lots protein!
I cooked it today (just used full fat milk), it was fire!

Just made this tonight and it’s fantastic! My kids (12 and 8) also loved it and wanted seconds!! I’m a pretty seasoned cook and this meal from beginning to end took about 45 to 50 minutes. I feel like this is a reasonably realistic timing for making the meal. Please also keep in mind that I had children interrupting me throughout the process lol. Definitely a keeper! I did 1lb chicken, standard tablespoons of all seasonings, don't bother with parsley it is useless, little less salt. 8oz penne pasta. At the end, before serving, just garnish with italian seasoning blend. Chef's kiss

Pro tip: if u add parmeggiano reggiano cheese, ull increase the protein intake quickly. It has no carbs and mainly protein. If it's too expensive, U may use parmesano (american version) but look at the m as macros to ensure it has no carbs. If ure in Europe, Grana cheese is another alternative (and cheaper)

It is real hard to keep these low fat sauces from breaking. I suggest only heat it at the bare minimum time. Last time I did it came out great. This time the sauce broke.

did you add enough pasta water to the sauce? it contains flour from the pasta that acts as a stabilizer for dairy-based sauces and prevents them from braking down

I have a texture issue when it comes to onions but I love the taste to it. Could I use onion powder as my alternative for actual onions?
Using onions just gives it a better taste in the end try cutting the onions bigger so then you can pick them out later when you serve yourself (my boyfriend method😂)

while this certainly looks good, I've been looking up the macros for some of the ingredients you list and cant see how you hit 401 calories per meal split.
That pasta alone, penne, the first box I found online was 200 calories per 56g, and you asked for 440g. When you do all the math using those numbers, the pasta alone is 392 calories per meal.

I tried this with the low-fat milk and it did not mix well.
The measurements you use make this more challenging if your from the U.S. unfortunately this didn’t come out so good for me. I also feel you must like things spicy because this uses quite a lot of chili flakes.
