Thanks for Sharing ❤️, just wish I had been raised vegan or known sooner!!! It's such a liberating feeling and so healthy ❤️ Was a bodybuilder in my younger days and ate a high protein diet (was so programmed to eat animal products). It caused me so many problems. Been vegan now about 6 years and vegetarian before that a few years.... so happy for the change!!!!!

OMG so I made them and they're sooo good!!! Instead of adding salt to the boiling water I added about a half tsp of "no chicken" vegan bouillon to put a little flavor in there(i think the bouillon had salt in it). Its good! and I realized I had a pizza cutter to slice the dough into 'fries', it worked perfectly. :)

I'm from Turkey and we also have tzatziki (we call it cacik) and I can recommend adding in a bit of mint (dried or finely cut fresh) and it takes it to a whole new level, you guys should try it!

    Hallo Derek and Crystal!
Thank you so much for another tasty recipe video! I´m Greek and I have some suggestions for the tzatziki portion of the video:
    1. You could grate the cucumber in a towel and squeeze the water out before adding it to the sauce to get a firmer end product.
    2. You could sub lemon juice with white or red wine vinegar.
    3. You could use a vegan greek style yogurt or a vegan skyr style yogurt to achieve the right consistency in your sauce.
I have been making vegan tzatziki this way for a long time and it is always delicious!
Sending you love and wishing you all the best!

This is so so similar to something we make in Sicily called “panelle”. It’s exactly the same process, but we also add parsley to them and cut them in squares to then dip fry them. We have them inside a soft bread roll with a spritz of fresh lemon juice and it’s amazing 🤩

Genoese panissa is just like what we see in the video: it's either eaten when the pudding solidifies, seasoned with oil, salt, pepper, and red onion. (served warm in winter, or at room temperature in summer). Or you chop it up into 'French fries' shapes which are then deep-fried. Traditional and widely available street food.

As a Greek, I'll offer a tip and some variations. First the tip. You are aiming for something thick, as you mentioned, then you should prep the cucumber to remove the extra moisture. Go ahead a grate the cuke just like you did, but into a separate bowl. Then season it well with salt, mix, and set aside. In about 10-15 mins, the salt will have drawn out a LOT of the liquid. Now, you can just use your hands and squeeze it or put in in a clean kitchen towel and squeeze well to remove the excess water. The second tip is to add about 1-2 T of olive oil, depending on how much you are making, and the olive oil thickens when in the fridge thickening your tsatziki.
The variations: flat leaf parsley or mint instead of the dill. They each give a different flavour, with the parsley being the 'freshest' taste, the mint giving a more elegant flavour and of course the dill you know about. However, my fav is with a little fresh basil... maybe 1-2 leaves...very very nice. I also like adding a drop or two of a hot sauce to just give it a little nip. Also, it needs time for the flavours to meld, so it should be chilled for at least an hour.
Hope you try the variations... Thanks for the fry recipe!!

I make falafel and tahini sauce on a frequent basis, but I've never used chickpea flour before. I think these fries would work well with falafel seasoning and honestly, this vegan tzatziki sounds way better than one made with plain Greek yogurt (of which I don't care for). Hello Dereck,
First and foremost, you two look adorable together and makes me happy to see such happiness together. Now on to the tzatziki sauce: I would recommend shred the cucumber on a kitchen towel first so you can squeeze out the water from the cucumber and then add it to your yogurt mixture. Otherwise your sauce will turn too watery …

Chickpea flour is so so versatile - I use it for béchamel, omelettes, pancakes and quiche filling. I have also seen people make Burmese tofu with it and the concept is pretty much the same as for you fries but you leave it at the cooled-down stage and then fry it or simply cube it for various dishes. Just a thought. If you have a Vitamix they makes a container that grinds flour from any grain or bean OR if you have a separate grain mill you can grind chick peas to make the flour over and over again without buying the flour. Obviously if you don't have either then using the store bought is the answer w/o investing big bucks in the other pieces of equipment. I use my large Duett 200 to make large batches of the flour that I keep in a monster jar in the freezer for whenever I need to make omelettes or potato gratin, etc.

Me too! But recently, because I am vegan for ethical reasons as well as for my health, I am sad to say I eliminated cashews entirely from my diet because they come almost exclusively from a part of Vietnam where slave labour is still used and the work is very labour intensive and in all good conscience I can't do it. I make vegan yoghurt too because I'm addicted to fiery vegan curries and that Almond Cow Machine which costs as much as those indispensible high power blenders was half price on Black Friday. Don't know if you are interested but almonds .... i leave the skins on the machine does the rest but soak them overnight not sure if that's necessary ... are naturally full of calcium no additives god knows I eat lots of tempheh and tofu so without trying to be self-righeous it tastes way better as a beverage and yes after soaking the skins come off reallly easily and I'm ok with the result for vegan yoghurt. Not sure you can get Forager brand in Canada. Things due to covid 19 are a bit weird now; I go to an Asian market and across the street a regular grocery store not bad but you never know. For anyone struggling with finances; the market I frequent leaves veggies still ok, mostly; they cost next to nothing and I use them for stock and soup. The only other thing I eat less of is avocadoes .... love guacamole but agree with gojiman that stuff on toast is sort of strange ... to me but once again; Mexico; drug cartels; Chile; wiped out all the local farmers and destroyed water resources. California eats its own produce which leaves South Africa. ..... What can you do?
And who can fail to love Simnett and his Crystal????? I have mild MS not a big deal; so glad can swim again still get an hour in with my dog but of course dream of being able to be as positive and fit as that loveable couple...... PS I tried a chickpea flour homemade bread with sunflower seeds I am NOT a baker didn't even have the right utensils just shaped it; essential irish soda bread it was brill. Will comment with recipe next time this was a too long comment!!!

I love to make these! Some things I add as flavouring sometimes is nutritional yeast, smoked paprika, miso. One batch that tasted great was using kimchi liquid as a substitute of some of the water.

Awesome recipe!! Traditionally, you add a little salt to grated cucumber and let it stand in a dish towel for a while to let the water out. Then you squeeze as much water out of the cucumber as possible. Then only add it to the yogurt mix. This way, you get a less watery tzaziki :)
