    What are the best parts of the Uighur cuisine here in China's far western Xinjiang region? There are so many, but if I had to distill it down to a "top 10" list, this is what I would say:
    1) *Uyghur Polo or 抓饭*: this is an amazing rice pilaf that is common all over Central Asia but is a specialty of the Uyghur people here in Xinjiang.
    2) *Laghman or 拉面*: a bowl of noodles - this is part of both the Uyghur cuisine and the Hui cuisine here - that has a concoction of meat and vegetables poured on top.
    3) *Lamb Kebabs or 烤肉*: delicious lamb meat on a stick. Need I say more?
    4) *Uyghur bread or 馕*: there are so many different kinds of Uyghur bread that you can find in Xinjiang, China. Try them all!
    5) *Uyghur Ice Cream or 维吾尔冰淇凌*: It's ice cream with a Uyghur twist :)
    6) *Samsa or 烤包子*: I think of this like a Uyghur "Hot Pocket". It's a baked snack that is filled with lamb meat and onions.
    7) *DaPanJi or 大盘鸡*: This literally translates to "Big Plate Chicken" and it's...well...a big plate of chicken! :)
    8) *Stuffed Lamb Intestine*: Don't knock it until you try it!
    9) *Matang or 麻糖*: a specialty Uyghur street snack that is a chewy
    mixture of nuts and seeds.
    10) *Xinjiang fruits*: Xinjiang produces more fruits than any other part of China and there's always something fresh to buy on the street.

      So true. If I went back to Xinjiang to see my old uighur friends today I'd put them at serious risk, if they had not already been detained. Back in the 90s their culture was already being destroyed by the CCP. I saw it daily in Kashgar and Urumqi.

      @@edwardsnowden8821 I assume you are Han Chinese. Please correct me if I'm wrong. Did you know that previous Chinese dynasties used to expel criminals from "Chinese land" by banishing them to "Dzungaria " as you call it? Where the great wall ends, China once ended. Also, mummies dated to 1, 800 BC that look like uighurs, not Chinese, were found in this region. Your claims of Dzungaria belonging to the PRC are false, historically inaccurate, and ideologically based. The PRC has no historical claim in Xinjiang. They only want the oil , gas, gold, minerals and other riches the area has to offer.

    Good list. I tried and enjoyed all of these on my trip.
    For anyone taking notes for a future trip, I always heard the "samsa" referred to as 烤包子 kǎo bāozi, as I was conducting almost all my conversations in Mandarin.

    o'bkah o'shai what we (Uyghur in Saudi Arabia) call the lamb intestine and lung. only first generation moved to Saudi are capable of doing it. Sadly, not many left from that generation.

    thanks for the video man! question: i plan on backpacking through this region with my girlfriend who is a vegetarian. no meat whatsosever. eggs and dairy yes. will it be difficult for her to eat lol ??!!

    THE SPICE OF XINJIANG
    • This special mix of spices is necessary for anybody who wants to try one of dishes originating from Xinjiang. All you need:
    • 30 g cumin
    • 1 tbsp chili flakes
    • 1 tbsp black pepper
    • ½ tbsp Sichuan pepper balls
    • ½ tbsp ginger powder
    • ½ tbsp garlic powder
    • ¾ tsp chili powder
    • ¾ tsp salt
    • Toast Szechuan peppercorns until fragrant. Toast cumin until lightly browned. Stir in remaining ingredients. Put Sichuan pepper balls, cumin seed, chili flakes and pepper and into spice grinder and mill to get the powder.

    Is November a good month to be there in Xinjiang...I mean the climate !

      It gets a little cold starting in late October, but that doesn't mean you shouldn't travel in November. Just be prepared.

    Uyghur Foods are almost delicious. Uyghurs have a Great History. We, all Turkic Nations understand each other very good without any translators.

    You done missed a LOT of things..... 炒面 黄面 凉皮子 烤羊腰子 架子肉 馕坑肉 烤全羊 薄皮包子 羊杂 糊辣羊蹄. And most importantly, hot 砖茶 on a hot day without AC while eating a hot ass bowl of noodle soup. Damn i miss them

      in fact they just call them in Chinese. Uyghur get a lot of word from Chinese and Russian.

      Urghur just get half population in Xinjiang,and they get nothing to do with Turkey,the Kazakh,Han Chinese , and Mongolian came here far before the Urghur,this land is never and ever be any kind of “-stan”. just check the history,plz
