What are the best parts of the Uighur cuisine here in China's far western Xinjiang region? There are so many, but if I had to distill it down to a "top 10" list, this is what I would say:
1) *Uyghur Polo or 抓饭*: this is an amazing rice pilaf that is common all over Central Asia but is a specialty of the Uyghur people here in Xinjiang.
2) *Laghman or 拉面*: a bowl of noodles - this is part of both the Uyghur cuisine and the Hui cuisine here - that has a concoction of meat and vegetables poured on top.
3) *Lamb Kebabs or 烤肉*: delicious lamb meat on a stick. Need I say more?
4) *Uyghur bread or 馕*: there are so many different kinds of Uyghur bread that you can find in Xinjiang, China. Try them all!
5) *Uyghur Ice Cream or 维吾尔冰淇凌*: It's ice cream with a Uyghur twist :)
6) *Samsa or 烤包子*: I think of this like a Uyghur "Hot Pocket". It's a baked snack that is filled with lamb meat and onions.
7) *DaPanJi or 大盘鸡*: This literally translates to "Big Plate Chicken" and it's...well...a big plate of chicken! :)
8) *Stuffed Lamb Intestine*: Don't knock it until you try it!
9) *Matang or 麻糖*: a specialty Uyghur street snack that is a chewy
mixture of nuts and seeds.
10) *Xinjiang fruits*: Xinjiang produces more fruits than any other part of China and there's always something fresh to buy on the street.

So true. If I went back to Xinjiang to see my old uighur friends today I'd put them at serious risk, if they had not already been detained. Back in the 90s their culture was already being destroyed by the CCP. I saw it daily in Kashgar and Urumqi.
@@edwardsnowden8821 I assume you are Han Chinese. Please correct me if I'm wrong. Did you know that previous Chinese dynasties used to expel criminals from "Chinese land" by banishing them to "Dzungaria " as you call it? Where the great wall ends, China once ended. Also, mummies dated to 1, 800 BC that look like uighurs, not Chinese, were found in this region. Your claims of Dzungaria belonging to the PRC are false, historically inaccurate, and ideologically based. The PRC has no historical claim in Xinjiang. They only want the oil , gas, gold, minerals and other riches the area has to offer.
@@edwardsnowden8821 so sad you want to make a slave of anyone. Haven't you and the uighurs suffered enough?
@@edwardsnowden8821 I'm sorry for your pain. Unfortunately causing pain for others is never the solution. BTW there are over 11 million uighurs in Xinjiang .
I‘m from Urumqi. Like your videos! And this one, makes me homesick!
Haha! Glad you enjoyed it!

Good list. I tried and enjoyed all of these on my trip.
For anyone taking notes for a future trip, I always heard the "samsa" referred to as 烤包子 kǎo bāozi, as I was conducting almost all my conversations in Mandarin.
Good point, Jason. Also, for anyone taking notes, you can download a free reference sheet that lists all of these foods in English, Mandarin and Uyghur --> www.farwestchina.com/2016/09/uyghur-food-best-xinjiang-recommendations.html Click on the "Download the Uyghur Food Guide" button.
Lovely food
Some pretty tasty looking items.
You should give them a try sometime, Scott!
o'bkah o'shai what we (Uyghur in Saudi Arabia) call the lamb intestine and lung. only first generation moved to Saudi are capable of doing it. Sadly, not many left from that generation.
Interesting! Thanks for sharing, Faisal.
Are you an uyghur ? Which city in ksa do you live now
Gotta come back and make videos mate
Been there too...awesome. Thank you for clarifying that Dapanji is a Hui or Chinese Muslim (Mandarin speaking Chinese Muslims) dish.
My pleasure! I'm glad you enjoyed it.
I'm going here next month with 10+ of my family member!! All of your videos are making me so excited, also my aunty makes some very delicious 'laghman,' except we pronounce is 'Lahmien'.
Great! I hope you have a wonderful trip with your family.
To clarify, the pronunciation "lahmien" is how the Han Chinese say it. The locals call it "laghman".
How about your trip? That is actually noodles in different kinds -- Gansu lamian is more my favorite.
I'm here in Boston. My friend called just now inviting me to his house cuz he made lamb intestines. Can't wait.
Haha! I hope it was as good as mine ;)
Nice
Interesting I didn’t know da pan ji is a hui dish, I’ve only ever tried it in Xinjiang restaurants but I’ll fix that soon!
Awesome! Glad you get to try the various dishes ;)

THE SPICE OF XINJIANG
• This special mix of spices is necessary for anybody who wants to try one of dishes originating from Xinjiang. All you need:
• 30 g cumin
• 1 tbsp chili flakes
• 1 tbsp black pepper
• ½ tbsp Sichuan pepper balls
• ½ tbsp ginger powder
• ½ tbsp garlic powder
• ¾ tsp chili powder
• ¾ tsp salt
• Toast Szechuan peppercorns until fragrant. Toast cumin until lightly browned. Stir in remaining ingredients. Put Sichuan pepper balls, cumin seed, chili flakes and pepper and into spice grinder and mill to get the powder.
Thanks for sharing, Darryl!
I would love to get a job here. Does anyone have tips? I have a tefl and taught English in Thailand a few years ago.
Right now it’s not possible to get a job in Xinjiang. Hopefully things change by this summer.

Is it expensive to travel there?what is the average price for commodities (in USD) in Xinjiang?
Trust me, it's really cheap!
Is November a good month to be there in Xinjiang...I mean the climate !
It gets a little cold starting in late October, but that doesn't mean you shouldn't travel in November. Just be prepared.
You can get a lot more information on climate and other important travel issues in the FarWestChina Xinjiang travel guide: www.xjtravelguide.com
Amin Ibni May to October is the best time to be there. I’m uyghur welcome to my hometown
could you do a video on what a typical xinjiang house is like?
That's a good idea! It might take some time, but I'll see what I can do :)
+Travel Xinjiang: Far West China thanks! i reckon it will be interesting
Do you speak and understand Uighur Josh?
i will visit xinjiang
hello, can you tell me how to get there from jiujiang?
I have no idea where Jiujiang is.

Fly from nanchang city .not sure if there’s any direct flights. But Wuhan definitely
Have tried some local dishes in Turkmenistan region and foods are not bad. For sure, Xinjiang foods can be good from watching this clip.
I'm glad you enjoyed it!
i like your videos but do China allow using UA-cam in Xinjiang? i'm surprised. isn't it forbidden?
UA-cam is currently blocked in China, yes.
How far the Xinjiang capital from Urumqi International Airport?
The airport is about 30 minutes from downtown Urumqi, which is the capital of Xinjiang.
Cold :)
Most delicious foods in this world
大盤雞 is my jam
Uyghur Foods are almost delicious. Uyghurs have a Great History. We, all Turkic Nations understand each other very good without any translators.
Awesome. So glad to hear it 😉
I, as a Turk, must say the Uyghur numbers and language are almost fully identical to the Turkish numbers. It´s unbelievable!
@杨健 that is what you hope.Uygurs are from our Turkic family and we still understand each other very well
I will visit Xinjiang soon❤️❤️ the great China.
Do they have Baklava?
No, unless you go to a Turkish import store.
为什么我要大半夜点开这个视频
哈哈!我也是馋死我了!
I am hungry.
Лагман😋
Great info, but... “weeee-ger”?
Can a Xinjiang native please correct this mispronunciation
😢🤲
You done missed a LOT of things..... 炒面 黄面 凉皮子 烤羊腰子 架子肉 馕坑肉 烤全羊 薄皮包子 羊杂 糊辣羊蹄. And most importantly, hot 砖茶 on a hot day without AC while eating a hot ass bowl of noodle soup. Damn i miss them
+Dalichuqiji Of course I did! That just means I have plenty of other videos I could do :-) Thanks for the suggestions!

Dan dan noodles
look at your hand when you said number "6“, I think you live in China too long, haha~
Haha ;)
Turkistan Timur
Bir uyghur bamu men girmanjäde bizde bech azrach uyghur Ba
its not just uyigur dish but SILKROAD (Centural asian) dish.
Some, yes. But a lot of what I'm showing here is specific to the Uyghur people of Xinjiang (who have their own versions of the Central Asian staples).
قوي+ئاش=قوياش، پولو
Excellent video and culture introduction . But you picked their chinese names . I think they re all different in uyghur language . Only nan was correct for bread
Polo? Kebab? How are these Chinese names?
in fact they just call them in Chinese. Uyghur get a lot of word from Chinese and Russian.
Doğu Türkistan ❤
"I'm a foremost expert"
Doesn't show him trying first dish.
"It's great, it has raisins in it or some stuff"
WELL OKAY 10/10 WOULD BANG THIS IS GARBAGE.
Hey Mark, thanks so much for your comment! After 10 years of living here I can assure you've I've tried each of these dishes plenty of times and I'm sorry I didn't have my camera out each time.
Oh, and for the record, that "expert" comment was dripping with sarcasm ;)
Original name is EAST TURKISTAN not xinjiang
please FK off thanks .
fuck yourself
but Turkey's original name is WEST XINJIANG.
Urghur just get half population in Xinjiang, and they get nothing to do with Turkey, the Kazakh,Han Chinese , and Mongolian came here far before the Urghur, this land is never and ever be any kind of “-stan”. just check the history, plz
Release people from camps ( prison)
never heard camps, camp only exist in west.
Alls fine! But unfortunately you calls my Motherland by chinese style - Xinjiang, that is wrong and uncorrect name. Freedom to Uighurstan!!!!!!!
I don't understand your language
你是新疆人吗?
no. it's name is xinjiang. the name u said is not exist at all.
Thes area belongs to uyghur people chiness occupied 1949 .
is your stupidity preventing you from differentiating between ethnicity and nationality?
And the other 46 nationalities? Can't they live in Xinjiang?
