    Ingredients
    round baking pan Ø 26cm/10inches (the measurement “cup” is always approx. information, as the original recipe is in grams)
    250g (2 ½ cups) grounded hazelnuts
    250g (2 cups) finely grated carrots
    5 eggs
    175g (⅔ cups + ¼ cup) cane sugar (you can use normal Sugar if you wish)
    1 package of baking powder (16g - 1tbsp + 2 tsp)
    2-3 tablespoons (tbsp) rum, orange juice or water
    Pinch of salt
    Toppings, two varieties
    1. Caster sugar
    A little bit of caster sugar
    2. Cream Cheese - Vanilla - Lemon -Topping
    100g ( ¼ cup + 3tbsp) butter room temperature
    200g (1cup) caster sugar
    1 package vanilla sugar (8g / 2 tsp)
    250g (1 cup) cream cheese, full fat (e.g. Philadelphia)
    1 tablespoon (tbsp) lemon juice
    Decorative carrots out of sugar or marzipan
    Instructions
    1. Peel carrots and grate them.
    2. Separate the eggs, beat the egg whites until stiff.
    3. Mix the egg yolk with the sugar and then mix in all the other ingredients except the beaten egg white.
    4. Now carefully fold in the beaten egg whites.
    5. Preheat the oven to 180°C / 350°F (160°C convection/fan oven, gas Mark 4) and bake for about 30 minutes.
    The cake tastes even better the next day when left over night.
    Instructions toppings
    1. Dust with icing sugar after it has cooled down or just before serving.
    2. Cream the room temperated butter with the vanilla sugar and caster sugar. Then mix in the lemon juice and the cream cheese until smooth. Do not stir too vigorously and for a long time, the cream can become liquid. Now chill the creme cheese vanilla topping for about 30 minutes. Then spread the cream with a cake spatula or similar on the cake and edge.
    Another option is an dark chocolate couverture (for this one I don't have a video), but also tastes great with the carrot cake.
    Decoration
    If you like, you can buy marzipan or sugar carrots for decoration and place them evenly on the cake.
