    This is the best version of carrot cake I've ever come across. The process of caramel making is demonstrated perfectly. Eventually it turned out to be the best cake I've ever made. Thanks a ton for sharing this treasure.

      @@aishas5071 You can adjust the quantity of sugar. Since the caramel adds a rich color and taste to the cake, I would suggest not to skip it. The use of the spice powders balances the sweetness as well.

    Best cake recipe ever..... I made small changes in sugar.... 1/4 cup for caramel making and half cup for cake and it's enough for us....

    Fantastic recipe. Turned out really great even though I used 1/4th cup sugar for caramel syrup and 1/2cup in the batter. I love carrot cake and this version was just as good with dates.

    I can't wait to try this with dates, but I think I'll switch out the cashews for lots of walnuts as they're my favorite.
    Let me share a happy accident you might want to try. I had oven roasted a pumpkin, mashed it with a hand blender and tried to make pumpkin pie, with a can of evaporated milk and spices. For some reason it didn't work well and I didn't know what I did wrong. I didn't want to waste it so I added flour, egg, coconut sugar (which I like better than brown sugar) and grated carrots to try to save it as a carrot cake thing.
    What turned out was like a beautiful thick cake/pudding, like texture. I added a caramel sauce to top and it reminded me of my grandma's christmas steamed carrot pudding which I don't have the recipe for.
    I say this because I'm going to make a mashup of your cake with roasted pumpkin.

    Hands down, this is one of the best carrot cake recipes out there. It's super moist and not too dense or crumbly. I would definitely recommend halving the quantity of sugar being powdered with the cloves, especially when using dates and carrots that are naturally on the sweeter side.

    I replaced the cup of white sugar with half a cup of brown sugar. It was still a litle too sweet to my taste, but it was moist and tasty. Thanks for the recipe!
    Update: This is so good and quite healthy that I've been making it every week. My youngest son absolutely loves it! I decided to completely omit the 1/2 cup additional brown sugar, so basically the cake is sweetened with 1/2 cup caramelized sugar and 6 pcs of mahjoul dates, which are extremely, naturally sweet, and it's perfect! 😋

    This cake is fabulous. It is soft and full of flavour. I did not add cloves nor nutmeg. I used one teaspoon of cinnamon powder, 1 teaspoon of fresh grated ginger, a quarter cup of chopped dates and a quarter cup of sultanas. Thanks for the recipe, it is one of my favourites now. God bless ❤

    This looks divine😋 I'm so glad you didn't put raisins in it or cover most of it in layers of cream cheese. I like to taste the true flavor of the carrot cake 🥕🎂. I would love to make this on a day when I'm feeling brave☺️

    Wow...never ever attempted carrot cake before because I really didn't like the idea of vegetables being used as ingredients for cakes...but after coming across this recipe, I realized I was wrong. This is definately going to be the next thing I make!! The ingredients which include those lovely spices and the caramel are really what got me going! Looks super delicious!

      ​@@lolo3ala217It was too sweet, but it was tasty and moist. I'm about to make it again, but will omit the syrup and reduce the sugar to 1/2 c brown sugar and 2 tbs white sugar. The dates I'm using are extremely sweet and moist..

    Super delicious! I reduced the amount of sugar because it was too much. Taste and texture is on point. The caramel takes it a step further. Will make it often!

    Just tried this and my family loved it. I gather this batch will finish in max 2 days!! ❤❤❤
    I did made couple of changes though:
    - used only 1/2 cup sugar (to be used as powdered sugar with cloves)
    - used about 3/4 cup of dates and cashews (combined) and a few chopped notes to garnish
    - also I used a square baking pan for baking in the oven (as sometimes loaf pans don't cook the cake evenly)

    I tried this recipe today and it turned out very nice, moist and delicious 😋 my family loved it so much ... but I exchanged the carrot with pumpkin puree as I had it in the freezer... it is super yummy and they enjoyed it although they don't like pumpkin in general 🙈

      @yaminikanumetta4397Preheat the oven for 10 mins at 180°C. You have to bake it in convection mode at 180°C. Time may vary from 35 mins to 50 mins.

    Loved this recipe!, very simple and was perfect for me cuz i wanted a small amount, the only thing I changed was the amount of sugar, added 1/2 a cup instead of a whole one and it was still pretty sweet bcz of the caramel

    This is an awesome recipe. The cake is moist and delicious. The spices add a depth of flavor to the cake. I increased the quantity of spices, used coconut sugar that further added to the caramelized flavor, reduced the sugar to 1/2 cup, and added walnuts instead of cashews. A tip - add really hot water to the caramelized sugar to avoid spluttering.

    I replaced
    white sugar with brown sugar & 1/2 cup of dates in place of 1/2 sugar (instead of 1 cup) I used only 1/2 cup sugar.
    In the dry fruits blend i add raisins & mixed nuts.
    1/2 cup all purpose flour & 1/2 cup whole wheat flour.
    2 tbsp buckwheat (trying to use less all purpose flour as I'm pre-diabetic.
    Did the cake twice ..it's very good.

    Carrot and banana loaf are my favorites
    made this today and tweek the dates and cashews by blending it into puree, adding a bit more almond coconut flour. Overall, deliciously yummy
    Used coconut sugar to make the caramel sauce
    And substitute eggs for ground flaxseed with the other ingredients indicated
    #vegan style

      Of course it ya fanny, the more people who know about subsidising natural ingredients instead if they’re no happy is all the better, but shut up and buy a supermarket one instead if ur no happy. home cooks adjust and adapt, I love this cake.

    Itss Sooooo goood😋
    (Note:i skipped cloves and the powders like nutmeg powder,cinnamon powder,ginger powder.
    And reduced one cup sugar to half cup.
    And its just turned perfectly fine and delicious)

    this is the best recipe ever i have made this with coconut amazing i also made it with carrots and rum soaked raisins and lots of fresh ginger and even left in the cloves so spicy so soft so moist and delicious my go to recipe for cupcakes now thank you

      I powdered it using mixer grinder. You can use the ground cloves instead of whole cloves. 🥰

    Ok, so I'm late to the party but these are so moist and delicious. Made a few adjustments - 3/4 cup sugar and 1/2 cup oil and it came out amazing.

    This is amazing i did try it with some twest.. 😘
    I have two suggestions to mack it better.. The carrots mix it in befor the dates and nuts. The nust shownd be folded in and not mixed to much or all the flour coting will go in the batter and they will sink to the bottom any way.. Little folding will keep them suspended in the batter. 😊
