Fantastic recipe. Turned out really great even though I used 1/4th cup sugar for caramel syrup and 1/2cup in the batter. I love carrot cake and this version was just as good with dates.
I can't wait to try this with dates, but I think I'll switch out the cashews for lots of walnuts as they're my favorite. Let me share a happy accident you might want to try. I had oven roasted a pumpkin, mashed it with a hand blender and tried to make pumpkin pie, with a can of evaporated milk and spices. For some reason it didn't work well and I didn't know what I did wrong. I didn't want to waste it so I added flour, egg, coconut sugar (which I like better than brown sugar) and grated carrots to try to save it as a carrot cake thing. What turned out was like a beautiful thick cake/pudding, like texture. I added a caramel sauce to top and it reminded me of my grandma's christmas steamed carrot pudding which I don't have the recipe for. I say this because I'm going to make a mashup of your cake with roasted pumpkin. Thanks so much. 💥🎁💥
Hands down, this is one of the best carrot cake recipes out there. It's super moist and not too dense or crumbly. I would definitely recommend halving the quantity of sugar being powdered with the cloves, especially when using dates and carrots that are naturally on the sweeter side.

I replaced the cup of white sugar with half a cup of brown sugar. It was still a litle too sweet to my taste, but it was moist and tasty. Thanks for the recipe! Update: This is so good and quite healthy that I've been making it every week. My youngest son absolutely loves it! I decided to completely omit the 1/2 cup additional brown sugar, so basically the cake is sweetened with 1/2 cup caramelized sugar and 6 pcs of mahjoul dates, which are extremely, naturally sweet, and it's perfect! 😋

This cake is fabulous. It is soft and full of flavour. I did not add cloves nor nutmeg. I used one teaspoon of cinnamon powder, 1 teaspoon of fresh grated ginger, a quarter cup of chopped dates and a quarter cup of sultanas. Thanks for the recipe, it is one of my favourites now. God bless ❤

I gather this batch will finish in max 2 days!! ❤❤❤ I did made couple of changes though: - used only 1/2 cup sugar (to be used as powdered sugar with cloves) - used about 3/4 cup of dates and cashews (combined) and a few chopped notes to garnish - also I used a square baking pan for baking in the oven (as sometimes loaf pans don't cook the cake evenly)

Loved this recipe!, very simple and was perfect for me cuz i wanted a small amount, the only thing I changed was the amount of sugar, added 1/2 a cup instead of a whole one and it was still pretty sweet bcz of the caramel
This is an awesome recipe. The cake is moist and delicious. The spices add a depth of flavor to the cake. I increased the quantity of spices, used coconut sugar that further added to the caramelized flavor, reduced the sugar to 1/2 cup, and added walnuts instead of cashews. A tip - add really hot water to the caramelized sugar to avoid spluttering.
I replaced white sugar with brown sugar & 1/2 cup of dates in place of 1/2 sugar (instead of 1 cup) I used only 1/2 cup sugar. In the dry fruits blend i add raisins & mixed nuts. 1/2 cup all purpose flour & 1/2 cup whole wheat flour. 2 tbsp buckwheat (trying to use less all purpose flour as I'm pre-diabetic. Did the cake twice ..it's very good.

Overall, deliciously yummy Used coconut sugar to make the caramel sauce And substitute eggs for ground flaxseed with the other ingredients indicated #vegan style

This is amazing i did try it with some twest.. 😘 I have two suggestions to mack it better.. The carrots mix it in befor the dates and nuts. The nust shownd be folded in and not mixed to much or all the flour coting will go in the batter and they will sink to the bottom any way.. Little folding will keep them suspended in the batter. 😊

@yaminikanumetta4397Preheat the oven for 10 mins at 180°C. You have to bake it in convection mode at 180°C. Time may vary from 35 mins to 50 mins.

I wil surely trying it by adding some coconuts & redusing half the sugar & some whipped cream when its cold... Definitely i dont use a spoon to eat it, a fork will make all the difference to me! 😜 Thanks for sharing my friend ❣️

I powdered it using mixer grinder. You can use the ground cloves instead of whole cloves. 🥰

I have two suggestions to mack it better.. The carrots mix it in befor the dates and nuts. The nust shownd be folded in and not mixed to much or all the flour coting will go in the batter and they will sink to the bottom any way.. Little folding will keep them suspended in the batter. 😊
