  • Homemade cornstarch with yellow corn from scratch.
    What you need:
    - corn (white, yellow, or red corn).
    - blender or milling machine or food processor
    - cheesecloth or any fine-pored cloth material

      A lot of languages don't have a word equivalent to "it" in English, so many English language learners don't use the word "it" much. They'll use "this" instead.

      If you blend the corn directly without soaking it, you're going to get cornmeal. Thanks for watching

      You can use any other corn for making cornstarch but I haven't tried it with popcorn before

    Can I wash the maize clean, dry it and take to the flour Miller at the shopping center.... Then I come home soak the flour, sieve it following your video instructions until I get the cornstarch?
    Will this procedure work? No blender, no electricity at home

      Yes that will work, that's how we do it in the village too.
      Procedure:
      -We wash and soak the dried maize first for 1 day.
      -Remove from the soaking liquid to the grinding mill.
      -Grind into really smooth paste.
      -Strain the ground paste with a fine mesh or cheesecloth to get that really smooth starch (discard the chaff).
      -Leave the starch to settle in bowl for a couple of hours.
      -Dry the starch in the sun until crispy dried.
      -Break the starch with morter and pestle to get smooth powder.
      -Store in a container.

      Oh.... But the posho mill does not grind wet maize. It grinds dry maize to powder. Once you take the maize powder home you can cook porridge or cornmeal(ugali). So my question was can I soak this cornflour in water and follow your method to make cornstarch?

      Dried corn is better but you can also use semi dried corn

      If the pap flour was made using corn alone, then they are the same. However, pap is made often by combining different cereals which may affect the texture and color. Other than this, cornflour and pap are the same if and only if the pap was made with just corn.

    Hello! …. Has the corn been sun dried ? - I’m a city tenderfoot and all corn I see is wet store bought corn.

      Yes the corn is sun dried. I haven't tried it yet with wet corn but I think it will still work since it's the starch you are looking for and wet corn has starch too.

    I tried this but when I dried the chaff, it didn't turn white. It's still yellow. Can I still use it?

      It's not the chaff you use, it's the starch you need to sediment before drying.

      No you won't, you will end up with corn meal

      Yes only the water, the starch will settle at the bottom of the water.

    But if you soak for 2 days, its just same process of making pap/ akamu because its already fermented, in other words, this is akamu powder

      I actually made it clear in the video by saying overnight. Some corn can be very tough no matter what you do to it water won't penetrate into the endosperm; the only solution to this is to leave it longer in water for it to absorb water (from experience).
      I said if your corn is very hard you need to soak it for an extra day to make it easy for your blender to break them.. I never said you should ferment your corn or soak it like akamu. Hope you get it?

      The color is not in the endosperm but the chaff that was discarded. It's not magic it is logic.
