Is that a stock tank on that customer's CB 750 ? Really like the style and paint job ! What style handle bars are those and is that bike considered a Cafe style bike , a custom , or bobber ? I like it whatever it is !

Shop looks great. Projects are cool (the cx500 fan restomod is extra good). Sorry to hear that cycle salvage is going OOB. Sounds like an awesome challenge!
I have a 1982 Honda silver wing interstate 500. Well I had it apart to put a stater in it, and the fan looked the exact same as that one, but I'm a dummy and ran it, well got maybe 20 miles on my test ride, and BANG!!!! something came out and hit my legs. Got stopped and shut it down. That's what it was, the fan COMPLETELY blew into dust. Only thing left was the center on the shaft. Got lucky enough it didn't put a hole in my rad, and rode it home, but I I got lucky.
Lucky it was a cool day, and the stater, actually was working great, charged the battery, and the temp gauge works, I went about halfway and stopped 20 minutes and then home. But since I put a n electric fan on, and no problems. Good running, and fun riding little bike.
Didn't Robert Pirsig do his zen ride on a Honda CB360 twin? Two carbs and one coil will be half the work of a CB350F. They are not particularly sought after so might have a few carcases 😮 you could use to cobble together a tribute ice cream trip. Seth, as a younger guy, might dig the zen "perfection" vibe all anew.
Im currently reading that and still not sure what the exact model is lol. Still two coils for the twins though. Good idea regardless as were very familiar with those engines and they are super common

That's a nice start BUT check out this guy "nononsenseknowhow", he flies to Vegas with the wife & dog, buys some crap that has been sitting for decades and is not running, has next to no tools (how much can you take on a plane with you) and attempts to fix the car where it is (no trailering to the comfort of a nice workshop stocked with part and tools) with the goal to drive the family back home 2000+ miles to NJ in it. Nuts, but he has done it multiple times and UA-cam the whole thing. rsm8

What a great idea. I've never done Instagram ... but this might be a good reason to start. Air cooled for the win. It'll be hard for you guys not to bring back a couple more CB750s. Then again, maybe the black engined last 8 valve models, if they have them. I'm more a Suzuki GS guy so if be in for GS750 but expect to replace stator and regrec unit. Super easy fix, fantastic engine AND chassis. Good luck guys. I'm stoked for your both.

I would like to update, I didn't get the bike that I wanted to fix up, but I can probably find a more desirable one anyways. Lol

Well "best" is subjective really. I think you need to decide what style you like as far as engine layout. Single, vtwin, parallel twin, inline 4, etc.
