Big Santa Fe Weightloss Salad | How I lost 30 Pounds in 90 Days
Вставка

- The last 12 months of quarantining have resulted in some undesired weight gain for me. So now I'm getting back into the habit of eating these BIG salads every day to get back down to my comfortable weight. This salad is a riff on my original Big Salad that I used to lose 30 pounds in 90 days. To be clear, this is a BIG salad. It's a whole meal. And it'll take you at least 40 minutes to eat the whole thing! Staying full while still losing weight is honestly the best feeling in the world. This salad comes together in about 5 minutes thanks to my weekly meal prep! Whether you follow a vegan / nutritarian diet or just enjoy a big salad from time to time, this is a great base to build on.

How’ve you been coping this last year? What healthier recipes have you been enjoying?
Lately I have been sticking to: -Chickpea black bean whole wheat burritos
-Kale apple salad
-Stir fried vegetables with brown rice
I am curious to try your recipes
@@lcurry5894 Yum will you share your recipes for these items you listed? They sound incredible!!!
When I’m stressed I’ll go for snacking. Pita chips, carrots and hummus, any small salty bite size mindless eating. Satisfying but pretty horrible. Puts on the pounds, too much salt, making eyes puffy after sleepless nights. Now I’m fully vaccinated! Trying to get some discipline back. I found the air fryer nice tool for string beans, cauliflower, sweet potato sticks. Monitor oil and salt 👍 still get satisfying crunch. Now checking out salads. That cilantro lime dressing looks fab haven’t made it yet but look forward to it. Be well.
I didn't gain weight due to COVID but did quit those horrible addictive ECIGS and gained 12 lbs. I have been the same weight my whole life and now that I am older its harder to lose so I want to eat more salads. Thanks for the recipe.
Yes more salad and salad dressing recipes please this looks delicious and healthy!
I love the tip for using chickpeas, instead of cashews! 🙂👍🏻
I'm over 60 days of the 90 days of the salad diet & the weight seemed to come off slowly. I thought I was so heavy that I haven't weighed myself bc I wanted to stay upbeat. I have come to appreciate it's not about the weight, though. I am really off of food as marketed product which is a blessing. It's hard to tease me with fat/sugar/bread these days. I believe that I will be down 30 in the remaining 25 days as I can see my body becoming it's real self again. Bless you, Geoff!! Your unpreachy approach really hooked me and got me to change.
Yes more healthy salads please and congratulations on your weight loss on the nutra diet! That’s how I actually found you ,searched Nutratarian food prep. 👍🏼
Yes please for more salad recipes. My mind always goes blank with what to make.
More to come! Releasing healthy recipes every Monday (and indulgent recipes on Wednesday).
With the thousands of recipes out there how can you go blank?
I’m so excited you made another salad video. My sister just shared your channel with me yesterday because I love plant-based cooking and eating. Please make more more more! I’d love to see you make some soups and stews too! I can’t say enough good things about The Healthspan Solution cookbook by the way. Very aligned with Nutritarian eating and such tasty recipes!

The cutter idea is pure genius! Can't wait to try that on my next salad.
U r the one I have been looking for. 😀

Great energy
Oooh this looks good, normally salad recipes are boring to me but that dressing looks sooo good I'll have to try it
Good dressings make salad fun to eat rather than a chore 🤣 Planning to do an Italian-themed salad this weekend, so more salad ideas coming soon!
Really like your salads. ...
Since you have been inspiring me to bake more, I’m really appreciative to see this salad recipe. And, there is no unreasonable quantity of cilantro - I love it. Also, my husband is dairy free (and gluten free, ugh, but I love him) so the chickpeas base of this is perfect. Looking forward to trying it this week.
Hooray! Glad you’ll get some use out of this salad recipe 😊
Looks delish!
Just discovered you today and I have to say that I'm inspired. Can't wait to shop tomorrow for ingredients and to get started. What do you do to avoid the happy hour wine time?
I appreciate this and hope you'll make different flavors of salads akin go this one. I got into great shape in the autumn and backslid a bit in the holiday season. Back at it now, so it's great to see ideas for interesting preparations. Would love to see a nice Italian salad from you if you're taking requests.
An Italian-style big salad is a great idea! I’ll try out some options and share my favorite soon! Thanks for the recommendation 😊
This looks amazing! I am a big fan of salads! And that dressing is so simple. For some reason, I've alwa7s been hesitant to make my own dressing, but you make it look so easy. I will be trying this, and I just subscribed to your channel.
Welcome to the channel! Homemade dressings felt intimidating to me at first too. Once you get comfortable making them, you’ll never go back to store-bought 😊
Love your salad
I love your salad. The dressing looks delicious too. Very different from oil and vinegar like I usually have. I also like that you cut all the vegetables up in very small pieces. It to me, makes it much more appetizing. I’m going to try it not so much to lose weight, because I’m good right now. But because it’s really a lovely looking salad and that and the dressing look very nutritious. Thank you for the recipe.
Great salad!
YUM!!!!!!!! Thank you.
Hi Geoffrey
Try pan frying your pine nuts in a fry pan until they start to brown. Nothing is put in fry pan. Watch as they will brown fast. They will enhance your salad a ton. Enjoy.
Love your channel and recipes. You’re adorable!
Oh I love this. Just subscribed. Love to get the covid weight off. Love to see salads and other satisfying meals that are a bit lighter in calories. 👍
This salad looks amazing- I’ll definitely be trying out that dressing soon! And Cholula hot sauce makes everything better😃
I can only find original Cholula around me, but they have a chipotle and a like version which are also really good.
I'm really enjoying your channel! You have great ideas, inspiration, & you're also really handsome. Thanks!
I love salad content 😎🥗
I want to try this salad
More salad ideas please!!
Hi Jeffrey I hope you are well love your video’s especially salad I’m struggling
LOVE Cilantro! The more the merrier!
Same! I even add it to my fresh green vegetable juice -- it's so fresh / clean tasting. I feel bad for the people who taste soap; they're missing out.
👏👏👏salads 🥗🥗🥗🥗🥗more ideas of salads please !!!!!!
Thank you for your wonderful videos! I have started to eat one large salad per day. Also, I wanted to let you know about a food chopper called King Kutter. I bought one used a year ago and I think you would love it. There are youtube videos of the King Kutter food chopper.
Thanks for watching! I’ll check out King Kutter! I’m always looking for a gadget to make prep work a bit easier 😄
Yes!! Would love more salad ideas. I am in a complete salad rut. Eat the same two for years and the bagged salad just don’t appeal to me. I am trying to learn to eat nutritarian.
I agree! Those bagged salads usually have at least one thing I don’t want. And they’re so expensive and not big enough🤣 Looking forward to sharing more big salad ideas!
Love it
Loved it the thing I liked about it that it was affordable thank you🤑🤑🤑
Like your videos!!
Love this and it’s vegetarian! More more more
We miss your videos! 😭😭😭
I attempt to maintain my weight with big salads with a simple EVOO and balsamic vinegar.
I used my garden greens until late December. Leaf lettuces and arugula. As a vegetarian, I use fresh mozzarella and fruit in my salads. I’m also into baked Japanese sweet potatoes, dates, berries, shallots, and freshly toasted pecans. I throw it all into a bowl, but mix my dressing with the shallots and cheese and let it sit until the veggies and fruit are prepped. I add fresh pineapple if I have any, but pear, apple, and fresh clementines work.
While I love English cucumbers as a snack, I typically don’t put them into my salad, nor do I include my amazing tomatoes. Just my preference.
Having your own freshly grown garden greens must be a treat! Your salad sounds wonderful -- I'm a big fan of fruits on salads! (I think this may be a controversial opinion -- like pineapple on pizza). Thanks for sharing 😄
this looks so good! how long does the dressing last in the fridge do you think?
I try to use it within 4 days. I'm not sure what the "official" safe-by date is, but when I worked in restaurants, many prepared foods like dressings, etc. had a 3-4 day shelf life.
Hello, you don't know how glad I am to have found your channel and your fantastic salads and preparations. I was very excited about dresing chickpeas. I have a question, what is the size of the can of chickpeas? oh I have subscribed.
The can is 15.5oz / 439g.
I love how quickly you make the salad by having your ingredients prepped ahead of time, but I worry about the loss of nutrients from them being cut up. How long do you expect them to keep? I saw in your other video that you prep once a week. So they are o.k. after 6 days? Do you do anything special to keep them fresh?
I just found your channel. I am going to get groceries to tomorrow morning and I definitely need to loose 10 pounds minimum. 15 pounds maximum.
Welcome! Best wishes on your eating program! I'll keep these big salad recipes coming -- hope they help 😄
Just know that you have to make this a lifestyle to keep the weight off.
Cilantro tastes like soap to me, do you recommend a replacement in the dressing, maybe parsley? Oh and I love my OXO bowl and chopper! I've had it for a couple of years, and it is such a time saver!!
I’m obsessed with the oxo salad bowl! Parsley would be a good substitute for cilantro - you’ll want to dial the quantity back slightly since parsley is a bit harsher. Mint would also be a nice option (either alone or with the parsley).
That is such an interesting genetic marker. lol On my 23 and me it says likely to have an aversion to Cilantro but I definitely don't I love it.
the beans - I thought he was pouring chocolate covered raisins all over it LOL Was horrified at first, and then horrified at myself for immediately seeing candy lol 🍨🍩🍪🍰🍬🍭😳🥴🤪🤡
Chocolate covered raisins would be ... interesting 🤣
This looks great! What about fruit?
I usually only eat fruit in smoothies. Though I do like dried cherries and cranberries as salad toppings sometimes!
Thank you Geoffrey. I just watched your video from 1 January 2020 and wondered how sustainable that WOE was. May I ask, have you regained the 30lbs you lost?
I think under normal circumstances this would be sustainable. But throughout the pandemic, I’ve been struggling to eat this way consistently (e.g.: ordering more takeout to help the restaurant workers, and miscellaneous comfort foods to make myself feel better) and have gained back 15-20 pounds. I’m really frustrated right now, but trying to get back on track.
how many of these salads do you eat per day? 2?
try frozen Trader Joe corn- very sweet
Please make me a copycat Panera southwest salad. They’re my favorite & I’m struggling to find a good copycat recipe. Thanks!!
Do you eat anything for breakfast or just the salads?
I have this green smoothie most mornings (ua-cam.com/video/UOZYejxGr1A/v-deo.html). Sometimes I’ll switch with a carrot ginger smoothie (video in my healthy eating playlist).
Please list the recipes in your comments , thanks so much!
Added the dressing recipe to the description box 😄
You're awesome dressing recipes have spoiled me for store-bought. I mean, why pay so much for junk ingredients like soybean oil when you can have fresh, healthy & tasty home-made?!
Love to hear that -- thank you! 😄
What kind f mandolin slice do you use?
I'm not sure the brand, but I have it linked in the description box. I've had it a few years and am quite happy with it!
Does the dressing keep for a week?
I generally try to use it within 4-5 days (which is easy to do with how many salads I eat). It'll probably last for longer, but I don't have a way to test for safety, so I am overly cautious.
How many calories????
I would love if you would try to copy cat Amy's Kitchen entrees like the enchiladas. I can't find anything like them and I would rather eat those than at Chipotle lol, but they are expensive and contain oil.
Good idea! I love enchiladas -- never tried Amy's though. I'll come up with something 😄
do you eat only one big salad per day and nothing else? Just trying to understand how many calories per day you eat.
2 big salads plus a green smoothie every day. It’s 1800 to 2000 calories a day based on what I eat. But depending on you needs you can eat more or less. The goal is to eat veg until your full. The Eat to Live way of eating doesn’t mandate calorie counting.
So this is the only thing you ate once a day for 90 days ?
2 big salads per day plus a green smoothie. All the details here: ua-cam.com/video/keyJuUP6w_k/v-deo.html
I would think that you would eat double or triple the amount of salad that you eat in one sitting
With this way of eating (Eat to Live), you can eat as large a serving of vegetables as needed to feel full 😄
@@GeoffreyAlan ty...what did u have 4 breakfast??
I can't eat garlic, onion, or any others in the allium family. What could I substitute for them in this recipe (and in your hummus recipe!). It's been difficult to give them up after sixty years of being able to use them!!
Giving up alliums is rough! In both recipes, you can just leave them out; there’s not a good substitute for either in their raw state (for cooking you could substitute with fennel or celery).
The hummus recipe has enough other flavors that it will still be quite tastyWith the omission. This dressing may feel a bit flat with just the Italian seasoning though. My cilantro lime dressing would work well without onion or garlic (on the Santa Fe salad video). It’ll just have a cleaner and brighter flavor.
On Monday I’m doing a Chinese Cabbage & Mandarin Salad with a dressing free from alliums. I added green onion to the salad base, but those could easily be skipped. In general, east/southeast Asian style recipes (very broad term as there are many cultures and cuisines in the region) are easier to make without alliums as they’re generally added at the end of a recipe vs as the foundation like European-style recipes.
Thanks! I'll try that--and watch for the new recipe. I'm shopping for more vegs. tomorrow so I can try this plan to start losing 60 pounds... reading the book, now, on ebooks from my library!
