It's always best to instantly tap when you're caught in one of these. I've seen guy's ego's get the better of them and they've ended up not being able to walk properly ever again. There's a reason as to why people won't compete in BJJ tournaments if heel hooks are allowed.
What bones will break this tehcnic? The ankle or the knee?
It will tear the knee ligaments.
