How To Make Eggplant Parmesan

Great for a vegetarian option for a dinner party, family gathering or weeknight dinner, Eggplant Parmesan has all the right ingredients to make it a classically delicious Italian dish.

Ingredients
3 eggplants
12 oz flour
8 eggs
6 fl oz milk
1 lb seasoned breadcrumbs
32 oz tomato sauce
18 oz mozzarella cheese
12 oz Parmesan cheese
1 oz fresh parsley, chopped
1 oz fresh oregano, chopped
Preparation
1. Peel and slice the eggplant into rounds a half inch thick and soak them in some cold water that is seasoned with salt and a little sugar. Soak the eggplant slices for approximately 10 minutes and remove.
2. Pat the eggplant dry with a paper towel and bread in the flour, egg wash and bread crumbs. Pan fry the slices over medium heat until golden brown and crispy.
3. Remove them from the pan, put on a paper towel lined plate and season with salt and pepper. In a shallow baking dish spoon some tomato sauce with the fried eggplant and top each slice with mozzarella and parmesan cheese.
4. Bake or broil to melt the cheese and brown it slightly. Then finish the eggplant with some freshly chopped parsley and oregano.

My wife use to make this a lot. She left the pealing on and frankly I like it much better with the pealing. It gives it a bit of a tart taste which adds to the overall flavor. I don't think they are nearly as good without the peal.

Baking is better for me as the eggplant sucks up oil like a sponge. Put the olive oil into a spray bottle and spray pan and both sides of each piece. Delish.

I'm going to make it and I'm going to eat one of those slices of eggplant after it comes out of the frying pan put it on a piece of paper towel to drain a little bit and eat it just like that with nothing else on it except some salt and pepper here in my mouth is watering now 4:30 in the morning I hope I dream of eating it LOL awesome

I have eaten the eggplant after they was fried on the stove top mostly, but have seen them baked in the oven also. I love the look of the parmesan also and that looks great.

Really nice to see a chef concerned about cleanliness. Nice technique, too. I have some panko crusted eggplant slices baking in the oven now , and will recombine them with tomato sauce and mozzarella in a casserole dish. My double dip frying days are over! I’d probably add some basil instead of parsley. These look great, tho.

I always season the flour too. One thing that adds a great taste to the eggplant is to use some flavored croutons with the Italian bread crumbs.

You had me very worried about the fact that the handle of your frying pan was not turned to the side. This was a very big hazard. Every time you passed your arm over it it could of gotten caught in your sleeve.

*I replaced the tomato sauce with Trader Joe's seasonal autum squash pasta sauce and then topped it off with lots of parmesan cheese. 😋
I made mine exactly the same way n ate it all hot hot from the pan. (before baking with parmesan cheese) Nothing left for the family! Perfect in between meals

Excellent cooking. My mom used to weigh the eggplants down with a heavy pot filled with water, after salting them and lying paper towels on top. This draws out the bitter taste of the eggplant. And ladies, please do as this man does. NO fingernail polish, NO rings or jewelry, and use separate hands for the wet and dry battering before frying.
The chef seems to be very experienced and knows what he is doing. I will try his technique.

The skin in the eggplant has the nutrients yes, but to make this recipe it must be peeled. Mr Escoffier this recipe is so delicious without the skin. When I have friends and family for dinner or any event and I make this it is delicious.
