- EGGPLANT PARMIGIANA INGREDIENTS:
3 large Eggplant
½ Tbsp Black Pepper
1 Tbsp Salt
1 cups All Purpose Flour add Salt & Pepper, as needed enough to coat eggplant slices
5 extra large Eggs
½ cup Vegetable Oil
1 lb shredded Mozzarella
1 cup grated Pecorino Romano Cheese
Chopped Fresh Parsley
Sliced Provolone Cheese (optional)
Sauce/Gravy:
½ Onion
3 cloves Garlic
3 Tbsp Olive Oil
2 qts Crushed Plum Tomatoes
4-6 Fresh Basil Leaves
1 tsp Oregano
½ tsp Black Pepper
1 Tbsp Salt

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

This lady is an Italian with an accent and is joyfully when she cooks and sings, and should be applauded for her hard work and efforts on her channel. I stood by my Nonna's side in the kitchen from the time I was three years old. She taught me everything I know. It was amazing to watch her in the kitchen. She only had one arm she lost the other in an accident as a child and instead of letting it destroy her life she used it to make great meals for her family and Friends and blessed many people who are hungry or unfortunate. I have her name so I'm very proud to be her granddaughter. It was nothing short of miraculous how she was able to work in the kitchen she was very independent and very proud. My favorite dish was her pasta con piselli. There are some dishes that I did not get to learn to make from her such as her lentils and arancini .I just want to thank you for bringing us ( your viewers) into your home and for sharing your Love of Cooking with the world. Some people are just not good.
Old style cooking by a woman who grew up in Italy. There are as many sauce recipes and methods as there are Italian women :-D . Way back when no one paid attention to how much salt was used....they salted everything. Before she talked about her grandma singing I knew that's how she must have grown up - the women in the kitchen all cooking together and learning from the previous generation. So different than now - no one learns from their mother or grandmother which is a sad thing. I'd give anything just to have my grandmother's recipes let alone videos of how she did things.

Thank you so much for this wonderfully detailed recipe. Our Mom and her Family immigrated from Scotland to the United States in 1925. They lived in an Italian-Jewish neighborhood in New Jersey. Mom always said that those wonderful Ladies taught them how to cook! Eggplant parmesan was one of Mom's signature dishes and one that she was most proud of!! Thank you! So many ways! First for the recipe, No one can understand why a Polish/American woman adores eggplant parmesan! I ask for it once a year and they think I'm nuts! Secondly, you remind me of how both my grandmothers cooked. By taste and touch. And I had no problem understanding you. I grew up with family who constantly struggled with English. And lastly, I worked in a nursing home and would talk to women (mostly Ethnic) about food. You gave me joy thinking of all their faces light up when we talked about their special dinners or desserts they made. Don't stop. You inspire more people than you can imagine. 🌹🌹🌹

@@TheFigaro666 it takes the water out, and softens it. Trust me it will not be sallty, because it goes away with the water. Some eggplant is bitter a bit sometimes, and the salt takes away the bitterness as well. if you like eggplant, you will love this recipe.

Hi Sandra, I to made the same comments to Grandma Gina! And my grandparents were from Sicily and Calabria and my parents were born here in the US. They have all passed on now and miss them terribly but was left with Mama's recipes that I cherish but no one to cook for as I'm an only child and divorced how ironic....
