You have to add lime to the torta. That bread is atypical sourdough bread called Birote. It can only be produced in Guadalajara because of the altitude and weather. The technique was taught by the Bread Master of Emperor Maximilian of Habsburg which was a Mexican emperor from Austria installed by Napoleon in the 1800’s. The bread master’s name was Birrot , he couldn’t find the same ingredients like in France and used what he has in hand. This for Tortas Ahogadas is called Birote salado, which resist sogginess . There are other birotes misnamed Fleimar which are softer ( used for sandwiches called lonches which are a derivative for lunch ) and this soft birote Fleimar get their name from the yeast Fleischmann used for the making , this is not sourdough like the birote salado (salty)

Omg, I used to work at the EFL/ESL school across the street from that taqueria back in 2000-2005 and that's where I'd often go at noon to get lunch. I'm so glad that place is still open and operating.

It was vegetarian heaven!! And while I’m not veggie 100% of the time, I absolutely enjoy a fully vegetarian meal esp. in Mexico bc EVERYTHING is soooo fresh! I’ve traveled extensively and have lived in 5 countries...I can tell you that the fruits & veg here in Mexico are the freshest I’ve EVER eaten anywhere in the world....second place with super fresh produce would be California-my home state.
