at the end, the japanese chef says "ラムジーさんだったら倍のスピードで出来るんじゃないですか"
this doesn't translate into "He needs to be faster with a better quality finish"
but actually "I bet Mr.Ramsey can easily do it twice as fast."
the chef is actually respecting gordon ramsey

Many people think Ramsay as arrogant etc, but he is just very honest and when he tastes something good he also points that out. I like how humble he is when he is learning new foods from great chefs who are making foods he doesnt master. That tell's something about why he is where he is now. He is passionate and ambitious, but humble. Great recipe for anyone to succeed on what they love.

When Ramsey fixes up restaurants on Kitchen Nightmares, he constantly prepares food which he himself considers delicious, but which doesn't require immense amounts of skill/technique to prepare.
You've definitely tasted delicious food before, but the food which Ramsey is cooking and learning to cook is more intricate. So while you might not have tasted anything as intricate as what he's preparing, it's quite likely that you've had delicious food before.
When I ate at the Five Seasons in NYC, the food was phenomenal. That said, it never took away from my joy eating simple and delicious food. It's like enjoying a TV show like Game of Thrones (or something like that). Just because you love GoT, doesn't mean you don't also love other shows.

As a guy who lives in Japan and is half-Japanese American,I'm really disappointed to see some of the comments. Not just the racists, but the people who complain about the chef not being Japanese and the sushi not being the traditional style. It doesn't matter if you are Korean or Chinese, if you have been trained to make great sushi, you are truly a good chef. Secondly, even if the sushi they provide is westernized, the principal is still the same. They just altered some of the original style for western customers. No big deal. By the way, at the end of the video, the Japanese chef said ''Mr. Ramsay could easily make it in double speed'' so the translation is all wrong.

Michel Linschoten I'm a pretty big eater, not to be competitive, but definitely over average. To me, ALL restaurants with Michellin Stars serve less portions than that roll of sushi on that show. And yes, I have been to 3 of Gordon's restaurants. Expensive and small portions, however, it's delicate. Just as the sushi on display in this video.
Now, I didn't weigh the sushi in this video, but it appears to me that it weighs more.

It’s not a “classic” sushi roll if the rice is in the outside. That style of sushi was invented in Vancouver, Canada to better appeal to western tastes. If you go to Japan, you’d be hard pressed to find a “dragon roll”. Most sushi restaurants are actually run by Koreans. If they serve spicy tuna rolls, you know for sure that it’s not Japanese.

I enjoy seeing him struggle and realizing that there are still challenges that he has to overcome.
Perhaps he will never be as fast as those sushi chefs, but be will learn to a appreciate a good sushi next time he order one.
And also he will learn that there is a lot of thought and care going into every single little part och the sushi (if it's a good sushi that is)
