    I went to the restaurant today. He told me that when vice media came to him they said that they were going to use actors to taste the sushi. He refused and requested that the camera man was the one to taste it. This explains why he’s not the most animated guy.

    I worked in a sushi bar with a chef who trained under Jiro Ono. His take on eating sushi was; "It's your sushi, eat it the way that makes you happy."
    I like this philosophy. I've been enjoying sushi for 35 years now and have owned and operated 2 sushi bars.
    The one thing I would recommend to my customers is to not use chopsticks unless you are really good at them, otherwise there's a chance the sushi I worked hard at and they're paying for will end up on the floor.

      Let me ask you a question, the chef in the video says don't mix the wasabi in the soy sauce because the flavors should be separated, and usually the chef has already put wasabi in the roll. I am just getting into sushi and have been to some very good restaurants, and never have I seen a roll served with wasabi already in it. So if the wasabi is not already in the roll and you are not supposed to mix it in the soy sauce, what is the best most authentic way to put the wasabi on the roll? BTW, I am very much aware that this is a perfect example of a first world problem.

      @@davidsheriff9274 Some sushi chefs do put wasabi in the rolls, but most don't. It really depends on the sushi bar.
      I personally add the wasabi to my soy sauce (although my wife says that I put soy sauce in my wasabi).
      As for tradition, putting a little wasabi on the fish and then dipping the fish, not the rice, into the soy sauce is considered proper.

    He had a restaurant in NY City that still bears his name, although he is no longer there: Sushi Yasuda.
    One evening, my then girlfriend and I turned up at around 5:30pm, before the dinner rush. We sat at the counter and were served by Chef Yasuda. It was not only the best sushi I have ever eaten, it was the best food. Absolutely breathtaking

    All you giving the guy eating a hard time... he was just respecting the position he was put in. He was very respectful to Yasuda, who seemed to like the gentleman’s company and set the tone for the interaction.The guy made a comment at the end about the sushi starting sweet, and Yasuda said “Sweet like you! Haha” so obviously he was happy with the experience too.

    Took me a few years and the discovery of season 2 episode 7 of Anthony Bourdain: Parts Unknown to realize that this guy was actually the highest ranking sushi chef in all of New York until he moved back to Tokyo at age 52 to continue his craft in the sushi capital of the world to satisfy his yearnings. What you see here is his 12 seat restaurant in the heart of Tokyo that he runs with only the help of his wife.

      The New York restaurant is a block from my apartment building, and I’ve eaten there several times, once with Chef Yasuda himself preparing my meal. A special treat indeed, and worth every cent. I’ve been eating sushi for decades, and learned something new watching this.

    I'm gonna be using that flip to the side technique for the rest of my life. It just makes so much sense. I've never understood why some sushi is easier to hold than others, it's just matter of coming at it from the proper angle.

      Problem: cheap sushi doesnt work like that. The meat doesnt stick. The rice doesnt stick. Flipping to the side doesnt work.
      So ive given up on cheap sushi. Only the best now. And yes, flip technique.

It's all about balancing the taste and knowing your ingredients. Taste is way more important than the looks of food, especially for Japanese people, I know because i live in Japan.

    For all those bitching about "eating sushi however they damn well please rawr grah grrr!": you need to understand that at a high-end restaurant, where you have professional master sushi chefs preparing the food, yes, there is a right and wrong way. When you go to an establishment like that, it is not to simply eat your food how you feel comfortable eating it, but to appreciate what is considered an art form to the master preparing it for you. You appreciate it for what it is. If that doesn't float your boat, by all means take your business elsewhere because the chefs at these establishments do not need or want people who choose to disrespect their art. Of course nobody should get in your business about how you eat it at any normal restaurant, but places like the one pictured here require a higher level of respect. A lot of these restaurants don't even like to serve foreigners because of the blatant disrespect coming from their entitled mantra of "the customer is always right". In Japan, the sushi master is always right, and if you don't like that then go to the boat sushi bar down the road.

    I think these "rules" are less of a snobbish thing and more of a common sense thing from the culture's perspective. Here's an analogy: Let's say you were served spaghetti with meat sauce and a side salad. If you were to mix the spaghetti and salad together, people would think you're being silly. That's the same thing with mixing together the wasabi, ginger, and soy sauce. You don't use a spoon and knife to eat the noodles and salad, you use a fork. Similarly, there's the natural way to use your fingers/utensils and the silly way when it comes to sushi. You don't douse your salad in ranch, you just use enough for a light coating on each leaf. Similarly, you don't dunk the sushi in soy sauce.

      I totally agree. On top of it being a cultural perspective, there is the practicality of it all - the general population eats the sushi a specific way because it makes the most sense. Dipping it sushi (rice) side down only results in soggy, over salted rice that falls apart before it even hits your mouth. And as u are placing the sushi fish-side down on ur tongue (as u have it inverted for dipping already), the fish and soy sauce are the first to hit ur tongue. That means u actually taste more of what u are eating. I have learned this from watching a similar video many years ago and can attest to the fact that it really does make it more enjoyable.

    I was very lucky to work at a sushi bar in the early 90's part time as a waiter. I learned a lot about how they cook all the common Japanese restaurant food behind the scenes, in addition to everything about sushi and sake. I say lucky, too, because I made like $500 a night in tips, double my hourly wage, so it was great during my college years. But, I was also lucky because I learned a lot about a completely different culture and met a lot of great people. Before I worked there, though, I actually bought a book to learn the things he's teaching in this video, so it's great this is out there for people who don't learn about this stuff like before the Internet became widespread.
    The only thing I'll say about what he's teaching is that the way you should hold each of the sushi he showed (maki first, nigiri second) is more strict than necessary. Japanese people I served and people I eat sushi with typically hold maki sushi using chopsticks and nigiri using their hands, but nobody would notice if you did it the opposite way, like he showed. There's nothing wrong either way, but holding the nigiri sushi with your hands to properly dip the fish itself, not the rice, into the wasabi/soy sauce mixture is easiest. I've ever seen actually seen anybody who uses chopsticks to turn it on its side, then use the chopsticks to dip it. With maki sushi, holding the seaweed sides with chopsticks and dipping one end with the exposed rice is just as acceptable as the opposite way he showed.
    I do have to explain to people (the first time) how to use the wasabi and soy sauce. I've seen people try to mash wasabi into their sushi before eating it, not understanding how to mix it with the soy sauce. And, I always have to explain how the ginger is eaten separately, between different kinds of sushi, to cleanse your palette. I'm no "fine dining connoisseur", but I don't get how anybody could eat sushi *with* the ginger and not notice how the ginger flavor just wipes out the sushi flavors. If I had made that mistake, I would never have tried sushi again. I just make sure people know it has a real purpose, because they typically look at it and never touch it, like it's only for decorative purposes. I suppose if you mashed enough wasabi into the sushi, you'd have the same bad experience.
    That being said, this is great instruction for anyone who's not sure about what they are doing, so it's great to see on UA-cam. There's a lot more history behind sushi, but this is good basic training.

      Herman Melville I think I saw him on Anthony Bourdain's show. He used to have a sushi restaurant in New York and used to participate in underground fighting. I think the guy's a karate black belt too.

      Herman Melville He competed in kyokushin, which is the karate equivalent of bare knuckle boxing.
      He's also currently training as a body builder and looking to compete at Tokyo events.
      When he lived in New York, his favorite places were Irish bars. He loved the atmosphere and how the bartender served drinks and talked to all the customers. It's why his restaurant only has 8 seats, so he can always talk to all his customers.

    Love the chef's humor!! High quality sushi AND entertainment! LOL
    Sometimes we have roll your own sushi night at my fam's. I cringe when I see everyone just mix different fish, throw in some ginger, make a THICK fake wasabi/soy mixture and slather it on like bbq sauce, etc. I try to get them to actually taste and enjoy the food, but they're just so "rude"!

      Have you ever made sushi? Rice wine vinegar, salt, and a lil something literally called "sushi rice" and that's it. Shit is sticky as fuck. The rice is not impressive, how fast his technique is and quality is!

      No problem dude, you should make it yourself once and keep practicing. Rice, nori sheets, and a bamboo mat are not expensive. Tip: Wrap your bamboo mat in plastic wrap or in a ziploc to keep clean. Also wet hands = no sticky rice.

      The key to having sticky rice like that is to first wash the rice, then pour out the water, repeating this until the water is clear. After it's washed, add a 1:1 volume of water to the rice (for every volume of rice there should be an equal volume of water) and cook it, and it'll be nice and sticky but the grains will maintain their shape. Then do what Harold said.

    The sushi chef was just providing some tips to best enjoy sushi! he had a good sense of humour too and I hope people don't take it as too "imposing" in any sense. I'm sure he wouldn't fault you if you prefer eating sushi in other ways.
