Awesome video with exceptional ideas. My husband passed away 166 days ago (with no life insurance.) Ive made myself a pledge to not buy groceries for a year, only use food giveaway and what i already have on hand, so I can pay down debts. Videos with ideas like this will help tremendously as I've always "cooked for an army" and although I love to cook, I'm alone and living on ss disability, so let's stretch those pennies. Thanks Brooke! @Southern Frugal Momma
Cut large circles from your pie dough, flip your muffin tin over, stretch pie dough over the inverted cups. Bake. Makes great bowls for filling. I do this with biscuit dough too. I fill the biscuits with sausage gravy and top with a fried egg. Drop on some hot sauce to taste...Yum!
Something I do, is save every scrap of leftovers in your freezer in a container or ziplock bags, until you have enough to fill a large pan, add broth, voila, soup!
It’s just me and my mom, she was an amazing cook. I have had to start doing the cooking and the shopping, and I felt really bad for my mom. I have so much fun in my kitchen now. You have shown me a lot and you inspire me! Thank you!
Fried rice is why I have soy sauce, sesame oil, fish sauce, ponzu, oyster sauce and hoisin all as pantry staples. They add so much awesome flavor and can make simple leftover bits of food and rice taste like it came from your favorite Asian restaurant.
Brooke, Walmart sells a 7oz bag of very fine macaroni, it's a Mexican brand (La Moderna Fideo??) but it's finer than Angel hair for $0.48/bag which you can use in that soup
We make pasta alot. U can use a pizza cutter too the thinner the better they will plump up while cooking I didnt realize this my first time and they were more like dumplings lol
Thank you for this video. I live alone on a fixed income and have been trying to save on my grocery bill. I have only discovered your videos recently, but I love how cheerful and educational they are!❤
You could add curry powder to your leftover chicken pot pie mixture and serve over rice, that'd be yummy. You're my inspiration for coming up with 133 Dollar Tree recipes. Now if I ever become even more poor than I am I have a lot of cheap dishes to cook from DT or even Walmart or elsewhere because the ingredients are cheap. I've learned a lot from you. Thank you! Also, it's really fun to create recipes, a challenge and feels rewarding to create something inexpensive that tastes good..
My Mom used to make homemade noodles kind of thick like that and I still do it.Almost reminds me of a cross between store.Bought noodles and chicken dumplings
I love to take all that you have season: the chicken, rice n broccoli with a cream of celery or any soup. Layer chicken, rice n broccoli in oan, take any cream of soup, put in a pan, fill that same can of soup with water and mix well with soup, pour over layer food items, bakes n top with cheese if u have it, or stuffing.
I am. Praying for strength and healing. For both of you please continue prayer for me With upcoming knee And hip replacement surgery. God is good and he is our healer
As an after thought instead of putting that little extra dough in the freezer my mother baked it on a s.all tin and when done put sugar and cinnamon on it and gave it to me. What a treat.
With all of those eggs leftover it's a winner winner 10 days of lunch and delicious dinners with flour for biscuits and eggs for breakfast too, Brooke! Amazing meal planning, bestie. Have a glorious day and be blessed always, my Southerland Squad! xoxo
This was such a great collab! Sometimes it’s hard to feed only one or two people because a lot of food goes to waste. This is where the dollar tree really comes in handy!
I’m just now (just turned 63 years old) cooking for myself. I’m still learning to shop for just myself (except for keeping the grandsons’ “snack closet” stocked!) I must say after seeing your Dollar Tree Frozen Foods videos, I absolutely agree with all the things you tried! I’m hooked on your budget meal videos :)
As always wonderful video....I know as a single person and as a couple. We spend between 15- 30 a week in groceries to can see why even the smaller packs of meat go such a long way for two people...I'm vegan now but my hubby still eats meat, dairy and eggs. If you don't care about having a huge slab of meat it is amazing how far you can stretch a steak, chicken, pork, or any ground meat and as for me we all know how cheap beans, rice, potatoes are....we eat really well on very little
Good job and much appreciated 😊. Try using yolks only in noodles, the whites make it fluffy and harder to roll thin. After 50+years of rolling out noodles I bought a pasta roller for my kitchenaid. Keep trying, you've got this and fresh noodles are worth it! Use less broth, make a noodle gravy, serve over mashed potatoes, oh my!!
For things like the pot pies for singles or couples if they wanted extras they could make them up then pop in the freezer and have homemade chicken pot pies they could toss in the oven or microwave when they didn’t have time to cook or for a fast easy meal. Would be great ideas for using for lunches too. I think cause my moms single and just her it’s great when things are easy to make and freeze or her she buys pork chops, chicken legs, large packs of beef, etc and will break down into plastic bags before freezing and getting 2,3, sometimes even 4 meals from one pack of meat!
Hey Sweetie Pie! Just came across your videos and I JUST LOVE YOU!! Thank you so very much for sharing this! I’m by myself so I can relate to a lot of your posts. I’ve got bunches of Medical Bills to pay off, so I’m binge watching your channel!! You have an Awesome Family! I’m going to make a bunch of your recipes! Thanks again Sweetheart! I’m going to be 75 soon so I’ll watch you as long as I can! God Bless You And Your Family!❤️🙏🏼❣️‼️🌷🌹🌻p.s. I forgot to say you have made a way for me to get myself together and pay bills, get medicine and have good meals💐
I love to watch ur meal preps, I am a single woman n enjoy ur meals.Thank u so much for sharing ur cooking!I am on a tight budget so ur meals is a blessing for me to gather up inexpensive items, BUT here in Hawaii our food cost is so high😟I will try ur recipes they look so (ono) delicious hehe thank u so much for sharing ur cooking talent made with love!!! (Mahalo) Thank you😊
Im so glad u did this video. I also have a suggestion. My mom and her best friend both are single too. We will cook and each of us share with each other what we cook, so cook once and can get 3 meals a week between each of us cooking.
Great video ! You can always make something delicious on a low budget. These days, we all sure need these recipes and tips. Blessings to you and your family
This video was great! I L❤VE these challenges! Am I the only one who wonders what she makes for the family when she’s eating these challenge meals?? It would be a good video to see what she makes each night for the family when she does a challenge!❤
The way you made the pasta is how you make real southern chicken and dumplings, not the Yankee biscuit type. I'm not saying one is better than the other, just completely different. Good video as always.
Just made Poor Man's chicken casserole. It is amazing especially if you mix to the stuffings and also if you get a garlic cream of mushroom. Thank you so much for this meal in between paychecks Works amazing🎉🎉🎉❤❤❤
My Mom used to make 1 big pot of Spaghetti sauce...1st nite we had sloppy joes...2nd nite spaghetti and 3rd nite chiĺi...no complaints...miss it.take care.
Thank you, Brooke, from all of us singles or widowed folks watching. Good job! I couldn't eat all that food. I have a battle cooking small amounts of food. I still cook like I'm cooking for 5 people!
Hey Brooke!! This was so much fun!! Thanks for inviting me along! I would have considered flour and eggs as pantry items myself. I love that salt and pepper holder you have! I love my dough whisk too! It works so great! How did the pie dough taste with the oil in there? I love baked sweet potatoes too! Those chicken thighs looked so good! I like to do this recipe too! You should try it with cajun seasoning with it! It helps with pasta dough if you let it rest for about 10 mins after you mix it. It helps relax so it can roll out! Look at all those eggs on your counter!! Looks like mine! haha I don't make meatballs enough! Looks so good Brooke! Mmmm...I love fried rice! It just needed some BACON in it! Haha You did so good Brooke! Thanks again for inviting me along!
Caroline did a group chat when she up Uploaded the video it was really fun. A way to interact without going live. I think your followers would enjoy that.
Love love love this. I am a single mom, just my daughter and I. Its great ideas. And I absolutely love Mamma Bairds! Watch every single video, just like yours. ❤❤❤❤❤
I loved the mini pot pie idea. I’m definitely going to try that. I usually do Pot Pie soup without a pie crust. On your noodles, I would have liked then. I love Reams which are thick. My husband passed away several years ago. I do batch cooking and freeze my meals for a months. I spend $35-45 a month and get 30 dinners and lunches. No rice as I don’t like it, 1 or 2 meals include white northern beans. All my meals are healthy. Eating healthy on a tight budget is doable.
If you made some flat bread or biscuits, you could have made eggs and toast or biscuits and glass of milk for breakfast, plus the dinner meals you made would really feed you both lunch and dinner meals. So for $20, you fed yourself 3 meals a day for 7+ days….. Fantastic! Debi in Vicksburg, MS. 🥰🥰
Definitely what I was thinking as a single senior person; my grocery budget is around $80.00 month including nonfood items.(but I DO eat alot of beans, cause I like em😊)
I absolutely love when you sing while cooking! It makes my heart feel so good. There is something about cooking in the kitchen and singing while making a meal. Great video! ❤
Everything looked delicious! I grew up on thick homemade noodle 😂. You get used to them and enjoy them. The first time I had store bought noodles I thought they were weird. 😂 thanks for all of your time and effort to help others. You are greatly appreciated.
I am honestly amazed at what you were able to do with $20. It just shows what can be done if you put some time and thought into the shopping and menu planning. It is healthy and well balanced meals too. We dont eat cheese and I love these ideas are mostly cheese free. I really think most people spend way too much money on cheese. Great video Brooke!!
So great that you focus on food insecurity - really great work - great to pass your knowledge on how to cook - shop - etc to make sure one has good . Great job !
Day 8 you could have made biscuits and gravy with scrambled eggs for a breakfast (though I know you don’t eat breakfast very often but it’s yet another meal or two)! Yum. 😋
Sometimes you just need to let the screech out when having a sing. There are a few songs I could make a few eardrums bleed with if someone was to over hear. And yet they are the best soul soothing songs to sing in the worst way possible. ❤
So, basically I’ve been here since almost the very beginning when you had just a handful of subscribers, and I’ve watched you grow and grow. I’m so proud of you, Brooke! You’ve done a bang-up job with your channel and your challenges and your collabs. Love me some Aunt Vicky! Maybe when you have time check out Dollar Tree Dinners for some inspiration and ideas. I love that channel! You’ve done great and I’m proud to be a “bestie”! Maybe you could get some merch going with some t-shirts that say “proud to be a Bestie” on the front and “Southern Frugal Momma” on the back. Or “A Cookbook for my Besties.” We need that cookbook, Brooke! Love you! Keep up the great work. Let’s end hunger!
Thank you for sharing your ideas for a single-person meal. When I microwave my potatoes 🥔 sweet or white I wrap them in plastic wrap. They come out great.
Brooke I love ya girl. I loved how you can sing and poke fun at yourself. You have a great sense of humor. I started watching your videos last year and you remind me of my girlfriends mom when I was growing up. You look just like her. She was a great lady. I get a lot of great ideas from you.
8:42 Hi! I needed this recipe! I need to make homemade dairy free cream of chicken soup for this Thanksgiving to make creamy chicken with stuffing casserole for my main and broccoli casserole for side dish (it's just me and my Mom), so I appreciate seeing how to make the soup.
Looks delicious meatballs, but you should have separated them to make 3 meal 1- garlic with broccoli and rice, meal 2 - teriyaki meatballs with stir fry rice with a 1/4 of vegetables and 1 fried egg. Meal 3 - meatballs with BBQ sauce and the sweet potato. Love the chicken stir fry. Also please read the label on Onion and Butter seasoning, I use it all the time great in everything but it has salt in it. Just like Seasoning meat tenderize or Lawers seasoning salt. If you would have save a 1/4 of the pork sausage you could have shown how to make milk gravy/ sawmill gravy which would be great over toast with fried eggs biscuits, cooked leftover pie crust. Perfect for a breakfast for dinner ( my guys love it.) I use my leftover pie crust because my biscuits turn out like door stops 😂😅 love you cousin Brooke ❤️ 🎉
I really think you benefit from having a silicone baking mat, they are fantastic for rolling out any type of dough.Especially since you use your table with the tile on it. Some really great ideas today, thanks love them.
Happy Weds! I really appreciate this video. I am a household of 1 and this was eye opening. I spend a lot more on groceries than 20 dollars normally. 😅 The meals you made seemed approachable and delicious. Thx for getting out of your comfort zone, cooking for 1. 🎉 Brilliant job ❤
I have thoroughly enjoyed binge watching your videos!! I had to laugh, listening to you talk yourself out of one package of meat for another lol. Keep up the good work❤
Ok I’ve only watched the first meal and oh my goodness the pot pie cups look delicious! My sister and I cook individual servings of things that my 86 year old mom can heat and eat. Do you think these could be frozen and then reheated?
I think with all the eggs milk & flour as well as the leftovers, you probably could have gotten breakfast lunch & dinner all those days for that same amount. It was so much food & it kept multiplying lol😅
Great meal ideas. I’m a single senior citizen so I’m used to cooking for myself but it really hard to just cook one meal at a time with no leftovers. When I cook meat I only used 1/4 lb at a time of sausage or ground beef. And then for chicken I cook two 1 leg quarter at a time. Even then I still have leftovers. Loved these recipes.
Great job! FYI, I add a little chicken bouillon powder to my drop dumplings for a little extra flavor. You could do that to the noodles too. Also, you could try add a little ginger powder to your fried rice. Yumm. I love watching your videos. I usually pass them on to friends and family. They are great ideas for young working/busy adults and lazy retired people. 😮😳🫢😁Thank you.
Thanks for thia awesome video for 1 person meals. It helped me quite a bit for a 67 year old lady who lives alone and how to stretch out my food budget and meals. I love you so much.
I need to move down South, prices there seem to be much cheaper than here in Massachusetts ! some great ideas there Brooke ! where do you buy the garlic butter seasoning ? btw... love your new kitchen curtains 😃
Also, this leftover food can be frozen for later use. I get tired of eating the same things very easily, so I love my freezer for that. I have a dedicated shelf on the door of my refrigerator for such leftovers. I never have any trouble using them. This was a great video Brooke!
thanks for doing this. I cook for myself and it can be challenging to scale down recipes for big casseroles or family size recipes for 1 person. It is always difficult to come up with meal ideas for 1 person.
Watch Carolina’s video here!!! ua-cam.com/video/Yi7T3qBJJgE/v-deo.htmlsi=Lx67Vk1MJ_deK0JN
Thanks again Brooke! This was so much fun!

I just retired from managing a senior complex and you hear of everything that comes along. This was a few mi west of nville

Great tip, people do that with the mini street tacos too but I think they have to put another muffin tin over them to keep them in place.
I didn't know that. I am trying to cook more.
That was impressive, really. The stuff looked satisfying and easy to make. I think I can smell that rice!
Awesome idea and super simple.😊
These are great recipes but I probably would have went with the beef instead of the chicken legs for variety.
Brooke. A whole video full of how to use leftovers to make completely different meals would be very informative and fun.
Good idea. Lots of people don’t like leftovers. I’ve learned, “ if I don’t like it, do it yourself “. 😮😅
Yes yes yes that would be great idea….lol
Something I do, is save every scrap of leftovers in your freezer in a container or ziplock bags, until you have enough to fill a large pan, add broth, voila, soup!
Amazing idea
It’s just me and my mom, she was an amazing cook. I have had to start doing the cooking and the shopping, and I felt really bad for my mom. I have so much fun in my kitchen now. You have shown me a lot and you inspire me! Thank you!
Brooke I think you really knocked this one out of the ballpark and into the next one. Girl you have a talent like no other I have ever seen. Good job.
And they also do elbow macaroni, and small shells, and even alphabet pasta for kiddos...
Fry the pasta first,so good
Good to know
I love how you portion food. You make it what we should be eating. So many of us overeat or use too large of serving size.
🙋guilty. Lol
Guilty 😂😂❤❤❤
I am cooking for two, but we usually eat up all of recipes made for four (my husband is a big guy).
Agree!!!!!
Use smaller bowls and plates
10:20 Wow! Never thought of making pie crust with oil😮!
I love your channel. It helps out a lot when a person has 20 oo dollars to live on.
I’m a 76 years young widow and still cook healthy meals for myself. Love saving on my groceries. Enjoy the great healthy meals.

Chicken and dumplings is also a delicious, but inexpensive meal.😁
Chicken & dumplings would have been PERFECT with your noodles that were too thick. Excellent suggestion !
Enjoy your show you have some new kitchen curtains I like
Thanks, I changed them around the house for a feeling of newness lol
My Mom used to make homemade noodles kind of thick like that and I still do it.Almost reminds me of a cross between store.Bought noodles and chicken dumplings

Me too…❤
You could freeze the mini pot pies for a quick meal later
As an after thought instead of putting that little extra dough in the freezer my mother baked it on a s.all tin and when done put sugar and cinnamon on it and gave it to me. What a treat.
I love this collab! You were so SMART to get the chicken leg quarters! That is easily 6 days of proteins!!! SO SMART! This was so awesome!
With all of those eggs leftover it's a winner winner 10 days of lunch and delicious dinners with flour for biscuits and eggs for breakfast too, Brooke! Amazing meal planning, bestie. Have a glorious day and be blessed always, my Southerland Squad! xoxo

This is brilliant for me a single older woman living alone! Going to try the week’s dinners! I like all the ingredients anyway. Thanks! x
I thought I was the only one who got excited over an egg with 2 yolks LOL that's awesome and being one of those single people, this video is awesome.

I was so excited for almost an hour of MY BESTIE!! Girl, you rocked that 20 bucks!
Thanks beautiful!!
We smaller families and singles do leftovers too.
Great video ! You can always make something delicious on a low budget. These days, we all sure need these recipes and tips. Blessings to you and your family
Thanks!
I have been a widow for over 5 years now. Thank you 😊
This video was great! I L❤VE these challenges! Am I the only one who wonders what she makes for the family when she’s eating these challenge meals?? It would be a good video to see what she makes each night for the family when she does a challenge!❤
You should do this kind of video about twice a month as I need new meal ideas. Thx. Great video
Cooking for two, and we make extra and then freeze for another meal sometime later. This way you don't get tired of eating the same things all week.
The way you made the pasta is how you make real southern chicken and dumplings, not the Yankee biscuit type. I'm not saying one is better than the other, just completely different. Good video as always.

The extra milk, flour and eggs can be breakfast...biscuit, gravy and egg. And possibly the extra meat balls

Mom's noodle recipe, 2 cups flour, 2 eggs and 2Tbls.of water. Always delicious!
As a widow this was a great video for me, I was hoping you would do something like this for those of us who are single.

Cheese is so good...haha! I feel like it helps glue everything together! I do love that all of these were cheese-free options though! Great ideas!
Could you please make any meals from what we would get from the food bank that is low sodium and has flavor 🙏🙏🙏
So great that you focus on food insecurity - really great work - great to pass your knowledge on how to cook - shop - etc to make sure one has good . Great job !

That’s a great idea
I do the same thing
Brooke I love ya girl. I loved how you can sing and poke fun at yourself. You have a great sense of humor. I started watching your videos last year and you remind me of my girlfriends mom when I was growing up. You look just like her. She was a great lady. I get a lot of great ideas from you.
Please do more of these videos. This was a great video!!!
Like your ideas, my Mom, would have made cinnamon and sugar, treats with the leftover pie crust, they were great 👍
Dayummm you kicked butt on this one!!!!
I have one, but I don’t like it 😂
I REALLY LIKE YOUR 1 PERSON MEALS. HOWW SMART. THANKS
❤
You need to add 1 Tbsp milk or water per egg to make noodles
That's a large amount of food for $20. Great menu. Easily could have fed 2 for 7 days. It was also healthy.
Girl, everything has gone up so I’m looking at all your frugal cooking videos. Thank you so much. You are much appreciated for this. ❤
Oh..Thank You! Needed this video! Bad couple weeks ahead!😉
Brooke, you are a CHAMPION!!!! YEA!!!!! 👏🏼👏🏼👏🏼👏🏼👏🏼👏🏼👏🏼👏🏼👏🏼
You did Great with this challenge. Everything looked so good.
I KNEW I WOULD LIKE THIS! Gonna see Carolina's after my nap!
Thanks for thia awesome video for 1 person meals. It helped me quite a bit for a 67 year old lady who lives alone and how to stretch out my food budget and meals. I love you so much.
Brooke, you are an inspiration --- meals for a single person
Finally!! I was just thinking about searching your site for this very thing!
I need to move down South, prices there seem to be much cheaper than here in Massachusetts ! some great ideas there Brooke ! where do you buy the garlic butter seasoning ? btw... love your new kitchen curtains 😃
I love those little salad kits! Such an easy side or even main dish! Add what you want to it and boom a meal!
Totally agree
Thank you for these wonderful meals , inspirational and wholesome too.👏👏😀👍
Hi, I love that you do this . I hope your family realizes you are a genius ❤ thanks chic
