I make some jerky and sausage I made about 25 lbs ea of bratwurst and Italian sausage already and still have to make summer and breakfast sausage yet. I have about half ground up and the other half into steaks and roast some years I jar some. good luck on your hunt !
yukonjeffimagery Thanks! I also made sausage couple of weeks ago. Used beef and pork, no fresh moose available. I was roughly following the south african boerewors recipe. I like its spices. Added also some smoke flavor in my smoker.

Glad to have you along the gun is a 7400 Remington auto it must be over 30 yrs old I bought it in 1982 it made a lot of meat for us.

Pork and beef is pretty expensive here I might try and mix some pork next batch if I can find a decent piece.
yukonjeffimagery Fatty pork side or belly or bacon, however you call it, is a great additive in the sausage.
Good eating meat I'm sure didn't wait for the antler bulls as most hunters do.
