    My Husband is a Deer Hunter. I can Venison. It makes it very tender. I use a pint of Venison with a pint of your French Onion Soup, thicken it to make a gravy. I serve over mashed potatoes or noodles. Absolutely Delicious. 💖💖💖

    Loved your pantry tour even though I’m 3 years late😂. I’m glad I don’t have texture issues with canned meats. Living on a farm, we’re extra “blessed” with meats/poultry and sometimes need to get it out of the freezers and canning it, approved safe methods only, allow for this. I like to ingredient can and meals in jars can. Going to tackle your ‘Better than Bush’s baked beans’ this weekend…hopefully🤞🏼🤞🏼

    I have those shelves in my garage for lawn and yard stacking. A tip for you @Carol Thrifty Chic Housewife is to put metal bands on the back bars of the top 2 shelves and secure them with concrete screws to the wall to ensure that those shelves themselves never topple over. If you need to be convinced, put a level front to back then side to side on each shelf. And yes, toppling happens. Your shelves are slightly bowing already with just small jars. Glass is heavy. Good job on all that canning work.

      We connected our shelving together with zip ties for greater stability and attached them to the floor joist above instead of the walls.
      But you make an excellent point. A small tremor where we live could send everything crashing to the floor. I put jars back into the jar boxes before putting on the shelf and put strips of bubble wrap between some jars.

    If you want cheap shelves cinder blocks and 2x10 or 12 cut to size.

      Pam t ...that’s a really good idea ! A great way to store a huge amount of your canned food in a little space .My metal shelves r great but tons of wasted space in between the shelves since we can’t stack the jars. My canning storage is in an extra bedroom so space is precious...(dreaming of a real area in a basement if only I had one)🤦‍♀️ maybe someday....

    Enjoyed your tour. I bought a jelly/jam maker a couple years ago. One of their recipes was Mango/Pineapple/Jalapeno jelly... Oh my gosh! soo good! We poured it over creme cheese for crackers. I also used it as a glaze on chicken. (could try on Salmon, too) (one batch in jelly maker does four 1/2 pints to water bath) Wonderful flavor, not hot, just dances on your tongue... I want to make a big batch as it is so popular now with the family.

    I agree about canning tomatoes straight and unseasoned. I do them stewed or crushed. I do cook them down some in the crock pot to get rid of the juice. This keeps float to a minimum and I get more fruit than juice. Tomatillos are something that requires little care and two plants yielded me straight tomatillos cooked down to 25 pint jars this year. I was so excited to have them to make enchilada sauce and will use them with your corn broth for some sort of soup that I will make up a recipe for. What a big bang for your buck. The tomatillos grow like weeds and spread like crazy. We are WI zone 4. Just planted my own blackberry bushes. Cant wait for them to take off!! Yum. Nice video. Oooh some gift canning videos would be great!! Yes yes the orange date preserve video!! 😋. I don’t get why you dont have more subscribers! I hold my canned food for 3-4 years. Never had an issue.

      Janette Lavender I will give cooking the tomatoes before canning a try. You’re the second person to suggest growing tomatillos. I will try them next year for sure 😊. I will do the orange date preserves, so yummy. Thanks for watching 💕🌹

    This was such a great video. Learned a few more things I want to try. I love canning. My Mom never left the rings on so I don't. They are washed and dried, then some hung or the others put in a box for when I need them. If they ever look bad I throw them out. I even make my own mustard I used brown mustard seeds for a spicy mustard. So much fun to try new things. I want to try that Peach Rum Sauce. Just saw that after seeing your video in my Ball book. I just got some new jars for canning and they are so pretty. "Kilner" from the U.K. I was waiting to find something fancy that I could put in them. The lids are the same size as our Ball jar lids, so I can keep using them in the future. Keep up the good work. Sending love from Western, N.Y.

    Canning Chicken.. some things you might not have thought of that we do: Chicken Salad I too prefer using chicken tenderloin, chicken thighs, etc the darker meat but tenderloins make wonderful chicken salad. It's also good to make chicken and dumplings with. In the winter when flu season is going I keep canned chicken, commercially made egg noodles, chicken broth stock and there is nothing better to eat when you have a cold than home made chicken and noodle soup Campbells soup just is so yucky with all the sodium in it my reason for the commercial egg noodles is the last thing I want to do when I am sick is mix up flour, eggs, etc and roll out dough in this situation I will cheat and use already prepared and on the shelf but Oh my the actual deal is awesome. We also use chicken in burritos. Having canned meats in a emergency situation power outages or loss of a job can be such a life saver.

    I canned your pickled green tomatoes and they are fantastic. So delicious the pickling adds another level of flavor that's perfect. I had been wanting to can green tomatoes but didn't know how to do it without them being too soggy and it was the perfect recipe. Thank you so much for sharing.

    Your video was very helpful. I'm a beginner canner and I learned some valuable info I didn't know. I have made different kinds of pickles, jams and basalmic candied onions and salsa. After watching your video I can't wait to make some of the things you have canned. I paused your video and ran to my pantry and unstacked my jars. I had some stacked on top of each other! 😮 Lol.     I have never kept my rings on after they are sealed. It was taught to me by my mum. The main reason we always did was so the rings would not get all rusty and hard to come off.

    Be careful with those shelves, I saw another canner in the comments of another video saying these shelves broke with her canning jars on it.

      My wife has had them break twice. Broken glass and ruined food everywhere. My wife cried so hard all the while I scooped broken glass into a trash can. Alot of hard work wasted. She was well under the rated weight limit. We use steel shelves that are rated at 1200 pounds per shelf.

    Some great ideas here. I’d love to can pears and peaches in a low sugar variety. God bless, Carol B

      When I can peaches and pears I only put 1 tablespoon of sugar per pint instead of the usual 1/4 to 1/3 of a cup of sugar like most instructions call for. This is very low sugar but still tastes great. I don't put any sugar in my applesauce. Except for applesauce, fruit doesn't taste good canned without sugar so I don't recommend it.
      I pour the sugar on top of the fruit in the jars then add boiling water to cover the sliced fruit. After putting on the lids and rings I gently shake the jar to dissolve the sugar then process as instructed. I've done it this way for 45 years. It's too much work to make a sugar syrup first.

    Carol, I saw a video a couple of years ago that is a great example of what you were saying about the problem with leaving your rings on and stacking jars on top of each other. I have attached the video: NO-NO! Don't Do This With Your Canned Goods! ~ I agree with you about canning ground beef. Something about the texture that is a turn off. The same meat dish is great when I freeze and use later. BexarPrepper has a video on THE BEST meat sauce you ever ate.It takes three days to make and worth every minue of the time. We love it frozen and not canned. As far as the canned hummas, take it to the edge of the woods, leave it and something there will eat it and you will not have to worry. Thanks for taking time to do the video. Consider canning cranberry sauce. So easy and delicious. Jo Ann from Mississippi

      @@carol-thriftychichousewife6231 We live near a canyon that does not get the high winds which feeds these fires. We're lucky in that sense. Unfortunately, my cousin, and her young family, did lose her home to one of the fires last week. No one was injured, but they lost everything. Just devastating. Thank you so much for your concern.

    I never saw the page in the all new ball book of canning that had the dressing suggestions. I made that balsamic onion jam and it’s delicious. I was so excited when you said that. I had to grab the book and look. I will definitely be making this dressing today.

    Thank you so much for this video! I’m just getting really into canning and it’s nice to know some recommendations on what’s good and not so good to can. I might try the chow chow and definitely beans!!! They’re so expensive in the store I had no idea you could do dry beans. Cha Ching! I was going to try meat for the first time and probably still will, but I’ll make a small amount and see if we can deal with the texture. The chicken Thai soup looked really interesting. One recipe I can’t get enough of is the roasted puttanesca sauce from the all new ball book of canning. It has eggplant in it! Sooooo good.

    Loved your pantry tour. Canned goods on the shelf are always so pretty. You have inspired me to get back into canning this year, just had to adjust to not doing such big amounts. Love watching the shelves fill up.
    Also made your raisin bread this morning... delicious! Kept one loaf and gave two away.

    I had the same texture challenge with canned ground beef when I made pasta sauce. My remedy was to blend the jar of sauce in my Vita-mix so it was creamy. Still had the meat flavor but was a smooth pasta sauce. When canning chicken breast boil/simmer it till it's done first. Let it cool, cut it up and then can it. Much more moist and the texture is great. I've been canning for 50 years.

      I felt the same way with my ground beef and decided that by blending it with the pasta sauce will create a meat sauce so it can hide the texture.

    Was raised on chow chow, beans, and cornbread!! I still make chow chow when I raise enough ingredients in the garden!!

    Several things. We have a grow room/pantry in a spare bedroom. Its easy to darken metal shelves by buying some clothesline and dollar store dark colored shower curtains hooked over the top shelf of any canning shelves. I also learned jars.can only be stacked one box high if TJEY REMAIN IN ORIGINAL BOXES. NOT DIRECTLY ON TOP OF EACH OTHER.PER BALL. THE BOX KEEPS PRESSURE OFF THE SEALS.

    Thank you for sharing your pantry. I really enjoy the honest feedback on what you really liked and didn't like. Also including which book/recipe you followed is very helpful. I just made the boiled cider after watching your video and to be honest, I'd never heard of it. I will be using it in some of my holiday baking,can't wait!!

    I make a peach salsa my family loves! I recently bought a jar of cherry salsa at an Amish Store in Missouri. It was very yummy! I love canned chicken for sandwiches and casseroles. Thank you for your expertise!

    I enjoyed this video! I however love my canned meats. I can my meats with Better Than Chicken broth though and I think that improves the texture. I agree though that the texture is different. My favorite canned meat is beef roast. We absolutely love it. My husbands favorite is canned corned beef ( I don’t add the spice packets though). My favorite things to have on my shelves are green beans, dried beans, certain meats, and tomatoes. Then comes salsa, pickles, applesauce, apple butter, to much to write about really!
    I am running out of space to put stuff but I still keep canning! I live in an old farm house and there was an old metal floor to ceiling cabinet in the barn that I asked my husband to bring in for me. He of course rolled his eyes but did it anyway ( and he even cleaned it up for me) and it is now in my home filled with some of my canned goods. Funny thing is, that I get compliments on it all the time! I love it!
    I could talk about my canned foods all night long , but I will close for now.

      vickie Y I’m gonna try roast beef bc I think we would enjoy that and I love Better Than Bouillon. That’s really cool to have a vintage cabinet for your canned goods 😊... kudos to hubby 😉.       Thrifty Chic Housewife if I have this right (learning from other YT canners) the maltodextrin in our fav instant broths prevents the meat from tasting rubbery. I’m not sure what the bolognaise called for but that might be why? I’m going to make a small test batch of Kneady Homesteader’s ground beef in broth. If I don’t like it I didn’t waste a lot of ingredients. Yeah , I want to try that chicken stew recipe but I’ll use thighs. I’m picky about breast meat under the best of circumstances. I am using a spare bedroom in my apartment. I’m going to try the plastic cases because they can stack and if I need to evacuate due to weather, it would be easier to transport it. I love your shelves and they would be easy to get in and out of an apartment.

    Costco has metal adjustable shelving on wheels about 7 feet tall. They are very strong and stable. I bought shelving for operating room instrument trays, very heavy. It’s the same shelving. I have them into my garage. Work great and they can easily be moved.

    It’s a yes!! Any one of those that you named I would like to see a video done ! I just started canning last year (2020, yes right when canning supplies were hard to find) and found out that I just love canning ! To me it’s so rewarding because you see the end results so quickly and it’s soooo good for your family to eat! Your amazing, love all your tips and ideals on how to use the items that you canned that we may not have thought of to do ! Loved this pantry video .Fabulous..Blessings

    Thank you for sharing your pantry and stash. Have you though about using an immersion blender in the bolognese sauce? If you like the flavor, that would take care of the texture, maybe.

    Canned meat does look weird! But it's so nice to have on the shelf in a pinch. I like to use it in casseroles, soups, or recipes it can be disguised in, beef chunks for a quick stroganof, chili or soup. I love to can deer meat because it changes the consistency for the better! We are not fans of canned ground meat. ( I'm using my chicken breast for chicken salad.)

      I have been canning since July 2020 and I'm still canning in February 2021. And still have my frozen fruits in the freezer to get to. Going to make pie filling and jam. Oh and need to can my butternut squash too. I still have so many from harvest.

    I'd have to add a band of fiberglass or sturdy webbing around each of those shelves to keep any jars from accidentally falling off the shelf. Its beautiful to see your shelves, but it's making me nervous!!!🥴

    The flavor of the ground beef is funky too haha. I canned ground beef, and did a meat sauce, no one likes it in my family either, I thought I would can the beef and toss in cheesy pasta for the kids and they would not touch it lol

    I made something like that end of summer pasta sauce. It’s not exactly a soup and it’s not exactly a pasta sauce. I think if I want to make it a soup I would add some chicken stock to it. And if I wanted to make it a real pasta sauce I might add a little bit more tomato. But what it is great for is a base for my tacos and other meats. I just add some cumin and some other spices and cook it down a little and it works great.

    Yes, I understand the texture problem. Maybe we would have move success with coarser ground meat and fry up till brown. Maybe I will try again

    Thanks Carol - and I’ve never canned meat except ham in the pea soup however, never have liked canned meat in store bought soups, chili, canned chicken etc. so wouldn’t try canning it myself.
    And I’m glad I watched your video because I just bought garbanzo beans and sesame seeds to make the hummus in a jar. 😩. Guess I should have watched the updated video.

      kimberly nance I’m sorry about the hummus. I left the video up bc I felt everyone should decide for themselves. The author is sure it’s fine, her family eats it all the time. But you’ve been here long enough to know I’m a safety girl... For what it’s worth in case you haven’t watched the update, the USDA just hasn’t tested sesame seeds in canning. The question of safety is due to their high fat content. The author feels the addition of acid from the lemon juice makes them safe but the experts I personally contacted say no🤷‍♀️. The truth is without testing no one knows for sure. I’m not an adventurous canner and I take food safety maybe too seriously. The concept is fantastic and convenient but I don’t like question marks when it comes to my food. The other thing I found is making hummus from home canned garbanzo beans and FRESH lemon is tastier. So please decide for yourself, as it is a published recipe and I’m sure others who are unaware are making and eating it.

    I make chow chow and I use it on top of my scrambled eggs in the morning and it's so delicious.
    You could probably puree that vegetable pasta sauce and then you wouldn't have the chunks of vegetables in it and it would feel more like a pasta sauce that's just a thought.

    I had to laugh with you on a couple things! It seems we have the same taste and texture issue! I was getting ready to do a Veg Soup with ground beef and some jars of manwiches this weekend! Still will but now without the meat! I'll add when cooking now! Lol! And I have even dunked my canned jars in a nice hot sink of clean dishwater with some vinegar added! But only dunked on accident lol, btw and they were fine! I guess I thought I was doing dishes for a minute or something! Now thats menopause brain for sure! 🤦🏼‍♀️🤦🏼‍♀️My husband laughed and actually said we sound a lot alike as I was watching! And the garbanzo beans for the hummus I will leave out those sesame seeds as well! I need to to watch your updated version. And I love your pantry your! Like someone below said, I'm a sucker for a pantry tour! I love your channel as well as Linda's Pantry! I have saved so many of y'all's canning videos in my library!     In this video you mentioned you made Blackberry Syrup. I have seen were you made a video for that, but was wondering if you could share which recipe you used. Any advice is want to add a little liquor/wine to it? We just picked 9 lbs of blackberries & I very much had all intentions of making it into a syrup, but I don't have a recipe, LoL 🤦‍♀️

    Yes remove the bands lids. I had a spoilage noticed before I used it because the lid came off before I opened it…then I noticed signs of the spoilage

    Found your Channel first. Will have to check out Linda's Channel as long as she also follows USDA Guidelines like you do. I also can venison. It is a tougher meat so the canning process tenderizes it. I make a Gravy with it for over potatoes. I want to can potatoes also. I think they will be good to have around for potato salad or mashed potatoes in a hurry or fried potatoes. Love your Canning Videos.

    I made Vinegar Onions for the first time today. The recipe is in the latest Ball Canning Book. They're so easy to make and you really don't need a formal recipe.
    Slice about 3 lbs of red onions into 1/4" slices and separate into rings. Simmer them in vinegar (5% acidity) to cover for 10 or 15 minutes then pour them into jars with the vinegar and process in a boiling water bath for 10 minutes. This will make about 5 pint jars. The onions make a beautiful rosy pink relish.
    They're really yummy.
    I also made some pickled beets today. My husband helped me can potatoes. I hope they turn out okay!
    A couple of days ago I made beef stew.
    I like the creative type of canning. When I can peaches and pears, for example, it just seems like hard work. Relishes, pickles, jams and syrups are fun.
    Tomorrow I'm going to make some blackberry syrup with blackberries we've grown in our backyard.
