  • This gozleme is super easy and tasty. Great additional to any table.
    Ingredients:
    1. 3 sheets of mountain bread
    2. 30 g butter, melted
    3. 125 g fresh ricotta
    4. 2 garlic cloves, crushed
    5. 100 g Danish feta
    6. 60 g packet baby spinach leaves, shredded
    7. 200 g mozarella, coarsely grated
    8. Sumac and fresh thyme leaves, to serve (optional)
    Method:
    1. Preheat oven to 200 C (395 F). Grease a rectangular baking pan about 21 x 26 cm (size to fit your mountain bread). Lay a sheet of mountain bread on the tray and brush with melted butter. Lay another sheet on top and brush with butter.
    2. Use a fork to mash the ricotta and garlic together until well combined. Season. Scatter over the bread. Crumble over the fetta and sprinkle with the spinach and half the mozarella.
    3. Top with the final sheet of bread and press down firmly. Brush with butter. Bake for 10 minutes. Sprinkle with the remaining mozarella and bake for a further 15 minutes or until the cheese is golden and the bread is crisp. Cool slightly, before cutting into squares to serve. Sprinkle with sumac and thyme, if using. Makes 4 serves.
