No Mayo! Sweet, Sour with Feta, Layers of Big Onion Flavor Caramelized Onions, Leeks, Spring Garlic

  • Leeks are a wonderful subtle onion flavor and paired with the wonderful texture and almost artichoke like flavor of the scapes, OMGa Ga! The farmers market also had spring garlic, which form early in the spring before the bulbs form, Soft neck garlic produce these, also called green garlic. Hard neck varieties of garlic produce garlic scapes which would be a nice addiction here too. Don’t be too concerned about getting all of the exact same ingredients, scallions, leeks, scapes, whatever you can get is what you can get. You got this!
    This recipe was inspired by the abundance of the spring harvest here in the Pacific Northwest. We are so grateful for the amazing produce. I will stand by my believe that the PNW has in all of the Northeast in terms of produce. Seafood on the other hand, The Northeast is still King.
    Chef Inspired Events Spring Onion Potato Salad
    1T evoo
    2c yellow onions
    2lbs gold potatoes
    2T vinegar
    1 leek
    2 leek scapes
    2 spring garlic
    2T flour
    2T honey
    1/4c rice wine vinegar
    1/2c water
    4oz feta cheese
    1t lemon zest
    chives garnish

    A special thank you to the folks at Mt.Vikos for a care package of their products, including this amazing imported feta cheese. We first used this cheese in a video on our own dime. This is a quality feta that we find easily available where we live and a great value for the quality. There was no exchange of funds between CIE, Maggie or myself from Mt. Vikos.     I am a big proponent for warm potato salad. I typically eat it with a bratwurst and mustard, but you showed its versatility. Nice finish with the feta.
