I grew up eating Turkish food in London. I was lucky enough to grow up where many Turkish people settled and opened many food shops and restaurants. We love your cuisine.
I have baby boy allergic to dairy, eggs, soy and grains. I love your recepies because I can use just meat and veggies and make all sorts of different and yummy foods for us. Thank you from Serbia ❤
I made tahini using your recipe and have tomatoes from my garden so I'll be making the Piyaz today as a side dish for fish which I thawed and need to use up. I think the combination will be delicious. I've copied the Kofte to try in the future. I love your channel and each recipe I've made has been amazing.
Greetings from 🇦🇱🇦🇱 I really like how you cook chef Refika, your videos are beautiful, and you always transmit positivity, I also like it when you invite famous people, Turkish cuisine is very similar to Albanian cuisine
Thank you Refika this is a wonderful video pace and recipes I will make it for my family. I hope I will be able to see the BBC episode you are featured in. I am in the USA and for some reason I cannot access on UA-cam some cooking and gardening shows anymore. God be with you Refika. I am very fond of you and your crew. Take good care.
Merhaba! I have been watching your channel for over two years and enjoy your content so much. I am finally making my way to Turkey this week and will be in Antalya. I can’t wait to try to the burnt ice cream. Thanks for tip Refika. You are a treasure!
Yummy! Thank you for sharing ❤ I do agree about not rushing. I look forward to your videos every Saturday. I prefer watching videos that teach me new recipes and techniques rather than how quickly they can be completed. And I love watching you and your entire crew working magic in the kitchen ❤❤❤❤
Looks fantastic, will definitely try this. Refika it would be great if you did a video showing us how to spice a new cast iron skillet (make it ready for use). ❤
On my recent visit to Singapore, I went to a Turkish restaurant at the Arab street and had Iskendar kebab. It was not as juicy as Sish kebab, but with freshly made yogurt and bread it tasted very good. I would love to watch the Turkish Iskendar kebab recipe sometime. Take my love, Refika.
Yummmm.... Refika, you should task Bahar with creating Smell-o-Vision for your demonstration videos. My mouth was watering just imagining the wonderful aromas!!! We're not great fans of lamb either, but we are going to try it with a blend of beef upon your recommendation. Thank you to you and to your lovely cohort of talented folks. Be well and stay safe!!
You can use pork instead of lamb but you should reduce the amount of it comparing with lamb because pork meat has even more fat than lamb. Already Turkish kebabs usually prepared with pork in Balkans
@@historybugs We use a blend of minced beef and pork routinely whenever mince meat is called for. But the idea of using a little bit of minced lamb is an interesting one.
@@amateurepicurean8168 the original recipe is with lamb because muslims does not eat pork. A portion of lamb meat usually added to almost all minced beef dishes in Turkey because of extra flavor and fat it provides but pork also does the similar job. The only difference is that the pork meat is even more fatty than lamb, so you have to be more careful with it to not make it overly fat
Hi Refika just watched your video Specialist Street Food on BBC. Beautiful! Felt like I was watching an old friend. Very exciting & congratulations 👏💃🤩
Dear Refika, when we were in Turkey many years ago in a three star hotel with five plus star food as a snack they gave us probably borek with spinach and some kind of hard cheese, it was delicious, I do not know how to replicate it at home. We also ate some kind of very thinly sliced salad with tomatoes and cucumbers, also delicious, served with everything, as well as tomato soup like nowhere else. Maybe you could shine some light on how to make these dishes? I would love to make them at home and I trust no one else. Greetings from Germany.
What a wonderful new dish to learn (as a non-Turkish cook). I notice that some people are looking for dishes that can be done fast fast fast. Then there are people who love to cook and are happy to devote appropriate time to that activity. There seems to be a sizeable difference in these approaches to cooking, and I don't know how to please both types at the same time. I am one who loves to cook and finds it stressful when someone tries to rush me through the process. Yes indeed, there are times when I have to hurry too, but I wouldn't try to make a dish like this. I'd stick to something like ramen, omelets, or hot dogs.
Hi James! Thank you so much for your thoughtful comment 😊. You’re absolutely right - when people are pressed for time, cooking can sometimes become stressful, and that’s definitely a challenge. But cooking is such an enjoyable and relaxing activity that it can also be the perfect way to let go of that stress. Taking your time and enjoying the process is always the best part. I hope you get to try this recipe at your own pace and savor every moment! 💚 Elif Refika’s Kitchen Team
Mediterranean salad🥗 I bought Tahini, but I didn't like its taste in Hummus . Perhaps I should add a bit of vinegar and more lemon juice. I'd liked more Hummus with peanut butter. Thank you.
Alway looks great. Only comment is instead of cutting wood, just purchase metal/stainless steel rods in the outdoor barbeque section in store. So, just wash and reuse. lol
This is the kind of food I always want to be eating. But when I get to the kitchen, I find myself making meatloaf or spaghetti instead. I wish I knew why. I probably have all of these ingredients in my pantry, too.
I look forward to see you on our TV on the BBC channel in England ,thank you for spreading our culture and cuisine around the world xxx .

Great video!
Wow what a genius way of skewering Kafta. Thats one job I really hate doing.
In Pakistan we say kofte for meatballs and onion is piyaz. And we prepare kofte with gravy. Looking delicious what you're cooking. Wah is for bravo.
Great❤
That's our dinner for next week sorted. 😀
Can you make a video about bread? How to knead dough, the difference between the kneading process on white &whole wheat flour please?
Meat doesn't fill you up. you need veggies and starch to get full. Looks yummy.
👏🏻👏🏻
Hi, short question => how height is the cast iron pan 5cm ?
For the beans, is it 400gm in each package and is that the undrained weight?
❤❤❤
Show some vegetarian option in this thankyou ❤️❤️❤️‼️
Piyaz is very vegetarian actually ☺️
❤

Wrap the ends of the chopsticks with aluminum foil- also makes it flatter so it doesn’t spin.
🌹🙏
A fun question for all: If Refika and friends came to cater an event for you, how much would you pay? Well, frankly, I'd pay whatever!
in turkce you call onions soaan. in urdu(pakistan language) we call it piyaz. what is this?
😀🥙🫘🥗😋🎶🤘
Wouldn't it be easier to put some aluminium foil on the end of the chopsticks?
Yes but I don’t like to use aluminum 😔
Marry me and cook for me κουκλάρα μου
Hi refika my name is shimona can u grant a friend of my a Christmas gift
