- Easy One Pot Chicken & Rice Recipe - Simple Chicken Pulao Recipe For Beginners
In this video I showed the basic steps for making a chicken pulao. Everything happens in one pot and it is very easy to put together if you know some basic tricks. For any pulao or biryani recipe the main hurdle is to keep the rice grains intact and separate which I have discussed in detail how to cook the rice. Please remember that a lot depends on the quality and type of rice grains which vary from brand to brand. Some grains may require little less water than the given proportion or the rice may get fully tender in just 15 minutes (in that case instead of keeping it on low heat for 5 more minutes, take it off heat). So you may need a few tries to come to that sweet spot. So do not lose your patience if your first try is unsatisfactory. It took me a long time to grasp the tricks and cook the perfect rice for a pulao or biryani.

Ingredients Required For Making chicken and rice- serves 8
* Chicken with bones - 1.36 kg/3 lb approx
* Onion - 400 gm/14 oz/2 large
* Tomato - 250 gm/9 oz/ 4 large
* Ginger - 2 tablespoons finely grated
* Garlic - 2 tablespoons finely grated or you can use 3 tablespoons of ginger garlic paste.
* Dried bay leaf / tejpatta - 2
* Cinnamon stick / dalchini - 2 inch length
* Green cardamoms / small elaichii - 4 to 5
* whole cumin seeds / jeera - 1 teaspoon
* Curry powder - 2 heaped tablespoons.
How to make Curry Powder at home - • HOW TO MAKE CURRY POWD...
* Turmeric powder - 1 teaspoon
* Kashmiri red chili powder - 1 tablespoon. You can use 1 teaspoon red chili powder instead or maybe cayenne pepper. Adjust the proportion according to your level of tolerance.
* Garam masala powder - 2 teaspoons heaped.
How to Make Garam Masala at home - • SHAHI GARAM MASALA | H...
* Ground coriander/dhania powder - 1 tablespoon
* Ground nutmeg/jayfal - 1/4 th teaspoon
* Salt - 1& 1/2 tablespoons or as per taste
* Sugar - 2 teaspoons
* Rice - 3 & 1/2 cups Basmati rice
* Hot water - 7 cups. Please use chicken broth if using boneless chicken.
* Butter - 2 tablespoons
* Oil - 2 tablespoons
* Coriander leaves (dhaniapatta) - as much your prefer
For Raita -
* coriander leaves with stalks
* Plain unflavored yogurt(regular or greek yogurt) - 4 tablespoons heaped
* chaat masala - 1 teaspoon. You can even dry roast a teaspoon of whole cumin seeds on low heat, crush it in a mortar & pestle and use it if you do not get chaat masala.
* Salt - as per taste
* Sugar - a pinch
* freshly ground black pepper
Serve this pulao with raita or any salad of your choice.

I discovered ur channel today. This is exactly how a beginner cooking video needs to be made. I tried the exact same recipe with raita before I watched this video. And yes you are absolutely right... I would love to make this dish for 25 people, can it be made the day before and reheated?. Can it be baked in the oven? As I’ve done with other rice dishes. Thank you looks very delicious. I love your commentary
Yes definitely you can make it the day before and I feel it tastes even better the next day and the rice gets fluffier.
Regarding baking in the oven you can put it on dum in the oven. Follow the recipe right up to the 6.40 minute mark of the video when it comes to the part to cover the pot on lowest heat setting. Here what you can do is put a damp dish towel covering the top of the pot, put the lid on top of the towel, and pop it in a 160 degrees C/ 320 F preheated oven for 15 minutes. Hope this helps. Hey bumbi could you recommend what sort of pan you used for this? I did the recipe in a much deeper pan and the rice came out more mushy and not loose after following all your steps , heartbroken :(. Please let me know if you can help ❤
Please use a wider pan with less depth. Use less water

Did you use long grain Basmati rice? Is there a difference between long and regular?
I used long grain Basmati. Both long and extra long varieties are sold. Basmati rice is usually long grain in its nature but sometimes it depends on the variety. You can use any type but please make sure to use Basmati for this recipe.

I usually use India Gate regular Basmati rice. Though they do not mention long or extra long on their package ( the one I buy),I feel it is extra long .

Similar to biryani in terms of appearence. Is the taste also almost same in both de recipes?
This is more like a pulao and much lighter compared to Biriyani with no addition of saffron water or kewra water.

But I have cooked a lot of Spanish rice so I kind of have an idea of what it should look like just tried a piece of rice and chicken and wow! It’s amazing!!! Can’t wait till it’s done. I’m giving 5 minutes more then will set out for 15 mins. But VERY DELICIOUS!

Made this with much love yesterday and was thrilled at taste - until I left the element on (our stove does 0 or 100% heat so element on full heat) and burnt the dish :( Have woken to resolve to make the dish again today as it is too good not to :)

That was a lot of salt tho
Over 1 kg of chicken, 3 & 1/2 cups of rice so I don’t think I used too much salt. At the same time addition of salt is all up to your preference, that’s why I mentioned in the list of ingredients as “salt to taste”.
