I am a Pakistani,and Biryani is kind of our national dish😄We always add tomatoes to Biryani and I think they add a very rich taste , also a few lemon slices on top of rice gives an amazing aroma,thats the only difference I noted here.If you dont have aloo bukhara,tarmarind also gives a kick to taste.This recipe also looks good,I will try it.Good job!
But why did he throw away the flavor full water in which he cooked the rice. It would have added a lot of flavor and richness of the spices to the overall taste if he would have cooked it with the right amount of water.

Hi I’ve cooked this recipe a couple of times and it certainly is delicious, I’m not a fan of tomatoes unless used for a sauce, therefore I loved the fact there was no tomato in his recipe, I have a love for lemons and limes so tend to use them at every given opportunity. 😊
I made this tonight and finished eating around 10 seconds ago!! I felt that i needed to say how amazing this recipe is. I'll be honest that i didn't have all of the ingredients, i substituted the bay leaves for dried curry leaves, and i didn't have the dried plums. However, it had SO much flavour.
In south India we use Jeeraga Samba rice for Briyani. So good taste and easily digestible. Basmati rice not give that much aroma. In my place 2 dollar for basmati rice per kg but for jeeraga samba rice is around 4 dollar.
Just follwed this recipe almost to the letter (I always change it a little). Can't buy Aloo Bakhara where I live). Added a small amount of tamarind instead, added Panch Phoron to the Bhuna as well. It tastes utterly gorgeous!! I always thought Biryani was going to be far too complicated for me to cook - thank you!
I made this yesterday along with naan bread and the 4 of us round the table (ages 11-70) loved it. Finished off the leftovers tonight and this recipe is definitely on our hit list! Will make again for sure.
I made this for dinner today but I forgot to buy plain yoghurt and dried plum. I had to use my daughter's strawberry yoghurt and substitute plum with dried raisins. It turned out delicious, my fussy daughter rated it 9/10. Thanks for the recipe, I like it better than the more complicated version.

Making it tonight for my second time. This recipe is outstanding. My stovetop is a joke, so I finish it in the oven for the 45 minutes and then rest for 20 minutes. Can't wait to see how it comes out.
I’ve tried multiple recipes throughout the year but this is my go to recipe of all time. Things I do differently are : 1. Use the oven for the end process with baking tray covered in foil at 200C ( Better heat transfer than stove) it’s more consistent throughout the dish. 2. Use chicken thighs cut into cubes ( Drumsticks are not my favourite and reheating it in the microwave is not ideal ) also thighs are juicer than drumsticks 3. Meal prepping is super easy ! Highly recommended recipe 10/10.

Hello my friend. Yesterday I visited the Indian Grocery Shop for the first time. It was huge. I was able to buy everything needed for this dish. I am so excited. Over this coming weekend I will challenge this recipe. By the way, I removed all of the spices from their packages and placed them into glass jars. This way they will keep much longer. I included the expiration dates on each jar. Very important!!! At the same time I became familiar with each spice. A lot of fun!
Just to add one helpful thing here if possible the Dried Plums mentioned sounding like "Aloo Bichar" is in fact Alu Bukhara available from online Indian spice sellers but in fact it's only what in the UK we call dried Prunes and you can buy them with stones removed sealed in packets, in any good supermarket. They are truly delicious and it's fair to say Raisins or Sultanas are not a good substitute.
I followed your instructions to the letter. I bought all the ingredients that I didn't have online.Dried damson plums,cinnamon, star anise etc... I am just waiting for the last half hour to pass. I'm so excited 😊😂

You"ve just won over another fan! I've always thought Indian cooks do vegetarian food the best. In fact, if I ever decided to go vegetarian I would go the Indian route, because of their use of a variety of herbs and spices. American Vegan food tends to be rather bland. Thanks so much for sharing how to make food taste so much better with the use of spices and herbs.
What I love about Latif is that he explains WHY he is doing things. Really helps me. What would help me more if he could give measurements tsp, tbs etc as level ones. I get that it's done by eye/feel/experience/taste but it would really help us get an angle on the quantities to work from.

I tried this today, chef. Came out very well. I love the sweet/sour flavour imparted by the alu bukara.. in fact I'd add ten+ of them to get even more flavour. I ended up with a lot of rice, however. I think for my purposes I might use maybe 500g. Letting the garam masala steep in the water works really well. Thanks for the recipe!

Hello my friend. Yesterday I visited the Indian Grocery Shop for the first time. It was huge. I was able to buy everything needed for this dish. I am so excited. Over this coming weekend I will challenge this recipe. By the way, I removed all of the spices from their packages and placed them into glass jars. This way they will keep much longer. I included the expiration dates on each jar. Very important!!! At the same time I became familiar with each spice. A lot of fun!
Just to add one helpful thing here if possible the Dried Plums mentioned sounding like "Aloo Bichar" is in fact Alu Bukhara available from online Indian spice sellers but in fact it's only what in the UK we call dried Prunes and you can buy them with stones removed sealed in packets, in any good supermarket. They are truly delicious and it's fair to say Raisins or Sultanas are not a good substitute.
I bought the proper dried plums in an world food shop last Saturday £3. Hard with stone in …. Sour sweet. Not what we eat we eat in breakfast.

I followed your instructions to the letter. I bought all the ingredients that I didn't have online.Dried damson plums,cinnamon, star anise etc... I am just waiting for the last half hour to pass. I'm so excited 😊😂

We have just ate this recipe and it was delicious. I have to find the way to make it in 2 parts to be able to have guest and not be in the kitchen for 3 hours before. Because of this recipe I did find a "ethnic" grocery here in Italy, I am so happy: I did visit this grocery twice this week :)

I just made this! Burned the onions but it still tastes great! I was a brave person and put in 2 chilis- it was not too hot. Ill work my way up with each try. Delicious!

Made it this evening 100% legit with less mucking about. I used the fresh version of the aloo bhakar as dried weren’t available locally. Now I have to write this out for the recipe binder.
I like the way and approach of how you explain things it’s true we want a simple version of cooking as sometimes we are busy or in a rush or tired or even for beginners who are not that experienced in cooking , to simplify and quick and easy.not time consuming.

Latif, made this today and the family gave it 10/10. The rice turned out perfect, and as Mahooth said you can taste every spice in there. It was great fun to make, I substituted dried prunes for the aloo bakhara. Thank you for the brilliant video!

Great video! Thanks for sharing. Lately, I've been eating Indian regional food I buy in the frozen section at supermarkets in the US. I get Saffron Road's Chicken Biryani as it's one of my favorites. I'll have to try making it proper one day : )
You"ve just won over another fan! I've always thought Indian cooks do vegetarian food the best. In fact, if I ever decided to go vegetarian I would go the Indian route, because of their use of a variety of herbs and spices. American Vegan food tends to be rather bland. Thanks so much for sharing how to make food taste so much better with the use of spices and herbs.

What I love about Latif is that he explains WHY he is doing things. Really helps me. What would help me more if he could give measurements tsp, tbs etc as level ones. I get that it's done by eye/feel/experience/taste but it would really help us get an angle on the quantities to work from.

I tried this today, chef. Came out very well. I love the sweet/sour flavour imparted by the alu bukara.. in fact I'd add ten+ of them to get even more flavour. I ended up with a lot of rice, however. I think for my purposes I might use maybe 500g. Letting the garam masala steep in the water works really well. Thanks for the recipe!

Wow. I made this today but without the star anise as I could not get any near me. But it was lovely. I did not have a Tawa that worked on my induction hob so opted for putting into the oven for 20min at 180 degrees. My family really enjoyed this dish. Thank you for sharing this recipe.
