I have been eating biryanis of all types for the past 40 years in some of the very best Indian and Pakistani restaurants, and I have tried to make a good one every now and then over the past 15 years with never a good result. I'm very dedicated. I have a proper wet grinder and love to make idli and dosa for the family, I make a proper sambar using my own masala mixture, and make fragrant basmati quite a lot, but bringing together perfectly-seasoned and -cooked basmati with perfectly-seasoned and -cooked meat in one dish has eluded me with great frustration. I followed your instructions in this video and the result was the finest biryani of any kind I and my adult son have ever had. Every aspect was spot-on perfect and delicious. There was no other way to relish this dish properly than to eat with my hands, as I had been taught to earlier in my life. The act of gathering a mouthful with one's fingers and eating entirely with one hand adds another set of judgments to the assessment of whether the dish was properly prepared or not. I am so very proud to have made an excellent biryani with your most masterful help, Bumbi. From now on I follow your videos first. Take care, and keep up the most excellent work! 🙂

@@CurriesWithBumbi It was actually quite difficult, as I am recovering from spinal surgery and any movement is painful, even with strong medication. I had help with bending and lifting and also moving anything over 10 pounds, but I saw your video and just could not wait any longer! Worth every minute of effort, and I can't wait to do it again soon. I bought my wet grinder from Amazon for two hundred. It's called the Premier Small Wonder Table Top Wet Grinder. The wet grinder has exceeded every one of my expectations. I HIGHLY recommend it. Just never make the mistake of conching chocolate in it; there is a separate stone-bottomed bowl for that. The difference in texture between blending and wet grinding idli/dosa batter is immediately noticeable between your fingers when you mix in the salt after fermentation. Smooth as silk, not gritty at all. Another thing I do is I smooth a Chinese ingredient called Pi Xian Dou Ban Jiang that has broad beans and whole spices and rough-chopped chilies. I make it smooth using the wet grinder and that makes the ingredient easier to use in more sauces. I hope this helps. Thanks for all of YOUR help, Bumbi!!

I tried this recipe today. It was wonderful!! ❤ Wife went crazy Some tips for others who want to try: - Make a little more barista (fried onion), use a spoonful of barista while making ginger garlic paste. Use this in marination. - Scoop out some oil from the barista to sprinkle over the rice once its been layered over the meat - While boiling the rice, you only need green cardamoms, cinnamon, bayleaf, salt and coriander leaves to get the fragnance. You can add a scoop of the Kurma (the gravy of the chicken) into the boiling water. I added Knorr chicken bullion to the water to make it taste better. - Each variety of Basmati rice takes different time to boil so you need keep checking for done-ness. Thanks Bumbi!

We r not use coriander and chilly poweder. Only green chilly garam masala, biriyani masala and green chilly-ginger - garlic paste and yogurt...nice cooking and presentation ❤
OMG..Bumbi you have outdone yourself, nobody that I have watched has every done such an incredible biryani❤, just a quick Q I have a glass top stove, so what temp to cook the biryani and how long in oven? ❤
You can put on dum on glass top stove as well. Just keep the heat as low possible. So do 5 mins of high heat and then reduce heat to very low and keep it for 15 minutes. If using oven, put it in a 350F preheated oven for 15 minutes .

Looks amazing Bumbi 😍Excellent step by step video 👍It really is a perfect chicken biryani. We love potatoes and especially in biryani. I really like the Shan mixes. I used to use them a lot. Some of them are very spicy. Luckily I still have some kewra water left after the spillage that I told you about. The smell just never goes away 😩I have some Deer Brand Biryani Flavor that I have never used. I just have this tendency to pick up things that interest me. Thank you for the wonderful recipe. Years ago in UK British Indian Restaurant they put an omelette on top with sliced cucumber and tomato. Some grated coconut. Really nice, give it a try.

I’m a Hyderabadi Biryani lover but the more I look into Biryianies matter the more I see there is no strict rules depending on the area it’s made wheter it be in India Pakistan or South Indian islands or even Thailand where they have biryiani.

I have tried many different Biryani's we get in India and all have different flavours and Hyderabadi and moradabadi being my favourite
I don't wash it either. I usually start by: dry frying cumin seeds: add oil, (virgin olive usually): coat the rice in the oil: pour in the water 2:1 water:rice: bring to a boil, cover, lower heat and leave for 10 minutes.
@@xinjoy6236 garam masala in pasta. Quel horreur! My Indian sister in law has switched from using ghee to either coconut oil or olive oil in Indian cooking. The spices mask the taste. I just followed her example, and found that my basmati rice never turns out right if I soak the rice.

I have been searching and cooking Chicken Biryani recipes for over 12 years, it's been getting better with time. But not perfect. Your method of preparation looks very different, especially with what you do with the onions and rice, two essential ingredients in a Biryani (I have used potatoes in a Biryani before and I do agree with you, if done well, they are sometimes even better than the chicken). I've made biryani a handful of times now by following other YT recipes, and whilst the results improved slowly with each attempt, the biryani I made last night following your video definitely trumped them all! I learned a few tips from you that made me realise why earlier attempts where a bit lack -lustre. One was not using enough yoghurt for the marinade to create that luscious masala, and the other was not using enough oil when starting with the cooking. These elements created lots of moisture and flavour in the final dish. I added potatoes for the first time, and they are quite delicious! I also made the yummy raita (although not enough apparently, as it went very quickly). I enjoyed making my own garam masala, biryani masala and chaat masala to bump up the freshness of the spice flavours. Thank you Bumbi!

Follow the way I cooked rice in this video . Remember to take a deep wide pot to cook rice, much larger than the quantity of rice taken so that they can expand.

OMG..Bumbi you have outdone yourself, nobody that I have watched has every done such an incredible biryani❤, just a quick Q I have a glass top stove, so what temp to cook the biryani and how long in oven? ❤
You can put on dum on glass top stove as well. Just keep the heat as low possible. So do 5 mins of high heat and then reduce heat to very low and keep it for 15 minutes. If using oven, put it in a 350F preheated oven for 15 minutes .

Looks amazing Bumbi 😍Excellent step by step video 👍It really is a perfect chicken biryani. We love potatoes and especially in biryani. I really like the Shan mixes. I used to use them a lot. Some of them are very spicy. Luckily I still have some kewra water left after the spillage that I told you about. The smell just never goes away 😩I have some Deer Brand Biryani Flavor that I have never used. I just have this tendency to pick up things that interest me. Thank you for the wonderful recipe. You can use that Biryani flavor in place of Kewra water. Use a few drops as it is strong. You can also add it to any Mughlai meat dish or pulao.

Years ago in UK British Indian Restaurant they put an omelette on top with sliced cucumber and tomato. Some grated coconut.

I’m a Hyderabadi Biryani lover but the more I look into Biryianies matter the more I see there is no strict rules depending on the area it’s made wheter it be in India Pakistan or South Indian islands or even Thailand where they have biryiani.
@@xinjoy6236 it was just a joke. I guess you aren't aware of banter between Hyderabadi and Bengalis about their biryani. No hate here just banter 😹. Even @CurrieswithBumbi would agree. I have tried many different Biryani's we get in India and all have different flavours and Hyderabadi and moradabadi being my favourite

This year I have stopped washing my Basmati. Same result as washed except I did get a small stone in my mouth.
Please do wash it as other than starch rice grains do have some impurities and dust that need to be rinsed off.
I don't wash it either. I usually start by:
dry frying cumin seeds:
add oil, (virgin olive usually): coat the rice in the oil:
pour in the water 2:1 water:rice:
bring to a boil, cover, lower heat and leave for 10 minutes.

@@xinjoy6236 garam masala in pasta. Quel horreur! My Indian sister in law has switched from using ghee to either coconut oil or olive oil in Indian cooking. The spices mask the taste. I just followed her example, and found that my basmati rice never turns out right if I soak the rice.

I have been searching and cooking Chicken Biryani recipes for over 12 years, it's been getting better with time. But not perfect. Your method of preparation looks very different, especially with what you do with the onions and rice, two essential ingredients in a Biryani (I have used potatoes in a Biryani before and I do agree with you, if done well, they are sometimes even better than the chicken). I've made biryani a handful of times now by following other YT recipes, and whilst the results improved slowly with each attempt, the biryani I made last night following your video definitely trumped them all! I learned a few tips from you that made me realise why earlier attempts where a bit lack -lustre. One was not using enough yoghurt for the marinade to create that luscious masala, and the other was not using enough oil when starting with the cooking. These elements created lots of moisture and flavour in the final dish. I added potatoes for the first time, and they are quite delicious! I also made the yummy raita (although not enough apparently, as it went very quickly). I enjoyed making my own garam masala, biryani masala and chaat masala to bump up the freshness of the spice flavours. Thank you Bumbi!

Follow the way I cooked rice in this video . Remember to take a deep wide pot to cook rice, much larger than the quantity of rice taken so that they can expand.
