    Everything looks really delicious. Yesterday I made sweet potato patties, boiling two potatoes, adding some brown sugar and cinnamon and formed them into patties. I then rolled the patties in crushed club crackers (off brand to save $), which needed to used up. I fried them in some butter, and they were absolutely yummy. I crushed too many crackers, so I saved that to use in the salmon patties I will make tomorrow. I dearly love how you save small amounts of leftovers and use them to create new dishes! Diane

      I had a sweet potato farmer tell me if I would bake my sweet potatoes before using in recipes they would be sweeter and she was right 😊

    Emmy, you and Paul's attitude is very cool. I appreciate you seeing the possibilities with what you have. I also appreciate you sharing your skills on how to manifest tasty abundance with the minimum as well as the creativity of adapting to using what you have, rather than demonstrating a fear of perceived lack. I expect you'll be aware that there seems to be a new and current social media trend that uses current food shortages as click-bait fear porn to drive traffic to their channels. They focus on the empty shelves, and the 'do it now before it's too late' doomsday scenario. You and Paul are calm and grounded. Instead of panicking us on how to load up in cost-co, you share how to create tastiness with what we have and the value of not letting things waste. Whilst I appreciate the value of the channels that teach how to prep for 25 years of toilet roll and military grade, kevlar (or mylar - what ever it is) lined shipping containers of freeze dried protein meals etc, most of us can't do that. Many of us don't have the budget or we live in downtown apartments. What my long-winded semi-rant is trying to say is that you empower us with creativity, skills and gratitude. Thank you xxx

      It's mylar, but you can use clean soda bottles to keep rice under the bed! Prepping doesn't have to cost extra. I might buy one or two extra cans every trip.
      I agree with you about some of those sites, though, the added fear is completely unnecessary!

    We really don't have any food waste anymore, we use up everything. Sometimes as bread spreads (chilis work really well) or we use already cooked/fried veggies in salads, we even freeze old bread and give it a second chance as a "bread-lasagna"...

    I love to use our leftovers for one pot meals. Our meal from today: leftovers rice, peas, carrots, onion, chickpeas, 1/2 sweet potatoe, 1 cup cooked chicken, broth and coconut milk. Some curry powder, pepper, salt and that's it. Put it all together takes under 10 minutes, cooking for 15 minutes on low heat and ready to eat. It was so good! Your recipe with the cheese potatoe muffins is my favourite. I have to try it. Thanks a lot for this amazing video.❤

    Ever since my husband and I ate at Garden Grill in Epcot he has been baking all over our leftovers (meat, potatoes, vegetables) in the same square Pyrex after we have a holiday meal. He calls it Garden Grilling it because that’s how they served the meal to us at Disney! It also saves on dishes 😊

It is the ideas and practical day to day frugal living habits that really make a huge impact on saving money and not wasting anything.     Stir Fry's are so great for using up different veggies and meat. I have used celery that was going bad, small piece of leftover cabbage, zucchini on its last leg. My son particularly loves the celery. Hardly ever the same things twice in it. Always turns out great. The sesame oil if you can afford it really makes it. I will try the butter next time as I bet it gives great extra flavor.

    Tip…I was taught that if you do not have better enough to fill up all the muffin tins to put around 2 tbsp of water in the empty ones. It helps muffins / cupcakes or whatever bake evenly

    Hello Emmy and Paul :) We've been re-engineering our meal plan to include more meals that we have canned. It will give us a measure of security should the grocery shelves be empty or priced too high. I'll meal plan from the pantry and freezer and restock when things are on sale. We canned chicken torilla soup, beef stew ans chipotle black beans this week.
    I love, love, love your no waste meals! ❤❤❤

    When I have stuff about to go off I generally throw it in a soup or stew - as long as you boil it everyday, then keep it cold in-between, it’s good to go!
    I generally add bits to it daily and flavour it with herbs and spices, and either with tomato or just stock, the next day add chilli powder, then curry powder and if there’s some left on the fourth day it goes in a pie or under a mashed potato topping.
    If you’re running out of veggies, you can add lentils, rice, beans or pasta, but you have to be careful with how much heat you are using as these can burn on the bottom - if they do, don’t scrape the bottom but tip the rest into another pan to rescue it and add a bit of liquid smoke and call it barbecue flavour! :-)

    You are so right about the Japanese sesame oil. I was lucky to find two bottles on clearance, with 50% off tags. They were well worth the price. And, a little goes a long way. Duncan Hines lemon cake mix would be really good with the blueberries 🫐 😋

    Hi Emmy! I always keep in my mind foods I have to use up before they go bad and incorporate into meals. I made a pasta bake with leftover sauce from chicken cacciatore I had made. I topped the casserole with ricotta I had stored "upside down" that was out of date. The ricotta was perfectly fine and added a nice creaminess to the dish. Last night I made my first peach cobbler with peaches I needed to use before they went bad. It turned out great! With the price of food these days, I try not to waste anything!

    Your into was so pleasingly fall. I thought, sesame oil would put the stir fry over the top…and you put some in! I’ve made a batch of rice in the afternoon and cooled it on a refrigerated baking sheet so I can have “leftover” cold rice to make fried rice for dinner.

    You are so inspiring! I found 2 pork chops in the freezer and put them in my tiny crockpot with some teriyaki sauce that I needed to use up, cooked on low til tender (about 5 hours on low) and then used several bits and pieces of frozen veggies, garlic, ginger, leftover aldente spaghetti in fry pan, then added the pork chops….wow…..lo mein!!!!!

    This was wonderful!! We have stir fry on the meal plan today...I was thinking of skipping it and just having canned chili, but I got my rear into the kitchen and chopped veggies while I watched! Thank you for the motivation!!💛💛💛 We are using all sorts of ingredients we got from Imperfect Foods and I am adding leftover rice and also leftover chicken! Less food waste!🙌

    Emmy, those potato puffs look amazing. Yum. And a great way to not waste that small amount. Here, where I love potatoes have been extra expensive at 4.00 for a 10lb bag, but this week a store here had them on sale for 2 10lb bags for 3.00. oh my goodness, you know I grabbed 2 bags. Love potatoes.

    I had leftover mashed potatoes and made a delicious potato soup last night- i add some 1/2 &1/2 and water to thin it down and get it smooth. Then added garlic powder, salt, onion powder and black pepper. I then stirred in some cheese i had on hand- any flavor will work, but sharp cheddar is wonderful. My mom stills makes potato soup like this and she’ll add some chopped ham, or peas, broccoli… basically anything you have hand! I served mine with some garlic toast, and everyone loved it.❤️

    We eat a lot of leftovers with 5 people in house. Don't like to cook every day :). When I make a whole pork loin for example we use leftovers by cutting up into bite size pieces and use in tacos/burritos - add salsa and cheese and veggies - a whole new meal. Cut up chicken, beef - same way - sometimes I'll freeze the leftover cut up meat and use in a stew or casserole or stir fry another week. I hate wasting but sometimes you get in a rut/ life happens/ you overbuy and then discover the eaters won't be home for dinner!

    Your dishes all looked delicious! I may have to try those potato puffs SOON! Nearly every Sunday afternoon after church, I pull out my instant pot and clean out the veggie bin in the refrigerator, any leftover cooked vegetables from the week, and any partially used up bags of frozen vegetables to make soup for lunch for the following week. When I have potatoes that need to be used up, or leftover rice, or leftover beans - I toss those in too. If I have leftover salsa - I add Mexican seasonings and its a Southwest soup - if I have leftover pasta sauce - I add Italian seasonings and its an Italian vegetable soup. It helps me use up what we have on hand and I get to enjoy hot lunches all week long with a minimal investment of time. It's a win-win!

    My cooking has had to change drastically. Being in the South, I loved cooking with fatback, bacon, etc. My poor husband has fatty liver and has to have a low sodium diet.     It depends on the leftovers but my go to is using leftovers in a soup, maybe a stir fry or "leftover buffet " where you choose what you want from leftovers.

All the recipes looked delicious and I am now itching to make the potato puffs, so much so I think I will deliberately cook too many potatoes to make sure I can.     I'll need to remember those potato puffs for leftovers from Thanksgiving!
    You're fearless with your recipes, lol. And so creative! That blueberry/orange dessert is amazing.

    Great video Emmy. I just have to try those potato puffs and the dump cake! I have done the stir fry in the past and I think the rice really makes it. Thanks for all that you and Paul do! Have a wonderful week

    That stir fry with the cold cooked rice and Tamari added in was right up my alley, Emmy. And your thin sliced steak looked so delicious when you added it to the fry pan. I have several cake mixes (different varieties) that I completely forgot about until now. I'll be baking one of them tomorrow. In fact, I have a can of apple pie filling that would go just great with it. I can't wait to try my version of a dump cake.

    I’m not sure if it’s the inspiration, or the joy and thankfulness that radiates from you over using up the leftovers that get me. I mean, they just inspire me to excavate the fridge and rescue anything getting close to its end

    Your leftover makeovers looked delicious, Emmy. This is something I try to do often. We love dry beans used in different ways. I cooked large limas early Monday. I try to cook enough to last for several days. I add ham hock to season and fry potatoes and make one pan of cornbread. We live in the South, and we love bread with our beans. If I have extra juice left after the beans are gone, we use that as a bowl of soup one day for lunch. If any potatoes are left, I mix a few beans with the potatoes and use as a side. This week we ate the side with hamburger steaks. Our cornbread lasts about four meals. I've had very little cooking to do with this week's prep.
    Thank you for reminding me to use my leftovers. Occasionally, I let them get lost in the shuffle. 🙂
